Apricot-Peach Iced Tea image

A refreshing drink inspired from our friends down South. With a pitcher of this on a hot day, you just can't go wrong.

Number Of Ingredients 5

7 cups cool water
2 (5 1/2 ounce) cans apricot nectar
2 tablespoons superfine sugar
3 tea bags, cold brew, pitcher-sized
1 (16 ounce) bag frozen sliced peaches or 1 lb fresh peach, sliced

Steps:

  • In a large pitcher, stir together cool water, apricot nectar and superfine sugar.
  • Add tea bags; let steep 5 to 7 minutes, dunking bags occasionally.
  • Once tea is desired strength, add frozen or fresh peaches.
  • Pour over ice and serve.
  • ***For Raspberry Iced Tea: Switch to berries: replace apricot nectar with 1 1/2 cups cranberry-raspberry drink.
  • In blender, puree 1/2 pint fresh raspberries; strain out seeds.
  • Add to cold water with superfine sugar.
  • Replace peaches with 1 pint fresh raspberries.

This recipe was found in the 2009 cookbook, Cool Drinks for Hot Days. Preparation time does not include the time needed for the tea to cool & chill.

4 orange pekoe tea bags
2 sprigs fresh rosemary
1 quart water, just-boiled
1 1/3 cups apricot nectar
6 fresh apricots, halved, pitted, sliced
12 ounces sparkling water
12 ice cubes

Steps:

  • In a heatproof pitcher, pour just-boiled water over the tea bags & rosemary, & let steep for 10 minutes before removing & discarding the tea bags.
  • Let tea cool, then chill in the refrigerator for 1 hour before removing & discarding the rosemary.
  • Stir in the apricot nectar & apricots & pour into 6 tall glasses with 2 ice cubes in each glass.
  • Top each drink with some of the sparkling water & ENJOY!

Number Of Ingredients 9

3 orange pekoe tea bags
1 cup loosely packed fresh basil leaves
4 cups water
five 5 1/2-ounce cans peach nectar (about 3 1/3 cups), chilled
1/4 cup chilled simple syrup or to taste
For simple syrup:
1 1/3 cups sugar
1 1/4 cups water
Garnish: peach slices and basil sprigs

Steps:

  • Put tea bags and basil in a quart-size glass measure or heatproof bowl.
  • In a saucepan bring water just to a boil and pour over tea bags. Steep tea 5 minutes and strain through a sieve into a heatproof pitcher. Cool tea and chill, covered, until cold, about 1 hour.
  • Stir in nectar and syrup. Serve tea over ice in tall glasses and garnish with peach slices and basil sprigs.
  • To make simple syrup:
  • In a saucepan bring sugar and water to a boil, stirring, and boil until sugar is completely dissolved. Let syrup cool and chill, covered. Syrup may be made 2 weeks ahead and chilled, covered. Makes about 2 cups.

2 cinnamon sticks (3 inches)
10 whole cloves
3 cups water
2 tea bags
3 cups apricot nectar
2/3 cup sugar
1/4 cup lemon juice

Steps:

  • Place cinnamon and cloves on a double thickness of cheesecloth. Gather corners of cloth to enclose spices; tie securely with string., Place water and spice bag in a large saucepan; bring to a boil. Remove from heat. Add tea bags; steep, covered, about 5 minutes according to taste. Discard tea and spice bags., Add remaining ingredients to tea; heat through, stirring to dissolve sugar. Serve immediately.
