Oat Bran Muffins image

Oat Bran Muffins are tender, moist, and peppered with raisins, dates, and walnuts throughout. These 30 minute muffins are dairy free, naturally sweetened, and the perfect make ahead breakfast or snack!

2 eggs
1 cup applesauce (unsweetened)
3/4 cup maple syrup or honey
2 tbsp unsulphured molasses
1/4 cup avocado or olive oil
1 tsp pure vanilla extract
1 1/2 cups oat bran
1 1/4 cups whole wheat or spelt flour
1/4 cup flaxseed
1 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
1/3 cup raisins
1/3 cup Medjool dates (pitted & chopped)
1/3 cup walnuts (coarsely chopped)
Cooking spray

Steps:

  • Preheat oven to 425 degrees F, line 12 muffin tin with unbleached parchment paper muffin liners and spray with cooking spray. Set aside.
  • In a large mixing bowl, add eggs, applesauce, maple syrup, molasses, oil and vanilla extract; whisk well to combine. Set aside.
  • In another medium mixing bowl, add oat bran, flour, flaxseed, cinnamon, baking powder, baking soda and salt. Stir with spatula to mix until no lumps, transfer to a bowl with wet ingredients and stir gently just enough to combine. Do not over mix and let batter sit for a few minutes to thicken, then stir a few more times.
  • Add raisins, dates and walnuts. Stir a few times just enough to incorporate.
  • Using an ice cream scoop, divide batter evenly between 12 openings of a muffin tin and bake for 10 minutes in preheated to 425 degrees F oven. Reduce heat to 375 degrees F (no need to wait for oven to cool off) and bake for another 10 minutes or until a toothpick inserted in the centre comes out clean.
  • Remove muffins from the oven, let muffins cool for about 5 minutes and transfer to a cooling rack to cool off a bit more.

1 cup old-fashioned oats
1 cup all-purpose flour
½ cup whole wheat flour
¾ teaspoon baking powder
½ teaspoon baking soda
¾ teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ teaspoon sea salt
1 cup unsweetened applesauce
2 egg whites
½ cup skim milk
½ cup brown sugar
2 tablespoons canola oil
2 teaspoons vanilla extract
½ cup fresh raspberries
¼ cup fresh blueberries
¼ cup fresh blackberries

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C). Line 12 muffin cups with paper or foil liners, or grease if not using liners.
  • Combine oats, all-purpose flour, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, salt, applesauce, egg whites, milk, brown sugar, oil, and vanilla in a large bowl. Mix until blended. Fold in raspberries, blueberries, and blackberries. Divide batter evenly into the prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted into the center of a muffin comes out clean, 15 to 17 minutes.
  • Let muffins cool for 5 minutes in the pan before transferring to a cooling rack.

Makes 12 muffins
2 1/4 c oat bran cereal (process in a food processor for a finer grain of oat--consistency of flour)
1/4 c. chopped nuts (walnuts/pecans)
1/4 c. chopped dates (or raisins)
1 TBS. baking powder
1/4 c.packed brown sugar (or 1/4c honey or molasses)
1 1/4 c skim milk
2 egg whites or 2 egg substit.
2 TBS. vegetable oil (or canola oil--no olive oil)

Steps:

  • In large bowl, combine oat bran cereal, nuts, dates and baking powder. Stir in brown sugar or liquid sweetening. Mix the milk, eggs, and oil together and blend in with the oat bran mixture. Line muffin pans with foil/paper baking cups. and fill with the batter. Bake 15-17 min. (test w/ toothpick --it should come out moist but not wet.)
  • Store in plastic bag in refrigerator or freeze for longer storage. Nutritional counts: carbs--18g, sugar--2.7g, cholesterol 0.5mg, calories--109.5 each Makes 12 muffins

These muffins are a great low-fat moist muffin. I used 1/2 cup brown sugar instead of the 2/3 cup called for and I felt they were sweet enough. I also added chopped apples.

1 cup nonfat milk
1/2 cup unsweetened applesauce
1 egg
2/3 cup brown sugar (I used 1/2 cup)
1/2 teaspoon vanilla extract
1/2 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1 cup blueberries (I added a chopped apple.)

Steps:

  • Preheat oven to 375 degrees.
  • Grease muffin cups or use paper muffin liners.
  • Mix together wheat bran and milk, and let stand for 10 minutes. (I didn't do this and muffins turned out fine.).
  • In a large bowl, mix together applesauce, egg, brown sugar, and vanilla.
  • Beat in bran mixture.
  • Sift together all-purpose flour, whole wheat flour, baking soda, baking powder, and salt.
  • Stir into bran mixture until just blended. Fold in blueberries.
  • Scoop into muffin cups.
  • Bake in preheated oven for 15 to 20 minutes, or until tops spring back when lightly tapped.

1/3 cup flax seed
1/2 cup honey
2 1/2 teaspoons cinnamon
2 tablespoons baking powder
1/2 cup sliced almonds
1 cup almond milk
1 cup prune juice
1 cup egg white
4 tablespoons canola oil
1 cup applesauce

Steps:

  • In a food processor mix oat bran & flax seed into a coarse flour.
  • Mix dry ingredients & wet ingredients separately, then combine.
  • Then I added
  • 2-3 mashed bananas.
  • 1 cup chopped carrots in food processor.
  • 4 scoops of vanilla protein powder
  • 1 cup of Blueberries, raisins, craisins, dates, or prunes.
  • Pour into 24 muffin tins. Bake at 425 for 14-15 minutes.

1 ½ cups oat bran
1 ½ cups all-purpose flour
2 teaspoons baking powder

  • Preheat oven to 400 degrees F (205 degrees C). Line or grease 12 muffin cups.
  • Blend together brown sugar, oat bran, flour, baking powder, soda, and salt. Add eggs, chilled applesauce, and vegetable oil. Mix until well-blended. Spoon batter into muffin cups. Let stand 10 minutes.
  • Bake at 400 degrees F (205 degrees C) for 15 minutes or until golden brown.
  • VARIATIONS: Add 1 cup plumped raisins, with a little bit of raisin water (approximately 2 tablespoons). Or, before baking, sprinkle mixture of sugar and cinnamon over the tops of the muffins. Or, add 1 teaspoon cinnamon or nutmeg to flour mixture.
