- Make the dough by hand. In a medium bowl, whisk together the flour, sugar, and salt. Using your fingers, work the butter into the dry ingredients until it resembles yellow corn meal mixed with bean sized bits of butter. (If the flour/butter mixture gets warm, refrigerate it for 10 minutes before proceeding.) Add the egg and stir the dough together with a fork or by hand in the bowl. If the dough is dry, sprinkle up to a tablespoon more of cold water over the mixture.
- Make the dough in a food processor. With the machine fitted with the metal blade, pulse the flour, sugar, and salt until combined. Add the butter and pulse until it resembles yellow corn meal mixed with bean size bits of butter, about 10 times. Add the egg and pulse 1 to 2 times; don't let the dough form into a ball in the machine. (If the dough is very dry add up to a tablespoon more of cold water.) Remove the bowl from the machine, remove the blade, and bring the dough together by hand.
- Form the dough into a disk, wrap in plastic wrap and refrigerate until thoroughly chilled, at least 1 hour.
- Make the filling. Put the lemon juice in a medium bowl. Peel, halve, and core the apples. Cut each half into 4 wedges. Toss the apple with the lemon juice. Add the sugar and toss to combine evenly.
- In a large skillet, melt the butter over medium-high heat. Add the apples, and cook, stirring, until the sugar dissolves and the mixture begins to simmer, about 2 minutes. Cover, reduce heat to medium-low, and cook until the apples soften and release most of their juices, about 7 minutes.
- Strain the apples in a colander over a medium bowl to catch all the juice. Shake the colander to get as much liquid as possible. Return the juices to the skillet, and simmer over medium heat until thickened and lightly caramelized, about 10 minutes.
- In a medium bowl, toss the apples with the reduced juice and spices. Set aside to cool completely. (This filling can be made up to 2 days ahead and refrigerated or frozen for up to 6 months.)
- Cut the dough in half. On a lightly floured surface, roll each half of dough into a disc about 11 to 12 inches wide. Layer the dough between pieces of parchment or wax paper on a baking sheet, and refrigerate for at least 10 minutes.
- Place a rack in the lower third of the oven and preheat the oven to 375 degrees F.
- Line the bottom of a 9-inch pie pan with one of the discs of dough, and trim it so it lays about 1/2 inch beyond the edge of the pan. Put the apple filling in the pan and mound it slightly in the center. Brush the top edges of the dough with the egg. Place the second disc of dough over the top. Fold the top layer of dough under the edge of the bottom layer and press the edges together to form a seal. Flute the edge as desired. Brush the surface of the dough with egg and then sprinkle with sugar. Pierce the top of the dough in several places to allow steam to escape while baking. Refrigerate for at least 15 minutes.
- Bake the pie on a baking sheet until the crust is golden, about 50 minutes. Cool on a rack before serving. The pie keeps well at room temperature (covered) for 24 hours, or refrigerated for up to 4 days.

- Peel and thinly slice the apples (keep the apples in a bowl of lemon water as you go to keep them from browning).
- In a large bowl, toss the apples with the brown sugar, salt, cinnamon, lemon juice, and half of the cornstarch. Once the apples are well coated, let sit and macerate for 30 minutes, stirring occasionally.
- Preheat the oven to 400˚F (200˚C).
- Transfer the apples to a colander set over a medium bowl and let drain for about 15 minutes, until all of the liquid is drawn out.
- Transfer the liquid released from the apples to a small pot over low heat.
- In a small bowl, mix the rest of the cornstarch and the water to make a slurry. Add the slurry to the apple liquid and quickly stir to incorporate. Bring to a boil, then add the butter and stir until melted. Immediately remove from the heat and pour over the apples, stirring to coat.
- Gently lay 1 rolled-out pie crust in a 10-inch (25-cm) pie dish.
- Lay the apples in the pie crust, making sure they are flat and facing the rounded edges out in order to fit as many apples as possible in the crust. Pour any leftover liquid from the bowl over the apples.
- Top with the other rolled-out pie crust. Trim the excess dough from the edges.
- Press the 2 crusts together to seal, then fold the edges under. Crimp the edges.
- Then brush all over with egg wash and sprinkle the with sanding sugar.
- Use a paring knife to cut a few vents in the top for steam to escape.
- Bake for 40-45 minutes, until golden brown.
- Let cool for at least an hour
- Slice and serve.

- Place a baking sheet in the oven, then preheat the oven to 425°F (220°C).
- Peel the Golden Delicious and Gala apples, then slice into ⅛-inch (3 mm) thick wedges. Transfer to a large bowl.
- Add the brown sugar, lemon juice, cornstarch, cinnamon, nutmeg, and salt to the bowl with the apples and mix until the apples are well coated.
- On a lightly floured surface, roll out a pie dough round to a 10-inch (25 cm) circle. Roll the dough around the rolling pin, brushing off any excess flour, then unroll into a 9-inch (24 cm) pie dish, making sure the dough is centered. Fill with the apple mixture. Refrigerate while you prepare the top crust.
- Roll out the remaining pie dough round to a 12-inch (30 cm) circle. Cut out 6 1-inch (2.54 cm) strips and 8 ½-inch (21 cm) strips.
- Lay the longest 1-inch (2.54 cm) strip vertically over the center of the pie, then 2 more 1-inch (2.54 cm) strips on either side. - Roll the excess dough around the edges inward toward the pie, tucking the ends in. Use your index finger on one hand and thumb and index finger on the other hand to crimp the edge. Brush off any excess flour, then brush the egg wash all over the dough. Sprinkle the raw sugar on top.
- Brush the pie with the egg wash and sprinkle with the raw sugar. Cut four slits in the top of the pie to create a vent.
- Carefully remove the hot baking sheet from the oven and place the pie dish on top, then return to the oven and bake for 40 minutes, covering with foil halfway through, until the crust is golden brown and the juices are bubbling.
- Let the pie cool completely before slicing and serving.

- In a medium-sized bowl, add the flour and salt. Mix with fork until combined.
- Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas.
- Gradually add the ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky.
- Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate.
- Peel the apples, then core and slice.
- In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and juice from the lemon.
- Mix until combined and all apples are coated. Refrigerate.
- Preheat the oven to 375°F (200°C).
- On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch (3 mm) thick.
- Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary.
- Pour in apple filling mixture and pat down.
- Roll the other half of the dough on top.
- Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together.
- Brush the pie with the beaten egg and sprinkle with the sugar.
- Cut four slits in the top of the pie to create a vent.
- Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains.
- Allow to cool completely before slicing.
- Top with ice cream and serve.
