- 1/3 cup crystallized ginger
- 1 tbsp. whole allspice
- 1 tbsp. whole cloves
- 2 cups crisp dried apple chips or dried apples
- 12 sticks (2 1/2 to 3 inch each) cinnamon
- 16 white and/or green tea bags

Steps:

  • Divide ginger, allspice and cloves among the infusers of four glass teapots.(If teapots don't have infusers, cut four 7 to 8 inch squares of double thick cotton cheesecloth. Divide ginger, allspice and cloves among cheesecloth squares. Tie closed with clean kitchen string.) Divide apple chips and cinnamon sticks among teapots. Cover; attach 4 tea bags and serving instructions to each gift. Makes 4 gift mixers, 4 servings per mix. Top: Look for apple chips with no added oils or sugar. To Make Tea: In medium pan, mix spice bag, cinnamons ticks, and 4 cups water. Bring to boiling; Reduce heat. Simmer, covered, for 20 minutes. Remove pan from heat. 1 jar (21.1 ounces) orange breakfast drink mix
1 jar (6 ounces) sugar-free instant lemon iced tea mix
2/3 cup sweetened lemonade drink mix
2 teaspoons ground cinnamon
1 teaspoon ground cloves
ADDITIONAL INGREDIENTS FOR HOT SPICED TEA:
1 cup boiling water
ADDITIONAL INGREDIENTS FOR HOT SPICED PUNCH:
2 quarts apple juice or cider
1-1/2 cups cranberry juice
3 cinnamon sticks (3-1/2 inches)

Steps:

  • In an airtight container, combine the first five ingredients. Store in a cool, dry place for up to 6 months. Yield: about 7-1/2 cups total. , To prepare tea: Dissolve about 1 tablespoon tea mix in boiling water; stir well. Yield: 1 serving., To prepare punch: In a 3-qt. slow cooker, combine the juices, 1/4-1/3 cup tea mix and cinnamon sticks. Cover and cook on low for 4 hours. Yield: about 12 servings (6 ounces each).

2 cups unsweetened apple juice
6 whole cloves
1 cinnamon stick (3 inches)
3 cups water
5 tea bags
Additional cinnamon sticks (3 inches), optional

Steps:

  • In a small saucepan, combine the apple juice, cloves and cinnamon stick. Bring to a boil. Reduce heat; simmer, uncovered, for 10-15 minutes., Meanwhile, in a large saucepan, bring water to a boil. Remove from the heat; add tea bags. Cover and steep for 5 minutes. Discard tea bags. Strain juice mixture, discarding cloves and cinnamon. Stir into tea. Serve warm, with additional cinnamon sticks if desired.

5 Tbsp. TEALEAVES Apple Pie Tea
4 Tbsp. Sugar
0.5 Tsp. Salt
2.5 Cups All-Purpose Baking Flour
1 Cup Cold Unsalted Butter (cut into small pieces)
4 Tbsp. Cold Water
1 Tsp. Apple Cider Vinegar
1 Egg
6 Apples (peeled & sliced)
2 Tsp. Ground Cinnamon
2 Tbsp. Fresh Lemon Juice
0.667 Cup Sugar
1 Tbsp. Ground Cinnamon
0.25 Tsp. Salt
1 Tbsp. All-Purpose Baking Flour
1 Large Egg (beaten)
0 Coarse Sugar for Sprinkling (optional)

Steps:

  • Preheat oven to 375° F.
  • In a large bowl mix flour, sugar and salt.
  • Pulse in the cold butter to mixture in a food processor until the dough begins to come together.
  • In a small bowl add egg and water and beat the egg.
  • Steep 5 tablespoons of TEALEAVES Organic Apple Pie in ½ cup of 82° C / 180° F water for 1 minute. Strain into egg mixture.
  • Slowly pour the liquid into the flour mixture. Mix until you can form a ball.
  • Divide the dough into 2 sections between 2 sheets of plastic wrap and pat each into a disk. Wrap tightly and refrigerate until firm.
  • Peel and core the apples; slice 1/4 inch thick. Transfer to a medium bowl and toss with sugar lemon juice, flour, salt, and ¼ cups of steeped tea until well combined.
  • Roll out 1 disk of dough into a 15-inch round on a lightly floured surface. Ease into a 11-inch pie plate.
  • Assemble apples into the baking dish and place the dish in the fridge.
  • Remove the second dough from the fridge and roll into a 15" circle, then cut into 1 ½ inch (3.5 cm) strips.
  • Remove the pie from the fridge, carefully weave the strips to form a cross pattern. Fold the overhanging dough under itself and crimp with your fingers.
  • Brush the top crust with the beaten egg and sprinkle with coarse sugar. Chill 1 hour.
  • Bake in the oven for 45-60 min, or until golden.

Juice of 1 lemon
1 cup packed dark brown sugar
3 tablespoons cornstarch
2 teaspoons Warm Spice Blend, recipe follows
3/4 teaspoon kosher salt
1/4 teaspoon ground cinnamon
2 tablespoons boiled cider syrup
1 teaspoon vanilla extract
2 1/2 cups all-purpose flour
1 tablespoon granulated sugar
1 teaspoon kosher salt
1 cup (2 sticks) cold unsalted butter, cubed
6 tablespoons ice water, plus more if needed
1 tablespoon apple cider vinegar
All-purpose flour, for dusting
2 tablespoons cold unsalted butter, cubed
1 large egg, lightly beaten
4 1/2 teaspoons turbinado sugar
1 teaspoon flaky salt
Whipped cream, for serving
1 tablespoon ground cardamom
1 tablespoon ground ginger
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground nutmeg

Steps:

  • For the filling: Cut the apples into 1/4-inch slices and place them in a large bowl. Toss with the lemon juice to keep them from browning. Add the brown sugar, cornstarch, Warm Spice Blend, kosher salt and cinnamon and toss to combine. Mix in the boiled cider syrup and vanilla. Cover the mixture and let it sit at room temperature while you make the pie dough.
  • For the pie dough: Add the flour, granulated sugar and kosher salt to a food processor and pulse to combine. Add the butter and pulse to incorporate so that about three-quarters of the mixture is mealy and the rest has some slightly larger, pea-sized bits of butter. Combine the ice water and cider vinegar in a measuring cup. Drizzle the water and vinegar into the food processor and continue to pulse just until the mixture comes together to form a dough. If it seems dry or is having a hard time coming together, add a bit more water, a few drops at a time, until it comes together.
  • Turn the dough out onto a clean surface and use your hands to press on any stray crumbs. Divide the dough in half, then divide one of the halves in half again so that you have 3 pieces of dough. Pat each piece into a disc and wrap in plastic wrap. Refrigerate for at least 30 minutes or until ready to roll out for the pie.
  • For the assembly: Flour a work surface and roll out the largest disc of dough into a circle just larger than 12 inches. Place it in a 9-inch pie plate and refrigerate. Roll out the 2 remaining dough discs to about 10 inches each. Cut the dough into 2-inch-wide strips for making a lattice top. Set the strips aside.
  • Position an oven rack in the lower third of the oven (with a pizza stone if you have one) and preheat to 400 degrees F.
  • Fill the pie crust with the apples (it will seem like a lot but they bake down!) and pour the juices over it. Distribute the butter over the top. Weave the dough strips together over and under to form a lattice crust over the top. Pinch the edges to seal, trim, fold the edges over and crimp. Give the edges a little hug to make sure they are sitting snugly on the rim of the pie plate; otherwise they could fall off in the oven. Freeze the pie for 15 minutes.
  • Brush the lattice with the egg wash, then sprinkle with the turbinado sugar and flaky salt. Place the pie on a baking sheet and bake until the internal temperature reaches 195 degrees F, 45 to 55 minutes. Let cool slightly.
  • Serve the pie with large dollops of whipped cream.
  • Layer the cardamom, ginger, cinnamon, cloves and nutmeg in a medium glass jar and tighten the lid. Shake to combine. Keep on hand to add to your favorite desserts and beverages -- or just toast with butter!

This is an old family favorite, handed down from my great-grandmother. The holidays officially begin with Christmas carols and my favorite hot spiced tea! Definitely a seasonal comfort beverage for me! I prefer to use fresh juices with pulp. The flavors are different. Canned pineapple in light syrup is best. Set the pineapple chunks aside for the rest of your holiday baking. Store leftovers in refrigerator and reheat as needed.
