RASPBERRY-MERLOT SAUCE

Raspberry-Merlot Sauce image

Posting this recipe so I can find it again. This is the blurb that accompanied the recipe by Paulette Mitchell: "Red wine and raspberries is a marriage made in heaven. This ruby sauce will keep in a covered container in the refrigerator for up to 2 weeks. Thin with water, if necessary, to serve over poached pears, fresh pineapple rings, ice cream, and innumerable other desserts."

Provided by Impera_Magna

Categories     Sauces

Time 40m

Yield 3/4 cup

Number Of Ingredients 3

4 cups frozen unsweetened raspberries, thawed (two 12-ounce packages)
1 1/2 cups merlot (or other light- to medium-bodied, plummy red wine) or 1 1/2 cups pinot noir wine (or other light- to medium-bodied, plummy red wine)
1 cup sugar

Steps:

  • Combine all the ingredients in a small saucepan. Bring to a boil over high heat. Reduce the heat to medium and simmer, uncovered, over medium-low heat until the mixture is thick and reduced to about 1 cup, about 30 minutes. As the sauce cooks, stir occasionally to prevent scorching.
  • Strain the sauce through a coarse sieve atop a mixing bowl; as it drains, stir occasionally with a wooden spoon. Discard the seeds.

MERLOT SAUCE WITH BEEF

Merlot Sauce With Beef image

I found this recipe on the back of a can of Fred Meyer (aka Kroeger) beef broth. I added a can of cut green beans as we like them. But, I have submitted the original recipe. You can add whatever else you like and it still turns out great. I even made it with some leftover pot roast one time. Very versatile. I also used the reduced sodium chicken and beef broths. This can be a healthier meal if you use the low sodium broth and margarine instead of butter.

Provided by Lennie

Categories     Lamb/Sheep

Time 45m

2 tablespoons Dijon mustard
2 teaspoons chopped fresh rosemary
salt
freshly ground black pepper
1/3 cup fresh dry whole wheat breadcrumbs

1 tablespoon olive oil (amount is approximate)
1 cup merlot
2 tablespoons unsalted butter

Steps:

  • Preheat oven to 400F degrees.

  • In a small bowl, mix together the breadcrumbs, garlic and parsley.
  • Pat this mixture firmly onto lamb.
  • In an oven-proof and stovetop-proof dish that will hold the lamb, heat enough olive oil over medium-high heat to lightly coat the bottom of the pan.

  • Immediately place pan in oven and roast for about 20 minutes or until meat thermometer registers 135-degrees for medium-rare; cook longer if you wish.
  • Remove lamb from pan and place on a warm plate; tent with foil and set aside.
  • Place pan on stovetop, over medium-high heat.
  • Pour in the Merlot and cook until reduced and slightly thickened, scraping up any browned bits-- it will take about 8 to 10 minutes.
  • Add the butter to pan, whisking constantly until butter melts and melds into sauce.
  • Remove foil from lamb and slice, cutting through middle of ribs.
  • Arrange lamb on 2 individual plates and pour a small amount of sauce over meat; serve remaining sauce on the table.
  • Serve immediately.

Marinated Beef Tenderloin with Merlot Sauce image

Satisfy beef lovers with the best, topped with a second-to-none sauce.

Provided by Betty Crocker Kitchens

Categories     Entree

Time 9h15m

Yield 12

Number Of Ingredients 12

1 beef tenderloin roast (3 lb)
1/3 cup red wine vinegar
1/3 cup olive or vegetable oil
2 tablespoons chopped fresh or 2 teaspoons dried basil leaves
2 tablespoons chopped fresh or 2 teaspoons dried oregano leaves
2 tablespoons chopped fresh or 2 teaspoons dried parsley flakes
1/2 teaspoon freshly ground pepper
2 cloves garlic, finely chopped
1 cup currant jelly
1 cup Merlot, Zinfandel or nonalcoholic red wine
1/2 cup Progresso™ beef flavored broth (from 32-oz carton)
2 tablespoons butter or margarine

  • In resealable food-storage plastic bag or large glass or plastic dish, place beef. In small bowl, mix remaining beef ingredients; pour over beef. Seal bag or cover dish; refrigerate at least 8 hours but no longer than 24 hours, turning beef several times to coat with marinade.
  • Heat oven to 425°F. Remove beef from marinade; discard marinade. Place beef on rack in shallow roasting pan. Insert meat thermometer so tip is in center of thickest part of beef.
  • Roast uncovered 40 to 45 minutes or until thermometer reads 140°F (medium-rare doneness). Cover beef loosely with tent of foil. Let stand 15 to 20 minutes or until thermometer reads 145°F. (Temperature will continue to rise about 5°F and beef will be easier to carve as juices set up.)
