- In a large bowl, cut butter into flour until the mixture resembles coarse crumbs. Beat egg yolk and sour cream; add to crumb mixture and mix well. Chill several hours or overnight. , Divide dough into fourths. On a sugared surface, roll each portion into a 10-in. circle. Turn dough over to sugar top side. Combine preserves, coconut and pecans; spread over circles. Cut each circle into 12 wedges and roll each wedge into a crescent shape, starting at the wide end. Sprinkle with sugar. , Place points down 1 in. apart on ungreased baking sheets. Bake at 350° for 15-17 minutes or until set and very lightly browned. Immediately remove to wire racks to cool.

ALMOND-ORANGE-APRICOT CRESCENT ROLLS

- Preheat oven to package directions and roll out dough on a nonstick cookie sheet. Cut and separate dough into perforated triangles. Combine the apricot jam or fruit spread and the orange marmalade in a small bowl. Place bowl in microwave and cook on HIGH 15 seconds to loosen the preserves. Beat egg with water to thin it out a little for an egg wash. Use the back of a teaspoon to spread a thin layer of apricot-orange jam across each piece of dough. Roll crescents up, brush with a little egg wash and coat with sesame seeds and almonds. Bake to package directions until deep golden in color. Serve warm.

- Cut together butter and cream cheese.
- Mix into the butter mix the flour, salt and water.
- Mix with fork until well blended.
- Chill at least 1 hour.
- Roll into thin rectangle on a well-floured board.
- Cut into 30 2 1/2 X 3" rectangles.
- Spread each piece with 2 tbsp apricot preserves.
- Sprinkle with chopped nuts.
- Roll up from one corner and bend ends to form crescents.
- Put folded side down on cookie sheet and bake at 450°F for 10 minutes.
- When cool, sprinkle with confectioners' sugar.
- Freeze.
- Thaw in about 15 minutes.

- Preheat oven to 375°. In a small skillet, heat butter over medium heat. Add onion; cook and stir until tender, 3-5 minutes. Reduce heat to low; add preserves. Cook and stir until melted., Unroll crescent dough into one long rectangle. Roll into a 15x9-in. rectangle, sealing seams and perforations. Cut crosswise into fifteen 1-in. strips; top each with one piece of bacon. Roll up jelly-roll style, starting with a short side; pinch seam to seal. Place on an ungreased baking sheet, cut side down., Spoon apricot mixture over each spiral. Bake until golden brown, 12-15 minutes. Let stand 5 minutes before serving. Refrigerate leftovers.

APRICOT CREAM SQUARES (USING CRESCENT ROLLS)
A decadent dessert with flavorful apricot filling and cream cheese layers. Crescent rolls make it easy and oh so delicious!

Steps:
- 1. Preheat oven to 350 degrees. In a mixer, blend cream cheese,egg yolk,sugar and vanilla. Set aside.
- 2. I use a 16x11 inch jelly roll baking pan. In this pan, spread a tube and a half of crescent rolls evenly onto bottom of pan.
- 3. Top bottom crescent layer with the can of apricot filling.
- 4. Spread the cream cheese mixture on top of the apricot filling layer.
- 5. Pat out the second tube and a half of crescent rolls to form a top crust and layer it on the top.
- 6. Beat the egg white and sugar for the topping until blended. Spread this on top of the crescent roll topping to coat the entire top.
- 7. Bake in a preheated 350 degree oven for 30-35 minutes, until nicely browned.
- 8. NOTE: You can also leave out the apricot layer and add cinnamon sugar to the cream cheese layer and cinnamon sugar to the topping. Very good and how the recipe was originally given to me by a friend.
APRICOT ROLL (WATERBUL)
Posted for the Zaar World Tour 2006-South Africa. From the "Best of International Cooking" cookbook. I haven't had a chance to try this recipe yet. Note: the amount of puff pastry you need for this recipe is 1/2 of a 1-1/4 lb. package. Recipezaar's software doesn't recognize this.

- To make pastry and filling: Preheat oven to 475ºF. On a lightly floured board, roll out pastry to a 14x11-inch rectangle.
- In a small bowl, combine jam and almonds; spread over pastry, leaving a 1/2-inch strip on 1 long side uncovered. Brush uncovered pastry strip with egg yolk.
- Beginning with the jam-covered long side, roll up jelly-roll fashion. Pinch edge of roll to seal; press ends together to seal. With seam-side down, score top of rolled pastry at 1/4 to 1/2-inch intervals.
- Rinse a large baking sheet in cold water; place roll on wet baking sheet. Bake in center of oven for 30 minutes or until golden brown.
- To make glaze: In a medium saucepan, combine cornstarch and sugar. Gradually stir in orange juice. Add orange peel, butter and sherry. Place over medium heat. Stirring occasionally, bring to a boil. Continue stirring until thickened. Remove orange peel. Brush hot glaze over baked apricot roll; serve warm.

MOIST APRICOT ROLLS (USING NUT ROLL TINS)
Another recipe using 2 nut roll tins. Recipe from an old Women's Weekly cookbook from the 80's. As with other nut or date rolls, serve sliced into rounds with butter. Suggested cakes keep a few days or they can be sliced and wrapped in plastic in single serves for freezing

- Cover the apricots with hot water and allow to stand for 30 minutes. Drain well.
- Grease two nut roll tins and preheat oven to 190°C.
- Cream butter and sugar using an electric mixer, until light and fluffy.
- Beat in the eggs, one at a time. Beat until combined.
- Stir in half of the sifted flours with half of the milk.
- Stir in remaining flours and milk.
- Stir in the apricots.
- Spoon mixture evenly into the prepared tins. Tins should be kept upright.
- Bake in the oven for 1 hour.
- Remove from the oven and allow cakes to remain in the closed tins for 10 minutes.
- Carefully remove the lids and turn cakes out onto a wire rack to cool.

APRICOT CRESCENT COOKIES
Steps:
- Preheat the oven to 375 degrees F (190 degrees C).
- Blend butter, cream cheese, and sour cream together in a large bowl with an electric mixer. Stir in flour, 1/2 cup powdered sugar, and salt until well blended.
- Wrap dough in waxed paper and chill until firm enough to roll, at least 3 hours, or overnight.
- Divide dough into thirds. Keep dough in the refrigerator while working on one portion at a time. Roll each portion into a 12 1/2x10-inch rectangle. Cut into 2 1/2-inch squares using a fluted pastry wheel.
- Place a dot, about 1/4 teaspoon, of preserves in the center of each square. Bring up two diagonal corners to the center, pinching together to seal, or secure with a toothpick. Place on ungreased cookie sheets.
- Bake in the preheated oven until firm, but not brown, about 12 minutes. Cool on the baking sheet for 1 minute before removing to a wire rack to cool, 8 to 10 minutes more. Sift remaining powdered sugar over the cooled cookies.

- Dissolve yeast in water and pinch of sugar and set aside.
- Beat 4 eggs and set aside.
- Heat milk and butter.
- Cool to lukewarm and add 4 cups of flour, sugar, and salt in mixing bowl with milk mixture.
- Mix well and add yeast and egg. Add rest of the flour, a cup or two at a time, mixing well after each addition. Knead until you have a soft manageable dough.
- Put in floured bowl, cover and let rise till double--approx. 1-1 1/2 hours.
- After rising, knead, divide into 5 equal parts.
- With one part, divide that one into 15 equal parts.
- Roll each out to 5x6 in size.
- Add 2-3 slices of pepperoni to each roll and roll up.
- Place rolls to greased cookie sheet (approx. 15 rolls per sheet).
- Cover and let rise again, about 1 hour.
- Baste with beaten egg and sprinkle with sesame seeds.
- Bake at 350 degrees for 25 minutes or until light brown.
- (It may be helpful to switch cookie sheets in oven after 15 min.).
- To freeze: Place baked rolls in a large freezer bag. Seal, label and freeze.
- To serve: Allow to thaw at room temperature and enjoy. For a crispier roll, reheat in a 300 degree oven for about 10 minutes.
