BAKED ARTICHOKE HEARTS WITH SEASONED BREADCRUMBS



Baked Artichoke Hearts with Seasoned Breadcrumbs image

Canned artichoke hearts are topped with a garlic-lemon-white wine-breadcrumb mixture and baked until golden.

1/4 cup olive oil
3 14 ounce cans artichoke hearts (rinsed and drained)
3 cloves garlic (minced)
1/4 teaspoon crushed red pepper flakes
1/2 cup plain breadcrumbs
1/2 cup Parmigiano Reggiano (grated)
1/4 cup parsley (minced)
1 tablespoon fresh lemon juice
1/2 teaspoon kosher salt
1/4 cup dry white wine (pinot grigio, sauvignon blanc, etc...)

Steps:

  • Preheat oven to 375f and set to middle rack. Mix seasoned breadcrumbs ingredients together and set aside.
  • Mix the minced garlic and olive oil together in a bowl. Spoon half of the garlic oil into a large baking dish and spread it around to evenly distribute.
  • Next, place the artichoke hearts into the baking dish and top them with the remaining garlic oil. Sprinkle the hot red pepper all over the hearts.
  • Evenly sprinkle the seasoned breadcrumbs and bake for 15-20 minutes or until hot all the way through and the breadcrumbs have browned. For more color, the artichoke hearts can be broiled for the last 45-60 seconds but watch carefully. Enjoy!

1 slice whole wheat bread, crusts removed
1/4 teaspoon dried oregano leaves
1 (6-ounce) jar oil-marinated artichoke hearts, drained, rinsed, and chopped
1/3 cup freshly grated Parmesan (about 1 1/4 ounce)
2 tablespoons chopped fresh flat-leaf parsley
1 tablespoon extra-virgin olive oil
1/2 small onion, chopped
1 clove garlic, chopped
1/2 teaspoon kosher salt
1/4 teaspoon red pepper flakes
3 large eggs

Steps:

  • Preheat the oven to 375 degrees F. Lightly butter or spray a 6-cup nonstick muffin tin.
  • Toast the bread slice until crisp. Cool and cut the toast into small pieces into a medium-size bowl and add the oregano, artichoke hearts, cheese, and parsley.
  • Heat the oil in a small skillet over medium heat, add the onion, garlic, salt, and red pepper flakes, and cook until soft, about 5 minutes. Stir into the artichoke mixture.
  • Lightly beat the eggs in a small bowl until foamy, stir into the artichoke mixture; spoon a 1/4 cup of the mixture into each of the muffin cups. Cook until lightly puffed, golden, and just set in the center, about 17 to 20 minutes. Let cool on a rack for about 5 minutes, then remove the artichoke bites from the pan and serve warm.

These are really easy to make and everyone loves them. They are great to keep in the freezer and just pop into the oven when guest show up unexpectedly, or when you have the munchies. I usually like to roast my own peppers, but have used roasted peppers from a jar as well. If you can't get artichoke hearts packed in oil just drain the liquid and use two tablespoons of your favorite olive oil. To make this recipe Passover-friendly, just sub matzoh meal for the breadcrumbs.

6 ounces marinated artichoke hearts
6 ounces roasted bell peppers
1 small chopped onion
2 minced cloves garlic
4 eggs
2 cups shredded cheddar cheese
1/4 cup dry breadcrumbs
2 tablespoons chopped fresh parsley
1 dash hot pepper sauce
fresh ground black pepper

Steps:

  • Preheat the oven to 350 degrees and grease an 8 inch baking dish.
  • Drain the artichoke hearts, reserving 2 tablespoons of the oil.
  • Drain the roasted peppers and discard the liquid.
  • Finely chop the artichoke hearts and peppers and set aside.
  • Heat a large skillet over medium heat.
  • Add the reserved oil, onion, and garlic.
  • Cook for five minutes, or until soft and translucent.
  • Remove from the heat and cool slightly.
  • Beat the eggs in a large bowl until thick and lemon colored.
  • Beat in the remaining ingredients along with the artichoke hearts, peppers, and onion mixture.
  • Pour into the prepared pan.
  • Bake for 30 minutes, or until pale golden brown.
  • Cool for 15 minutes, then cut into one inch squares.
  • Tightly wrap and refrigerate for up to 2 days, or freeze for up to a month.
  • Serve cold, at room temperature, or gently reheated in a 300 degree oven for 5-10 minutes.

3 red bell peppers
3 yellow bell peppers
2 garlic cloves
two 14-ounce cans whole artichoke hearts
2/3 cup packed fresh flat-leafed parsley leaves
1 tablespoon extra-virgin olive oil
1 tablespoon unsalted butter
2 tablespoons fresh lemon juice
2/3 cup brine-cured black olives
Accompaniment: crusty Italian bread

Steps:

  • Quick-roast and peel bell peppers . Cut roasted peppers into 3/4-inch-wide strips. Mince garlic. Rinse and drain artichoke hearts. Pat artichokes dry and cut through stem ends into quarters. Chop parsley.
  • In a 12-inch heavy skillet cook garlic in oil and butter over moderate heat, stirring, until fragrant. Add artichokes and cook, stirring, until heated through, about 3 minutes. Stir in roasted peppers, parsley, remaining ingredients, and salt and pepper to taste until combined.
  • Serve antipasto at room temperature with bread.

I was looking for something a little different for an appetizer and I found this on another website. These are very delicious and easy to make! Everyone really enjoyed them and wished I had doubled the recipe! I think they would also be nice as part of a brunch menu.

6 ounces roasted red peppers, drained
6 ounces marinated artichoke hearts, drained,but reserve
2 tablespoons of the oil
1 small onion
2 cloves garlic
4 eggs
2 cups grated sharp cheddar cheese
1/2 cup dry breadcrumbs
2 tablespoons chopped fresh parsley
hot pepper sauce
fresh ground black pepper

Steps:

  • Preheat the oven to 350 degrees.
  • Chop the onion and garlic and saute them in a pan using the reserved oil from the artichoke hearts.
  • Cook until the onion is soft and translucent.
  • Meanwhile beat the eggs until they are thick and lemon coloured.
  • Add the onions, garlic, and the rest of the ingredients and stir gently.
  • Grease an 8 inch by 8 inch pan and pour the egg mixture in.
  • Bake for 30 minutes or until the top is golden and the egg is set.
  • Let cool for fifteen minutes and then cut into squares.
  • Serve warm or cold.
  • These can be wrapped and refrigerated or frozen.
  • They can be reheated in a 300 degree oven.

Here's a great way to pack a lot of nutrients into a sandwich. If you use frozen artichoke hearts, the panini are quickly assembled.

6 ounces (1 bag) baby spinach
3 tablespoons olive oil
2 garlic cloves, minced
12 ounces frozen or fresh cooked artichoke hearts, sliced
1 teaspoon fresh thyme leaves
Salt, preferably kosher salt
freshly ground pepper
1 large or 2 smaller roasted sweet red peppers, sliced
1/4 pound fontina or Gruyère, thinly sliced or grated
8 slices whole grain country bread

Steps:

  • Bring a large pot of generously salted water to a boil. Fill a bowl with ice water. Add the spinach to the boiling water and blanch for 10 to 20 seconds. Transfer to the ice water to cool for a few minutes, then drain and squeeze out excess water. Chop coarsely.
  • Heat 1 tablespoon of the oil in a large, heavy skillet over medium heat, and add the garlic. Cook, stirring, until the garlic is fragrant, about 30 seconds, and stir in the artichoke hearts. Stir for a few minutes, until the artichoke hearts are beginning to color, and add the thyme leaves and the spinach. Toss together and season to taste with salt and pepper. Remove from the heat.
  • Preheat a panini grill. Top four of the bread slices with the artichoke hearts and spinach. Add strips of roasted pepper, then cheese. Top with the remaining bread and press together. Brush the outside of the bread (top and bottom slices) with olive oil. Place in the panini maker and grill for four to five minutes, until the cheese has melted and the bread is toasty. Slice in half and serve hot.
