APRICOT 'N APPLE STREUSEL KUGEL
Take advantage of the short apricot season and make a few of these delicious kugels, for now and later. The combo of tart apricots and sweet apples is amazing, and the crumbs are fabulous. This is not as heavy as a noodle kugel and isn't loaded with oil or sugar either. I love that it tastes equally good served warm, cold, or room temperature. Steps:
- Preheat oven to 350 degrees Fahrenheit (180 degrees Celsius).
- For the apricot layer, add sugar, eggs, and oil in mixer; beat together till light and fluffy.
- Add the rest of ingredients, except for apricots, and mix well. Add apricots at the end, mixing just until coated.
- Pour into round Pyrex pan lined with Gefen Parchment Paper. Level with a spatula and set aside.
- For the apple layer, mix together all ingredients in a bowl and gently place on top of apricot layer, smoothing as you go along.
- Mix together streusel ingredients in a small bowl. Sprinkle evenly over apple layer. Bake for 50-60 minutes or until fruit is soft and topping is crispy.
APRICOT NOODLE KUGEL
This is an old family recipe that I recently entered in the 2001 Ventura County Fair and won 'Honorable Mention' for in the Pudding Division. There was no category for Kugel, but the judges loved it and still wanted to honor me with a ribbon! Hope you enjoy it as well.

- Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x9 inch baking pan.
- Bring a large saucepan of lightly salted water to a boil. Stir in egg noodles, and cook for 8 to 10 minutes or until al dente; drain.
- In a medium bowl, thoroughly mix egg noodles with 1/4 cup butter, cream cheese, eggs, 1/2 cup sugar, and vanilla. Stir in apricot nectar and milk. Mix in raisins. Transfer to the prepared baking pan.
- In a separate medium bowl, mix cornflake crumbs, 1/2 cup butter, 1/4 cup sugar, remaining vanilla, and cinnamon. Spread over the egg noodle mixture.
- Bake 45 minutes in the preheated oven, until bubbly and lightly browned.

- 1. Cook noodles, in slated water, until soft. Then drain noodles, rinse lightly and return to pot. Keep off stove.
- 2. Add, to same pot, margarine, apples, raisins, apricot preserves and sugar. Mix well.
- 3. Add eggs, and mix well.
- 4. Pour into 9x9 inch pan ( presprayed with non-stick spray).
- 5. Bake at 375 degrees f, covered with foil for 40 minutes then remove foil and bake 15 minutes more.

- Preheat oven to 350 degrees.
- Put everything in a saucepan and cook over low heat, stirring constantly, for 5 minutes. Will get thick and gloppy.
- Pour into graham cracker crust and bake for half an hour.
- Can top with swirls of non-dairy chocolate syrup, cherry pie filling, or a topping of your choice.
- Let chill in the refrigerator until cold and enjoy!
SWEET LOKSHEN KUGEL
Steffi has been a friend of our family for over 40 years, and this kugel recipe has been in her family as long as she can remember. Ever since I was a child, we would have this amazing noodle kugel on the Jewish high holidays or at random Sunday brunches. People love this kugel so much that she was encouraged to enter it in the 2012 New York State Fair and it won the Blue Ribbon in the Favorite Ethnic Dish category! Leftovers can be frozen.

- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes.
- While the egg noodles are cooking, combine sour cream, cream cheese, 1/2 of the melted butter, milk, sugar, eggs, and vanilla in a bowl; beat with an electric mixer until creamy.
- Drain egg noodles and fold into the sour cream mixture. Spread evenly in the prepared baking dish.
- Mix cornflakes, brown sugar, and remaining melted butter together; spread over the noodle mixture.
- Bake in the preheated oven for 50 to 60 minutes. Remove from the oven and let sit for 15 minutes before serving.
