BREAKFAST APPLE BRAN LOAF

2 eggs
1 scant cup buttermilk
1 large apple, grated (about 1 cup)
1/2 cup melted butter
1 teaspoon vanilla extract
1 1/3 cup plain, unsweetened bran cereal
1 cup unbleached all purpose flour
1/2 cup oat bran or coarsely pulsed oats, plus more for topping
1/2 cup natural cane sugar
1/3 cup muscavado sugar (or brown sugar), plus more for topping
1/2 cup chopped pecans
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon sea salt
1/2 teaspoon ground cinnamon
1/4 teaspoon fresh ground nutmeg
Salted butter, room temperature, for serving

Steps:

  • Preheat the oven to 375°F. Grease a 9x5 loaf pan or line it with parchment paper.
  • Into a large mixing bowl, combine the eggs and buttermilk and whisk well to combine. Add the grated apple, melted butter and vanilla and stir to mix. Add the bran cereal and let it sit for 5 minutes to absorb liquid.
  • While you're waiting, in another bowl, combine the dry ingredients. Combine the all purpose flour, oat bran, cane sugar, muscavado, pecans, baking soda, baking powder, sea salt, cinnamon and nutmeg. Stir to mix. Add the wet ingredients in with the dry and stir just to combine, do not overmix.
  • Pour the batter into the prepared pan, it should come up no more than 3/4 way up the pan. Sprinkle the top of the loaf with a handful of oat bran and brown or turbinado sugar. Bake on the middle rack for 40-45 minutes or until a toothpick in the center comes out clean. Allow it to cool completely before removing it from the pan.
  • Slice with a serrated knife and serve with butter on the side.
  • Loaf can be kept covered at room temperature for 3 days or for 5 days in the fridge.

4 Tbsp butter or margarine, divided into 2 + 2 tablespoons
2 c raisin bran cereal, divided into 1-1/2 + 1/2 cup
1 1/4 c milk
1 egg
3/4 c white sugar
2 c all-purpose flour
1 Tbsp baking powder
1/2 tsp ground cinnamon, see step #11
1/2 c chopped walnuts, optional
1 Tbsp white sugar
some walnut halves for decorating, optional

Steps:

  • 1. Preheat oven to 350 degrees F. Spray cooking spray in 9 x 5 loaf pan.
  • 2. Melt 2 Tablespoons of butter or margarine in a medium microwave-safe bowl. (I love my large PC Batter Bowl for this!) Stir in 1 1/2 cups of the cereal and milk until blended. Let stand 1 minute.
  • 3. Add egg and 3/4 cup sugar, mixing well with a large spoon.
  • 4. Stir in flour, baking powder, and cinnamon until well-blended.
  • 5. Mix in the chopped walnuts, if desired.
  • 6. Spread into prepared loaf pan.
  • 7. FOR THE TOPPING: Melt the remaining 2 Tablespoons of butter or margarine in a small microwave-safe bowl. (I use my small PC Batter Bowl for this.) Stir in the remaining 1/2 cup cereal and 1 Tablespoon sugar until well-blended. Sprinkle over batter.
  • 8. Gently press topping and walnut halves into the batter.
  • 9. Bake 40-50 minutes or until a toothpick inserted in the center comes out clean. Cool 10 minutes in pan on wire rack, then remove bread from pan and cool completely...

2 packages (1/4 ounce each) active dry yeast
1-1/2 cups warm water (110° to 115°), divided
1 teaspoon sugar
3 large eggs, room temperature, beaten
1 cup applesauce
1/2 cup honey
1/2 cup canola oil
2 teaspoons salt
8 to 9 cups all-purpose flour
1-1/2 cups diced peeled apples
1-1/2 cups raisins
2 tablespoons lemon juice
2 tablespoons cornmeal
GLAZE:
1 large egg, beaten
Sugar

Steps:

  • In a small bowl, combine yeast, 1/2 cup water and sugar; set aside. In a large bowl, combine eggs, applesauce, honey, oil, salt and remaining water; mix well. Stir in yeast mixture. Gradually add enough flour to form a soft dough. Knead on a floured surface until smooth and elastic, about 10 minutes. Place dough in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch down and turn over in bowl. Cover and let rise 30 minutes. In a small bowl, combine the apples, raisins and lemon juice. Divide dough into 3 parts; knead a third of the apple mixture into each part. Shape each into a round flat ball. Place each in a greased 8-in. round baking pan that has been sprinkled with cornmeal. 1 c peeled, chopped apples (i use 1 medium granny smith apple.)
1/2 c raisins (i soak mine in hot water for a few minutes and drain)
1/2 c walnuts, chopped
ICING:
1 c powdered sugar
1 1/2 Tbsp warm milk or half and half (more or less to reach desired consistency)
1/2 tsp vanilla

  • 1. Preheat oven to 350 degrees. Grease an 8x4 loaf pan. In a large bowl, combine all ingredients. Pour into prepared pan,

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch loaf pan.
  • Bring raisins and water to a boil in a small saucepan, reduce heat to medium, and boil 5 minutes; set aside to cool.
