HOMEMADE PORTUGUESE SWEET RICE PUDDING (ARROZ DOCE)
Portuguese Sweet rice is a delicious Portuguese dessert that is typically made with Jasmine rice, eggs, lemon, and milk. It is a thick, custard rice pudding that is made perfect with a dusting of cinnamon.

Steps:
- In a thick stock pot, add your milk, water, butter, and rice bring these items to a simmer over medium heat
- Once your rice is simmering add your lemon zest, extract, pinch of salt, and sugar
- Cook over Low heat for 25 minutes-stir frequently.
- Separate your egg yolks (if you have not done this earlier).
- After 25 minutes, remove rice from heat, and stir in 1 egg yolk at a time
- Place pot back on burner and cook on low heat for 5 minutes-stir frequently.
- Place in a nice serving dish, a Pyrex, or in individual cups. Refrigerate any leftovers
- Top with a generous amount of cinnamon & enjoy!

Steps:
- 1. In a heavy saucepan, combine milk, water, lemon rind, cinnamon stick and salt; cover and bring to a boil. Stir in rice; reduce heat to medium-low and cook, uncovered for 35-40 minutes, or until almost tender, stirring often and scraping sides of pan.
- 2. Add sugar and continue cooking over low hear for 5 minutes, or until rice is tender and almost all liquid is absorbed. Remove from heat.
- 3. Remove cinnamon stick and lemon rind. Pour pudding into a nice serving dish and sprinkle with ground cinnamon, or you can make a design, which my Grandmother almost always did. Serve room temperature or cover and refrigerate for up to 4 days.

- 1. Place rice and milk in large pot and bring to simmer. Add the lemon peel and sugar. Cook over low heat, stirring occasionally until the rice is cooked - about 25 minutes.
- 2. Remove from heat, let cool. Add egg yolks one at a time, mixing well after each addition. Return rice mixture to stove and bring to a boil, stirring constantly.
- 3. Pour into serving dish, chill for at least 4 hours. Sprinkle cinnamon on top before serving.

This was always a family staple and while searching the Portuguese recipes, I noticed it wasn't there and I just have to add it.

Steps:
- Bring water to a boil in medium saucepan.
- Add rice and cover, simmering for 20 minutes.
- Add milk, sugar and lemon rind, stirring constantly until thickened to oatmeal consistency, about 15-20 minutes.
- It will also thicken some while cooling.
- Pour into one large serving plate and remove lemon rind.
- Spread flat and allow to cool on wire rack.
- You can be decorative with cinnamon by pinching a bit between your fingers and place while your hand is no more than an inch away from the rice (criss cross patterns are traditional), or you can just dust the entire top with the cinnamon.
- Serve at room temp, but refrigerate uneaten portion.

- Put the rice in a medium saucepan and cover it with water. Add in the milk, cinnamon stick, lemon peel and a pinch of salt. Split the vanilla pod, scraping the seeds out, add both the pod and the seeds to the saucepan.
- Place it over medium heat, cook the mixture stirring occasionally utill the rice is fully cooked - around 30-35 minutes. The mixture should be very creamy and moist. Add the sugar, stirring for another minute. Remove it from the heat, pull out the vanilla pod, the cinnamon stick and the lemon peel.
- In a small bowl, combine the egg yolks and 1tbsp of the cooked rice. This process will temper the yolks, which means gently increase its temperature, preventing the eggs from scrambling when added to the hot mixture.

- In a medium saucepan over medium-high heat, bring the water and a pinch of salt to a boil. Stir in the rice, reduce the heat to low, and gently simmer, uncovered and stirring occasionally, until the water is absorbed, 10 to 15 minutes. The rice won’t yet be tender. That’s okay. If the rice starts starts to stick, add a little more water.
- While the rice is cooking, in a separate saucepan over medium-low heat, warm the milk, sugar, strips of citrus zest, and cinnamon stick for 10 minutes. (If you’d like, you can tie the zest and cinnamon stick in a square of cheesecloth or tuck them in a teaball for ease of removal later.) Remove the pan from the heat. If you’d like the citrus and spice flavors to be prominent, let them remain in the mixture as it sits, covered and off the heat, for several minutes to infuse the milk. Otherwise immediately strain the milk and discard the solids.
- Gradually ladle some of the strained warm milk mixture into the pan of rice, stirring well after each addition as you would when making risotto. Continue to cook the rice mixture over low heat, gradually adding a ladleful of milk and stirring until it’s absorbed before adding more milk, until thick and creamy, 20 to 35 minutes.
- In a small bowl, lightly beat the egg yolks and cream, if using. Pour a ladle full of the hot rice mixture into the yolks and stir until combined. Then slowly stir the yolk-rice mixture into the pudding. Continue to cook the rice pudding, stirring frequently so the rice doesn’t scorch, until it thickens, which will happen in just a couple of minutes. Remove from the heat. The rice pudding will thicken even more as it cools and will especially thicken if you refrigerate it overnight. If a thinner consistency is desired, add a little more milk.

- Let the rice continue to simmer for about 10 minutes to allow the rice to thicken. It should form a nice creamy consistency.
