I've had this recipe for years and make it often since Michigan has an abundance of apples. The caramel sauce is a special touch, especially when serving guests. -Mrs. Karl Zank, Sand Lake, Michigan

1/2 cup butter, softened
3/4 cup sugar
1 large egg, room temperature
1 cup all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
2 cups chopped peeled tart apples
1/2 cup chopped walnuts
CARAMEL SAUCE:
1/2 cup packed brown sugar
2 tablespoons cornstarch
1/2 cup light corn syrup
1/4 cup half-and-half cream or evaporated milk
1/4 cup butter, cubed
1/4 teaspoon salt
1 large egg, lightly beaten

Steps:

  • In a small bowl, cream butter and sugar until light and fluffy. Beat in egg. Combine the flour, baking soda, nutmeg and cinnamon; gradually add to creamed mixture and mix well. Stir in apples and walnuts. , Pour into a greased 8-in. square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted in the center comes out clean. , Meanwhile, for caramel sauce, combine brown sugar and cornstarch in a saucepan. Add remaining ingredients. Bring to a boil; cook and stir until thickened, about 3 minutes. Serve cake warm or cold with warm caramel sauce.

Oh wow! This is seriously good! Slightly tart apples topped with a light sponge and drizzled (before cooking) with a caramel sauce that works its way through the whole dish! Real comfort food! I found this recipe in Australia's 'Delicious' Cooking Magazine and have adapted it slightly. It will serve 8 generously but could stretch to more if necessary.

6 large granny smith apples
250 g plain flour (all purpose)
2 teaspoons baking powder
250 g white sugar
200 ml milk
150 g butter, melted
2 eggs, beaten
1 cup brown sugar (200g)
1/2 cup golden syrup
300 ml water
icing sugar
heavy cream, to serve

Steps:

  • Preheat oven to 180°C (350°F).
  • Butter a large glass or ceramic baking dish approx 32cm x 23cm x 5cm (12" x 9" x 2").
  • Peel, core and slice apples 1cm (approx 1/2") thick.
  • Pile apples into the baking dish, adding more apple if necessary to generously cover the bottom of the dish.
  • Sift flour, baking powder and sugar into a large mixing bowl.
  • Make a well in the centre and add milk, butter and eggs and beat with an electric mixer until the mixture becomes pale and the beaters leave a trail.
  • Spoon batter evenly over the apples and smooth out with the back of a large spoon.
  • Combine brown sugar, golden syrup and water in a small saucepan.
  • Stir over medium heat until the mixture has become liquid and the brown sugar has melted.
  • Stop stirring and allow mixture to come to the boil.
  • Remove immediately from heat and pour evenly over the batter.
  • Place dish on the centre shelf of the preheated 180°C (350°F) oven.
  • Bake for 30-35 minutes or until the top is golden brown.
  • Dust lightly with icing sugar to serve and serve with thick cream.

3/4 cup butter, cubed
4 cups chopped peeled tart apples (about 4 medium)
2 cups sugar
1/2 cup raisins
1/2 cup chopped walnuts
3 teaspoons ground cinnamon
2 teaspoons vanilla extract
BREAD PUDDING:
6 large eggs
2-1/2 cups 2% milk
1-1/2 cups plus 2 tablespoons sugar, divided
1 cup heavy whipping cream
1-1/2 teaspoons vanilla extract
Dash ground nutmeg
1 loaf (1 pound) French bread, cut into 1-inch cubes
CARAMEL SAUCE:
1 cup sugar
1/4 cup water
1 cup heavy whipping cream
2 tablespoons butter

Steps:

  • Preheat oven to 350°. In a large skillet, heat butter over medium heat. Add apples, sugar, raisins, walnuts and cinnamon; bring just to a boil, stirring constantly. Reduce heat; simmer, uncovered, until apples are tender, stirring occasionally. Remove from heat; stir in vanilla., For bread pudding, in a large bowl, whisk eggs, milk, 1-1/2 cups sugar, cream, vanilla and nutmeg until blended. Stir in bread cubes and apple mixture. Transfer to a greased 13x9-in. baking dish. Sprinkle with remaining sugar. Bake, uncovered, 40-45 minutes or until a knife inserted in the center comes out clean., For caramel sauce, in a small heavy saucepan, combine sugar and water; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. Cover; bring to a boil over medium-high heat. Cook 1 minute., Uncover pan; continue to boil until syrup turns a medium amber color. Immediately remove from heat and carefully stir in cream and butter. Serve with warm bread pudding.

2 cups chopped peeled or unpeeled cooking apples (2 medium)
1/3 cup butter or margarine
2/3 cup granulated sugar
1/3 cup half-and-half

Steps:

  • Heat oven to 350°F. Grease bottom and sides of 8-inch square pan with shortening.
  • In large bowl, mix brown sugar and softened butter with spoon until light and fluffy. Beat in egg. Stir in flour, baking soda, 1 teaspoon cinnamon, the nutmeg and salt. Stir in apples. Spread batter in pan.
  • Bake 25 to 35 minutes or until toothpick inserted in center comes out clean.
  • Meanwhile, in 1-quart saucepan, heat sauce ingredients over medium heat, stirring frequently, until butter is melted and sauce is hot. Serve warm sauce over warm cake.
