HOT ARTICHOKE DIP WITH GREEN CHILES
Green chile peppers and garlic spice up this easy and delicious hot dip. It's great to serve while your guests are enjoying wine and waiting on the main course. It goes very well with tortilla chips.

- Preheat oven to 350 degrees F (175 degrees C).
- In a medium bowl, mix the creamy salad dressing, garlic, Parmesan cheese, green chile peppers and artichoke hearts.
- Transfer the mixture to a small baking dish. Bake uncovered in the preheated oven 30 minutes, or until bubbly and lightly brown. Garnish with green onions and tomato.

- Give the drained artichoke hearts a rough chop so that there aren't any real big chunks.
- Mix artichoke hearts, green chiles, cheeses and mayonnaise.
- Spread evenly in a pie plate or an 8 inch square pan.
- Bake for 20 minutes, or until melted and bubbly.
- Serve warm with tortilla chips, slices of french bread (toasted or not), or cut veggies.

Great for parties with sliced baquette bread. This is the most simplest recipe, just 4 ingredients. I always have canned artichokes and green chilis in my pantry, shredded parmesan cheese in the freezer and of course mayonnaise is a staple in most kitchens. I have some family members who really dislike mayonnaise but they really love this dip.

ARTICHOKE AND GREEN CHILE DIP
I got a similar version of this recipe from a co-worker ten years ago and it has been a family favorite and party staple for me since then. Everyone loves it and there are a variety of ways to make it. This one seems to be the favorite. The following posting makes it slightly spicy; you can use less green Tabasco or none at all if you don't want it to be spicy.

- Preheat oven to 400 degrees. Mix all ingredients except for the 1/2 cup parmesan and place in a loaf pan. Make sure it is mixed well and then use 1/2 cup parmesan to layer across the top. Place in preheated oven for 20 minutes. Dip is ready when it is bubbling and top layer of parmesan is brown. Serve warm with tortilla chips or sourdough bread.

- Pre-heat oven to 375 degrees F. if cooking in the oven. Spray baking dish with cooking spray. If using microwave, use glass cooking dish.
- Chop up artichoke hearts.
- Add cream cheese, sour cream & mayonnaise and mix until smooth (you may mix by hand or with beaters).
- Add green chilies and cheese. Mix again until well blended.
