ARTICHOKE FRITTATA
This rich, delicious, and easy-to-make appetizer can be served warm or cool. I sometimes use grated low-fat cheese and find that it is just as tasty and less greasy. Dried parsley works, too.

- Preheat oven to 325 degrees F (165 degrees C).
- Heat 3 tablespoons of the reserved marinade from the artichoke hearts in a large skillet. Cook and stir green onions in hot marinade until wilted, 2 to 3 minutes.
- Stir cooked green onions, eggs, Cheddar cheese, saltine crackers, parsley, garlic, hot pepper sauce, salt, and black pepper together in a bowl; pour into a 9x13-inch baking dish.
- Bake in the preheated oven until center is puffy and no longer moist, about 40 minutes; cool slightly before cutting into squares.

ARTICHOKE AND ONION FRITTATA
Steps:
- Cook artichokes according to package directions; drain. Cool slightly; coarsely chop. Preheat oven to 350°. , In a large skillet, heat butter and oil over medium-high heat. Add onion; cook and stir until tender. Add garlic; cook 1 minute longer. Stir in oregano and artichokes; remove from heat., Sprinkle 1/4 cup Parmesan cheese in a greased 11x7-in. baking dish. Top with artichoke mixture., In a large bowl, whisk eggs, milk, salt, pepper and nutmeg. Stir in Monterey Jack cheese and 1/4 cup Parmesan cheese. Pour over artichoke mixture., Bake, uncovered, 30 minutes. Sprinkle with remaining Parmesan cheese. Bake until a knife inserted in the center comes out clean, 6-8 minutes longer. If desired, sprinkle with minced chives.

- Pat quartered artichoke hearts dry with paper towels. Cut each prosciutto slice crosswise in half. Wrap each artichoke heart quarter in halved prosciutto slice. Place wrapped artichoke hearts in single layer in 13x9x2-inch glass baking dish. Pour cream over. Sprinkle with Gorgonzola, pine nuts, Parmesan, and sage. Bake until gratin is bubbling and sauce thickens, about 25 minutes. Serve warm.

Steps:
- Following directions on package, cook artichoke hearts until tender.
- Cut in half and set aside.
- Preheat broiler.
- In medium-sized iron skillet, saute the garlic and onion in 2 tablespoons of olive oil until golden brown.
- In a large mixing bowl, combine eggs, milk, oregano, pepper, mozzarella and half the Parmesan.
- Add cooked garlic and onion mixture and mix well.
- In same skillet, heat remaining olive oil and arrange the artichoke hearts evenly, cut side down.
- Add egg mixture.
- Reduce heat.
- Shake pan, cover and cook slowly for 10-15 minutes.
- Sprinkle top with remaining grated cheese.
- Place pan under broiler until puffed and golden brown.
- Shake pan to loosen frittata, and slip it onto a serving dish.
- Garnish with fresh basil leaves.

- Preheat oven to 425°F
- Heat oil in a 10-inch ovenproof, nonstick skillet over medium heat.
- Sauté quartered artichoke hearts and prosciutto until prosciutto starts to curl.
- Remove artichokes and prosciutto from skillet.
- Wipe skillet clean; coat with nonstick spray.
- Add crushed red peppers to beaten eggs.
- Add eggs to pan; cook until curds form.
- Top eggs with artichokes and prosciutto; sprinkle with Parmesan and chopped chives.
- Place skillet in oven; bake frittata for 7-8 minutes (the center will not be set).
- Remove skillet from the oven; preheat broiler.
- Broil frittata until eggs are fully set and top is browned, about 2 minutes.
- Remove skillet from broiler.
- Run a rubber spatula under the frittata to loosen it.
- Slide frittata out onto a cutting board; slice into six wedges.
- Garnish each slice with fresh whole chives, if desired.

- Heat the fat in a 12-inch cast-iron or non-stick skillet over medium heat. Cook the minced garlic and artichokes until any water has cooked off and the garlic is fragrant.
- In a medium-size bowl, using a fork, blend together eggs, Parmesan, pepper, and salt. Pour egg mixture into pan over and around the artichoke hearts. Top with the prosciutto and cook for 4 to 5 minutes or until the egg mixture has set on the bottom and begins to firm on top.
- Place pan into the oven and broil for 3 to 4 minutes, until cooked through. Top with arugula, additional Parmesan, red pepper flakes, and more salt and pepper if desired.
