10 slices Italian or French bread, cubed, divided
1 jar (25 ounces) chunky applesauce
1/8 teaspoon ground nutmeg
2 eggs
2 cups milk
1/2 cup sugar
1/2 teaspoon vanilla extract
1/8 teaspoon ground cinnamon
Whipped topping, optional

Steps:

  • Place half of the bread cubes in a greased 11x7-in. baking dish. Spoon applesauce over bread; sprinkle with nutmeg. Top with remaining bread. In a bowl, whisk the eggs, milk, sugar and vanilla. Pour over bread. Sprinkle with cinnamon. Bake, uncovered, at 325° for 50-60 minutes or until a knife inserted in the center comes out clean. Serve with whipped topping if desired.

1 teaspoon vanilla extract
1 dash ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread bread cubes and raisins in a 9x13-inch casserole dish. Mix applesauce, cinnamon, and nutmeg together in a small bowl. Pour mixture over bread.
  • Mix milk, sugar, buttermilk, eggs, and vanilla extract together in another bowl and pour over bread. Sprinkle top with a dash of cinnamon.
  • Bake in the preheated oven until a toothpick inserted into the center comes out clean, about 1 hour.

4 cups soft bread cubes
¼ cup raisins
2 cups peeled and sliced apples
1 cup brown sugar
1 ¾ cups milk
¼ cup margarine
1 teaspoon ground cinnamon

¼ cup brown sugar
½ cup milk
½ cup margarine

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 7x11 inch baking dish.
  • In a large bowl, combine bread, raisins, and apples. In a small saucepan over medium heat, combine 1 cup brown sugar, 1 3/4 cups milk, and 1/4 cup margarine. Cook and stir until margarine is melted. Pour over bread mixture in bowl.
  • In a small bowl, whisk together cinnamon, 1/2 teaspoon vanilla, and eggs. Pour bread mixture into prepared dish, and pour egg mixture over bread.
  • Bake in preheated oven 40 to 50 minutes, or until center is set and apples are tender.
  • While pudding is baking, mix together sugar, 1/4 cup brown sugar, 1/2 cup milk, and 1/2 cup margarine in a saucepan. Bring to a boil, then remove from heat, and stir in 1 teaspoon vanilla. Serve over bread pudding.

VERY SIMPLE. Used some leftover/dry sourdough bread and just started throwing things together. Eventually I created this. Its not TOO sweet and very filling. I used fat free milk and light butter but you can use anything.

4 cups bread, cubed
2 cups milk
3 tablespoons butter
1 teaspoon vanilla
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 cup raisins
2 egg whites
1 egg
2/3 cup applesauce
1/4 cup maple syrup (optional)
3/4 cup brown sugar

Steps:

  • Cut bread into 1-2 inch cubes and spread a layer on the bottom of a large glass baking dish. (Using HALF the bread cubes).
  • In a saucepan, warm the milk and butter together long enough to melt butter. (Make sure you do not let the milk boil!).
  • Once butter is melted, remove from heat. Add brown sugar.
  • In a separate bowl whisk together eggs and vanilla untill well mixed and a little foamy/frothy.
  • Whisk egg mixture into milk mixture.
  • Pour mixture over the first layer of bread cubes, making sure to soak them through.
  • Spread applesauce over the soaked bread cubes evenly and sprinkle cinnamon, nutmeg, and raisins.
  • Add the rest of the bread cubes and pour remaining mixture over them. Sprinkle more cinnamon and raisins.
  • Sprinkle with brown sugar (optional) and/or drizzle with a little maple syrup.
  • Bake on 350 degrees for about 20-35 minutes or until the center is set.

1 cup half-and-half
1 cup 2% low-fat milk
2 whole eggs
2 large egg yolks
1/3 cup lightly packed brown sugar
1/4 teaspoon salt
1 1/2 teaspoons vanilla
2 1/4 teaspoons ground cinnamon or 2 1/4 teaspoons apple pie spice
4 cups croissants, cut into 1/2 inch cubes (or any sweet type bread like Portuguese, challah)
2 cups cubed peeled tart apples (1/2 inch, about 3)
1/2 cup raisins
1 tablespoon granulated sugar
1 teaspoon granulated sugar
1/2 cup heavy cream, plus
2 tablespoons heavy cream
1/2 cup milk, plus
2 tablespoons milk
1/4 cup sugar
1/4 teaspoon salt
1 tablespoon cornstarch
3 tablespoons unsalted butter, cut into 3 pieces
1 1/2 teaspoons vanilla
1/2 teaspoon ground nutmeg

Steps:

  • In a large mixing bowl, vigorously whisk the cream, milk, eggs, yolks, brown sugar, salt, vanilla, and ¼ tsp cinnamon until blended.
  • Add the bread cubes, apples and raisins, and toss several times with a large wooden spoon to ensure even saturation.
  • Refrigerate the pudding for at least 2 hours, tossing the mixture occasionally with the wooden spoon to make sure the bread is soaked.
  • Fifteen minutes before baking, preheat the oven to 350. Grease an 8 inch square baking dish with butter. Scoop the pudding into the baking dish. Mix the granulated sugar and the remaining cinnamon together and sprinkle it over the bread pudding.
  • Place the baking dish in a shallow baking pan on the center oven rack and pour enough hot water into the large pan to come two thirds of the way up the sides of the pudding baking dish. (This is important as the bath helps the pudding to be fluffy).
  • Bake the pudding until the top is golden and crisp and has risen in the center, about 50 minutes.
  • Remove the pudding from the water bath and allow it to cool while you make the sauce.
  • Sauce:.
  • Scald the cream, all but ¼ cup of the milk, sugar and salt in a heavy medium size saucepan over medium heat.
  • Dissolve the cornstarch in the remaining milk in a small cup. Stir it into the cream mixture.
  • Bring the mixture to a boil over low heat, whisking constantly. Continue boiling and whisking until the sauce thickens, about 3 minutes.
  • Remove the pan from the heat and stir in the butter, vanilla and nutmeg. Allow to cool slightly before serving.

We like this served hot with a little butter and is a great addition to oatmeal, cream of wheat or spooned over vanilla ice cream. *Use whatever variety of apple that is your favorite.*

5 apples, peeled and cored
1/4 cup brown sugar
1 dash salt
1 vanilla bean
1 cinnamon stick
water

Steps:

  • * Cut your apples into wedges and transfer to a medium sauce pot.
  • * Barely cover the apples with water and add the vanilla bean and cinnamon stick.
  • * Cover the pot and bring to a boil. Then remove the cover and allow everything to simmer till apples appear to be falling apart.
  • * Do not drain. Remove apples from heat and carefully take out the vanilla bean and cinnamon stick. Add the brown sugar and salt.
  • * With a potato masher or fork mash up the apples until they obtain the desired consistency. Serve hot or cold.
  • SUBSTITUTIONS:.
  • Replace vanilla bean for 1 teaspoon of vanilla extract.
  • Replace cinnamon stick for 1/2 teaspoon of ground cinnamon.

2 lbs coffee, can (empty and clean)

  • Lightly spray 2-lb coffee can with cooking spray and place above mixture in can; cover tightly with foil.

3/4 stick (6 tablespoons) unsalted butter
12 slices homemade-type white bread, ground fine in a food processor (about 2 1/2 cups)
4 cups homemade chunky applesauce (recipe follows) or bottled chunky applesauce
For applesauce:
3 pounds McIntosh apples (about 8 large)
2/3 cup water
1/2 cup sugar
1 cup lingonberry preserves* or raspberry preserves plus additional for garnish
lightly sweetened whipped cream for garnish and as an accompaniment
*available at specialty foods shops, and some supermarkets

Steps:

  • Preheat oven to 325°F.
  • In a large heavy skillet melt butter over moderate heat and stir in bread crumbs. Cook bread crumbs, stirring constantly and breaking up lumps, until golden, about 5 minutes.
  • In a 1 1/2-quart soufflé dish layer 1 cup crumbs, 2 cups applesauce, and 1/2 cup preserves and repeat. Sprinkle remaining 1/2 cup crumbs on top and bake pudding in middle of oven 25 minutes, or until top is golden brown. Pudding may be made 1 day in advance and kept covered and chilled. Reheat pudding in a 325°F. oven before serving. Garnish pudding with whipped cream and additional preserves.
  • Serve pudding warm with whipped cream.
  • To make chunky applesauce:
  • Peel and core apples and cut into 3/4-inch pieces. In a large heavy saucepan bring water, apples, and sugar to a boil and simmer, stirring occasionally, until apples are soft and starting to fall apart, about 25 minutes. Applesauce may be made 3 days in advance and kept covered and chilled. Makes about 5 cups.
