- In a small saucepan, bring 4 tablespoons broth to a boil. Remove from the heat; add raisins. Let stand for 5 minutes. , In a nonstick skillet coated with cooking spray; saute the apple, celery and onion for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Remove from the heat; stir in the broth mixture, croutons, nuts, pepper and the remaining broth., Make a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove plastic wrap; fill with stuffing mixture. Close roast; tie at 2-in. intervals with kitchen string and secure ends with toothpicks., Place on a rack in a shallow baking pan coated with cooking spray. Bake at 425° for 25-30 minutes or until a thermometer reads 160°. Let stand for 5 minutes before slicing.

APPLE AND WALNUT STUFFED PORK TENDERLOIN WITH RED CURRANT SAUCE

- In a large heavy skillet, melt butter. Add walnuts; cook and stir over medium heat until toasted, about 2 minutes. Remove 1/2 cup for serving. Add apple to the remaining walnuts; cook and stir 1 minute longer. Cool slightly., Place the cranberries, parsley, oil, garlic and apple mixture in a food processor; cover and process until finely chopped., Cut a lengthwise slit down the center of the roast to within 1/2 in. of bottom. Open roast so it lies flat; cover with plastic wrap. Flatten to 1/2-in. thickness. Remove wrap; spread apple butter on 1 long side of tenderloin to within 1/4 in. of edges. Top with apple mixture. Close meat; tie with kitchen string. Place on a rack in a shallow roasting pan; rub with salt and coriander., Bake at 350° until a thermometer inserted into center of stuffing reads 165° and thermometer inserted in pork reads at least 145°, 55-65 minutes. Let stand for 10 minutes before slicing., Meanwhile, in a small saucepan, combine sauce ingredients; bring to a boil. Reduce heat; simmer, uncovered, until slightly thickened, 12-14 minutes. Serve with pork; top with reserved walnuts.

- Preheat the oven to 425 degrees.
- Cut a pocket in the side of the tenderloin by cutting a lengthwise slit from one side to almost the other side and stopping about 1/2 inch from each of the tapered ends.
- Set the tenderloin aside.
- Finely shred the peel from the oranges and set aside.
- Then squeeze 3 tablespoons of juice from the oranges.
- In a medium bowl, combine the orange juice and apples.
- Set the apple mixture aside.
- Spray an unheated small skillet with no-stick spray.
- Add the onions.
- Cook and stir over medium heat until tender.
- Then add the onions and bread crumbs to the apple mixture.
- Toss until combined.
- Spoon the bread mixture into the pocket of the tenderloin.
- Securely close the pocket with wooden toothpicks.
- Place the tenderloin on a rack in a shallow roasting pan.
- Insert a meat thermometer into the meat portion only.
- Bake for 25 to 30 minutes or until the thermometer registers 160 degrees.
- Let stand about 5 minutes before slicing.
- To make the sauce: In a small saucepan, use a wire whisk to stir together 2 tablespoons of the apple juice and the cornstarch.
- Then stir in the remaining apple juice.
- Cook and stir over medium heat until boiling.
- Stir in the reserved orange peel and cinnamon.
- Add the raisins and cook for 5 minutes, stirring occasionally.
- To serve, slice the tenderloin.
- Spoon the sauce over the slices.

- Heat oven to 450. Put 2 tablespoons of the butter in a large skillet over medium heat. When it starts to foam, add the apples, onion and all the spices, along with some salt and pepper, and cook, stirring occasionally, until the apples and onion are soft, 10 to 15 minutes.
- Meanwhile, wriggle a thin, sharp knife into each end of the meat, making a kind of pilot hole. Then use the handle of a long wooden spoon to force a hole all the way through the loin. Wriggle the spoon to make the hole as wide as you can. Stuff the apple and onion mixture into the roast from each end, all the way to the center. Sprinkle the roast with salt and pepper.
- Roast on a rack in a large roasting pan for 15 minutes, then lower the heat to 325. Continue to roast, basting with apple juice about every 15 minutes or so. If the liquid accumulates on the bottom of the pan, use it to baste; if not, add more juice.
- Start checking the roast after 45 minutes of total cooking time (large roasts can take up to 1.5 hours). When it's done, an instant-read thermometer will register 145. Remove the roast and set it on a platter.
- Put the roasting pan on the stove over one or two burners on medium-high heat. If there is a lot of liquid, reduce it to about .75 cup, scraping up any brown bits from the bottom of the pan; if the pan is dry, add 1 cup of apple juice and follow the same process. When the sauce has reduced some, stir in the remaining 2 tablespoons butter if you like. Spoon the sauce over the roast, slice and serve.

APPLE CINNAMON PORK TENDERLOIN
This meal is simple to make and delicious. A great substitution at Christmas if you don't want the labour of preparing a turkey dinner. Using dried cranberries instead of raisins adds great colour to the dish. I use the ingredient amounts and cooking times as estimates and vary them to suit the size of the pork tenderloin. I sometimes also add some fruity wine vinegar to the apple mixture for some added flavour.

- Preheat oven to 400 degrees.
- Place the tenderloin in a roasting pan or casserole dish (I use cooking spray first to make clean up easier).
- Combine the remaining ingredients together and stir.
- Spoon the apple mixture around the tenderloin, cover and bake for 30 minutes.
- Remove the lid and spoon the apple mix over top of the tenderloin.
- Place back in the oven and bake 15 to 20 minutes or until tenderloin registers at least 155 to 160 degrees on a meat thermometer.
