FRUITY APPLE SALAD
Green and red apples add a nice crunch to this pretty medley of blueberries, grapes, pineapple and mandarin oranges. The colorful salad is dressed in a refreshing lemon sauce.

- In a serving bowl, combine the apples, grapes, pineapple, blueberries and oranges. In a small bowl, combine the sugar, lemon juice and water; stir until sugar is dissolved. Pour over fruit and toss gently. Serve with a slotted spoon.

APPLE FRUIT SALAD
Lots of apples are grown in southern Illinois, and this is one of my favorite ways to use them. I like Golden Delicious, or a combination of Golden and Red Delicious for pretty color, but you can use whatever type of apple you prefer. The cooked dressing gives the salad an old-fashioned feel.

- For dressing, in a small saucepan, combine the sugars, flour and water until blended. Bring to a boil over medium heat; cook and stir for 2 minutes or until thickened. Remove from the heat. , Stir a small amount into the egg; return all to the pan. Cook and stir until mixture reaches 160° and coats the back of a metal spoon. Remove from the heat; gently stir in vinegar and butter. Cool completely. , In a large bowl, combine the apples, bananas, celery, grapes, pineapple and cashews. Drizzle with dressing and toss to coat. Cover and refrigerate until chilled. Serve with a slotted spoon.

- Drain pineapple juice into a saucepan. Add margarine and lemon juice; cook over medium heat until margarine is melted. In a small bowl, combine cornstarch and water until smooth; stir into juice mixture. Bring to a boil; boil and stir for 2 minutes. Reduce heat; add sweetener. Cool to room temperature, about 30 minutes. In a large bowl, combine pineapple, apples, grapes and poppy seeds. Add the dressing; toss to coat Cover and chill for at least 1 hour. I want to give credit where credit is due. I changed Lisa Mersereau "better than sex fruit salad recipe" cause my wife does not like cherries. So I removed the cherry pie filling and replaced it with apple pie filling, food coloring, mandarin oranges and doubled the cool whip. OMG it was out of this world. Thanks Lisa.
