CREAMY ARTICHOKE BAKED PASTA

Creamy Artichoke Baked Pasta image

A creamy, rich, and cheesy vegetarian white baked pasta with loads of flavor-rich artichoke hearts tossed in. Just add leftover turkey or cooked chicken for the carnivores!

Provided by Kare for Kitchen Treaty

Time 40m

Number Of Ingredients 11

8 ounces tube shaped pasta (I used cavatappi, cooked)
2 teaspoons olive oil
1 small onion (diced)
2 cloves garlic (minced)
1 cup 2% milk
1 cup half and half
1 1/2 teaspoon Italian seasoning
1/2 teaspoon crushed red pepper flakes
2 1/2 cups + 1/2 cup Italian blend shredded cheese (divided (10 ounces total)*)
1 14-ounce can marinated artichokes, drained and chopped
Kosher salt and pepper (to taste)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Cook the pasta according to package directions. Drain and set aside.
  • Set a large oven-safe skillet over medium heat. Add olive oil. Once the oil, is hot, add onions and sauté until translucent, about 5 minutes. Add in garlic and sauté until fragrant, about 30 seconds.
  • Add in the milk, half and half, Italian seasoning, and crushed red pepper.
  • Simmer over medium heat until warmed through, but don't let the mixture boil as you don't want to scorch the milk.
  • Once the milk is hot, add in 2-1/2 cups shredded cheese and stir to combine. You want the cheese to fully melt in a creamy sauce.
  • Add in the cooked pasta and chopped artichokes and stir to fully combine. Taste the mixture and season with a desired amount of kosher salt and pepper.
  • If you do not have an oven-safe skillet, transfer the pasta mixture to an 8-inch by 8-inch baking dish. Otherwise, you can bake the pasta right in the skillet.
  • Top with remaining 1/2 cup of cheese and add to the oven. Bake until the top of the pasta is browned and bubbly, 10-15 minutes. Remove from the oven and serve hot.
  • Note: You can also opt to first cook the pasta in the pan with water, drain and set aside. Then make the recipe as written. This helps cut down on dishes.

SPINACH AND ARTICHOKE BAKED ZITI

Spinach and Artichoke Baked Ziti image

Baked ziti with spinach and artichokes only requires about 15 minutes of hands-on time. A layer of sour cream, pesto, and cheese is sandwiched in the middle of the ziti, making it extra delicious. If you do not have sour cream, substitute with cream cheese, cottage cheese, or ricotta cheese.

Time 55m

Yield Makes about 8 servings

Number Of Ingredients 8

1 pound dry pasta like ziti, penne, or rigatoni
Salt, to taste
3 cups marinara sauce or use 1 (28-ounce) jar store-bought sauce
1/4 cup basil pesto, see our pesto recipe
3/4 cup reduced fat sour cream
10 ounces fresh baby spinach
1 cup canned or jarred and drained artichoke hearts, chopped
4 ounces mozzarella cheese, coarsely grated (about 1 cup)

Steps:

  • Heat oven to 350 degrees F. Butter a 3-quart baking dish or spray with non-stick cooking spray.
  • Bring a large pot of salted water to the boil, add the pasta then follow package directions, but cook 1 to 2 minutes less than the package calls for. Reserve 1/4 cup of the pasta water then drain.
  • While the pasta cooks, warm the marinara sauce in a saucepan over medium heat.
  • In a small bowl, stir basil pesto and the sour cream together until well blended.
  • Add the cooked pasta to a large bowl with the spinach, artichokes, warmed marinara, and the reserved pasta water. Toss until the spinach has wilted and everything is well combined.
  • Spoon half of the pasta into the baking dish. Spread the sour cream and pesto mixture over the pasta and scatter with half of the mozzarella cheese.
  • Top with the remaining pasta, lightly press everything down into the baking dish, and then scatter remaining mozzarella cheese on top.
  • Place the baking dish onto an aluminum-lined baking dish (just in case any sauce drips over the sides of the baking dish). Bake until the cheese has melted and the sauce is bubbling, about 30 minutes. Let stand 10 minutes before serving.

THE BEST BAKED ZITI

The Best Baked Ziti image

I am half Italian, was raised eating the finest Italian-American cuisine, and have filmed almost 2000 recipe videos, so when you consider all of those facts, it seems incredible that I have never posted a video for baked ziti. Hopefully I make up for that long wait by posting what I think is the best version of it.

Time 2h20m

Yield 10

Number Of Ingredients 15

¾ pound hot Italian sausage
¾ pound sweet Italian sausage
2 tablespoons olive oil
1 large yellow onion, diced
½ teaspoon dried oregano
¼ teaspoon dried thyme
¼ teaspoon dried rosemary
2 (24 ounce) jars prepared marinara sauce
2 cups water
1 (16 ounce) package ziti pasta
1 drizzle olive oil
1 ½ cups whole-milk ricotta cheese
8 ounces mozzarella cheese, cut into small cubes
1 cup grated Pecorino Romano cheese
1 teaspoon chopped flat-leaf (Italian) parsley, or to taste

Steps:

  • Cut down the length of each sausage with a sharp knife. Remove and discard casings.
  • Heat olive oil in a large saucepan set over high heat. Add sausages and onion. Cook, stirring occasionally and breaking up with a spatula, until the sausage begins to brown, and the onion turns translucent, 5 to 7 minutes. Add oregano, thyme, and rosemary and cook for 1 minute more. Pour in marinara sauce. Pour 1 cup water into each jar to rinse out remaining sauce; add to the saucepan. Stir together and bring sauce to a simmer.
  • Reduce the heat to medium-low, and let simmer, stirring occasionally, for 1 hour. Taste for seasoning and adjust if needed. Turn off heat and reserve until needed. Before using, skim any excess fat that rises to the surface.
  • While sauce simmers, bring a large pot of generously salted water to a boil. Add ziti and cook, stirring occasionally, for 1 or 2 minutes less than the directions on the package call for, about 8 minutes. Drain well and transfer into a large mixing bowl.
  • Carefully add the meat sauce and stir until thoroughly combined. Let rest for 5 minutes.
  • Meanwhile, preheat the oven to 375 degrees F (190 degrees C). Grease a large 9x15-inch or 9x13-inch casserole dish with a drizzle of olive oil.
  • Use a slotted spoon to transfer half of the pasta and sauce mixture to the prepared dish, then use a spatula to even out into a uniform layer. Top with 1/2 of the ricotta cheese, 1/2 of the mozzarella cheese, and then 1/2 of the grated Pecorino Romano cheese, being sure to distribute evenly. Top with the rest of the pasta and sauce mixture and give the pan a little shake to settle the sauce. Repeat the cheese application.
  • Bake in the center of the preheated oven until the cheese is melted and the casserole is piping hot, 30 to 35 minutes. Remove from the oven and let cool 10 to 15 minutes before serving. Top with parsley.

BAKED ZITI

Baked Ziti image

This easy baked pasta dish is the perfect comfort food for any night of the week - and it's super kid-friendly. The sauce doesn't have to simmer for hours on the stovetop, thanks to all the flavor from the onion, garlic and the combination of both fresh and dried herbs. Hang onto some of the pasta water - an Italian grandmother secret - in case you need to thin the sauce out. The hot starchy water can loosen a pasta sauce without making it too watery - plus it is already seasoned. Pulling the pasta from the pot before it's completely cooked helps prevent it from becoming overcooked and mushy in the oven.
