Time 1h

Number Of Ingredients 18

2 honey crisp apples (peeled, cored and cut into 1/4-inch slices)
2 gala apples (peeled, cored and cut into 1/4-inch slices)
1/4 cup brown sugar
2 tablespoons granulated sugar
3 tablespoons all-purpose flour
Juice from 1 small lemon (about 1 tablespoon juice)
1 teaspoon vanilla paste or 2 teaspoons vanilla extract
1 teaspoon ground cinnamon
1 teaspoon ground ginger
Teeny pinch of ground cardamom
Teeny pinch of ground cloves
1 cup all-purpose flour
2 teaspoons baking powder
1/4 teaspoon kosher salt
1/2 cup granulated sugar
3/4 cup whole milk
6 tablespoons unsalted butter (melted)
1 teaspoon vanilla paste or 2 teaspoons vanilla extract

Steps:

  • Preheat the oven to 350 degrees F. Grease or butter a baking casserole dish that's 9x6 or something comparable. Use what you have! And then set it aside.
  • In a large bowl, add the sliced honey crisp apples, gala apples, brown sugar, sugar, flour, juice from 1 lemon, vanilla and spices (cinnamon, ginger, cardamom and cloves). Toss it all together until combined. Add the filling to your prepared baking dish.
  • In a medium bowl, whisk together the flour, baking powder, salt and sugar. Add the milk, butter and vanilla; mix until combined. Pour the topping on top of the filling. It's ok if some of the filling is peaking through or it's not a totally perfect on top. I like it when some of the filling shows through. And then transfer to the oven to bake for about 40 to 45 minutes, until the filling is bubbling and the top is golden brown.
  • Remove from the oven and serve warm with cold vanilla ice cream.

A tasty little recipe that's made quicker by the use of canned pie filling. I haven't tried it using fresh apples, but I'm guessing you'd just have to make sure you adjust the baking time to fit. I'd love to hear how it works if you do that!

APPLE COBBLER

Apple Cobbler image

The cinnamon biscuit topping in this classic cobbler is easy to make, and easily adjustable. Reduce the buttermilk by 2 tablespoons for a crumblier, more streusel-like topping, or add 2 tablespoons to make it softer and cakelike. The cobbler can be made ahead and rewarmed: Tent it with foil and warm it in a 325-degree oven for 10 to 15 minutes.

Categories     pies and tarts, dessert

Time 1h

Yield One 9-by-13-inch cobbler (about 12 servings)

Number Of Ingredients 22

4 tablespoons/55 grams unsalted butter (1/2 stick)
6 to 8 medium apples (about 2 1/4 pounds), such as Honeycrisp, Granny Smith or Gala, peeled, cored and cut into 1/2-inch dice (about 6 1/2 cups/1000 grams)
2 tablespoons lemon juice (from 1 lemon)
1 1/2 teaspoons vanilla extract
1 cup/220 grams light or dark brown sugar
1 tablespoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
3/4 teaspoon fine sea salt
1/2 cup/100 grams granulated sugar
1/3 cup/45 grams all-purpose flour
Unsalted butter, at room temperature, or nonstick cooking spray
2 cups/255 grams all-purpose flour
1/3 cup/75 grams light brown sugar
1 tablespoon ground cinnamon
1 1/2 teaspoons baking powder
1/2 teaspoon fine sea salt
6 tablespoons/85 grams cold unsalted butter, cut into ½-inch cubes
1/2 cup/120 milliliters cold buttermilk
1 large egg
1 teaspoon vanilla extract
Turbinado sugar, as needed, for finishing

Steps:

  • Make the filling: In a medium pot, melt butter over medium heat. Add apples, tossing to coat in the butter. Add lemon juice, vanilla, brown sugar, cinnamon, ginger, nutmeg and salt and stir to combine. Continue to cook, stirring occasionally, until the sugar dissolves and the apples start to soften, 5 to 6 minutes.
  • In a small bowl, whisk together granulated sugar and flour. Add to the pot and stir well to combine. Stir constantly until the mixture thickens, 2 to 3 minutes. (If you'd like to make it ahead of time, the filling will keep refrigerated for up to 3 days.)
  • Heat oven to 375 degrees. Lightly grease a 9-by-13-inch pan with a thin layer of butter or a coating of nonstick spray, and scoop the filling into the pan.
  • Prepare the cobbler: In a medium bowl, whisk the flour, brown sugar, cinnamon, baking powder and salt together to combine. Add the butter and toss well until each piece is coated fully with flour. Use your hands or a pastry cutter to cut the butter into the flour until the mixture resembles a coarse meal; the butter should be almost completely worked into the flour.
  • Make a well in the center of the bowl, then add the buttermilk, egg and vanilla. Use a fork or small whisk to first beat the egg lightly, then stir all the ingredients together until well combined.
  • Using a spoon, drop the batter in large dollops all over the cobbler. (Most of the surface will be covered, but some of the filling should still be visible.) Generously sprinkle turbinado sugar over the surface.
  • Transfer to the oven and bake until the filling is bubbly and the biscuit topping is golden brown, 40 to 45 minutes. Cool at least 10 minutes before serving warm.

FALL APPLE COBBLER WITH STREUSEL TOPPING

Fall Apple Cobbler With Streusel Topping image

I have been making this recipe for years, and it always results in someone asking me for the recipe. I often cut the recipe in half and make it for my family in an 8x8 pan. It serves nicely (not a gooey mess) and is great served warm with vanilla ice cream. A bonus - it's lower in fats and calories.

Provided by CookinDiva

Categories     Dessert

Time 1h

Yield 12 serving(s)

Number Of Ingredients 17

12 cups apples, peeled and sliced (Macintosh, Jonagold)
1 tablespoon lemon juice
3/4 cup sugar
1 tablespoon cinnamon
1/4 teaspoon nutmeg
1 1/2 tablespoons cornstarch
1 1/3 cups flour
1 tablespoon baking powder
1/2 teaspoon salt
2/3 cup sugar
4 tablespoons butter, melted
1 cup milk
2 tablespoons butter, melted
1/3 cup oatmeal (I use Quick Oats)
1/3 cup brown sugar
1/3 cup walnuts, chopped (optional)
1 teaspoon cinnamon

Steps:

  • Prepare 9x13 pan with non-stick spray; preheat oven to 350.
  • Prepare APPLES: toss sliced apples with lemon juice, sugar, cinnamon, nutmeg and cornstarch. Pour apple mixture into prepared pan. BAKE APPLES 10 minutes.
  • While apples are baking, combine STREUSEL ingredients; set aside.
  • Prepare BATTER: Mix batter dry ingredients in a bowl. When apples are done, whisk in milk and melted butter (batter will thicken if it sits). Immediately pour batter over hot apples; sprinkle streusel on top.
  • Return to oven; bake 40-45 minutes or until top is browned and apples are bubbling.
  • Notes: 1) This can also be made in two 8x8 pans. 2) When I bake in glass pans, I use 325 degrees. 3) I sometimes toss in 1/2 cup cranberries or raisins to the apple mixture.

SO EASY AND TASTY APPLE STREUSEL

So Easy and Tasty Apple Streusel image

"Crisp fall apples, tossed in cinnamon and baked with delicious streusel. Almost as good as pie, with half the calories and it's in the oven in 10 minutes! Plus, it can be served warm with ice cream, and the smaller size means it won't be there to tempt you later. Enough for a small mini casserole dish that will serve 3-4 people. Double the recipe for an 8x8 pan, quadruple it for a 9x13 pan". Unless you double the batch and use a bigger pan, in which case, it's a great breakfast topping for oatmeal! Enjoy! Adapted from Penzey's spices and the intro is what they said about the recipe. A little history: In baking and pastry making, the term streusel (a German word meaning "something scattered or sprinkled", from the verb streuen, akin to the English verb 'strew') refers to a crumb topping of butter, flour, and white sugar (traditional German) that is baked on top of muffins, breads, and cakes (e.g. Streuselkuchen). Some modern recipes add various spices and occasionally chopped nutmeats. Although the topping is of German origin, it is sometimes referred to as Danish or Swedish.
