SALTED CARAMEL APPLE PIE BARS
Baking apple pie as bars is so much easier!

- Preheat the oven to 300°F (149°C). Line the bottom and sides of an 8-inch square baking pan with parchment paper leaving enough overhang on all sides. Set aside.
- Stir the melted butter, granulated sugar, vanilla, and salt together in a medium bowl. Add the flour and stir until everything is combined. Press the mixture evenly into the prepared baking pan. Bake for 15 minutes and then remove from the oven. (As the crust bakes, you can prepare the filling and streusel.)
- Combine the sliced apples, flour, granulated sugar, cinnamon, and nutmeg together in a large bowl until all of the apples are evenly coated. Set aside.
- Whisk the oats, brown sugar, cinnamon, and flour together in a medium bowl. Cut in the chilled butter with a pastry blender or two forks (or even with your hands) until the mixture resembles coarse crumbs. Set aside.
- Turn the oven up to 350°F (177°C). Evenly layer the apples on top of the warm crust. It will look like there are too many apple slices, so layer them tightly and press them down to fit. Sprinkle the apple layer with streusel and bake for 30-35 minutes or until the streusel is golden brown.
- Remove from the oven and allow to cool for at least 20 minutes at room temperature, then chill in the refrigerator for at least 2 hours (or overnight). Lift the foil or parchment out of the pan using the overhang on the sides and cut into bars. I usually cut them into 16 smaller bars, but you can cut them into 12 larger bars. Once cut, drizzle some salted caramel sauce on top of each. These apple pie bars can be enjoyed warm, at room temperature, or even cold.
APPLE PECAN CRUMBLE BARS
Oats, apples and pecans come together in these crumble bars that are baked to perfection - a tasty dessert.

- Heat oven to 350°F. Line 13x9-inch pan with foil, leaving foil overhanging at 2 opposite sides of pan; spray foil with cooking spray. In medium bowl, mix flour, oats, brown sugar and salt. Add melted butter, stirring until well mixed. Press two-thirds of the mixture in bottom of pan. Bake 12 to 14 minutes or until set.
- Meanwhile, cook apples in microwave as directed on package. In medium bowl, mix apples, pecans and cinnamon; spoon over partially baked crust. Sprinkle with remaining oat mixture.
- Bake 40 to 45 minutes or until lightly browned. Cool in pan on cooling rack 2 hours. Use foil to lift from pan. Cut into 6 rows by 4 rows.

- Preheat oven to 325 degrees F (165 degrees C). Generously grease a 2-quart baking dish.
- Arrange apple slices in an even layer in the baking dish. In a small bowl, mix together 1/2 cup sugar, cinnamon, and 1/2 cup pecans. Sprinkle mixture over apples.
- In a medium bowl, mix together flour, 1 cup sugar, baking powder, and salt. In a separate bowl whisk together egg, evaporated milk, and melted butter. Pour milk mixture into flour mixture all at once, and stir until smooth. Pour mixture over apples, and sprinkle top with 1/4 cup pecans.
- Bake in the preheated oven for 55 minutes.

CARAMEL APPLE PECAN BARS
Caramel apple flavor in bar cookie form...love, love, love! These aren't the type of cookie bar you can eat with your hands. They're ooey gooey so you'll need a plate. They have a crunchy cinnamon crust and a caramel apple center. Each bite tastes like fall. Serve with a scoop of ice cream and it's the perfect autumn dessert.

- 1. Preheat oven to 350. Grease or spray a 9 x13 pan.
- 2. Mix flour, baking soda, cinnamon, and salt in a bowl. Set aside.
- 3. In another bowl, mix brown sugar, eggs, melted butter, vanilla, and 1 cup of the chopped nuts (keep the other 1/4 C for topping).
- 4. Stir in dry ingredients. When well-mixed reserve 1 cup for topping.
- 5. Pour into pan (it may be hard to spread but it will eventually, lol). Bake that for 20 minutes.
- 6. While baking, melt the caramels and milk in the microwave 2-3 mins. Stir carefully after each min (this is also not easy to do but it eventually will get smooth and creamy. Cool that for 5 minutes.
- 7. When the crust comes out of the oven, drain any juice from the apples. Pour the apples on the crust and spread evenly.
- 8. Then pour the caramel over the apples staying about 1/2" away from the edges.
- 9. Then drop teaspoons of the reserved batter over that spreading as well as you can. Sprinkle with reserved chopped pecans.
- 10. Return to oven and bake for 15 - 20 minutes at 350. Cool well before trying to cut.
CREAMY PINEAPPLE-PECAN DESSERT SQUARES

- In large bowl, pour boiling water over gelatin; stir about 2 minutes or until gelatin is completely dissolved. Stir in pineapple juice. Refrigerate about 30 minutes or until mixture is syrupy and just beginning to thicken.
- Meanwhile, in 13x9-inch (3-quart) glass baking dish, toss cracker crumbs, 1/4 cup sugar, the coconut, pecans and melted butter until well mixed. Reserve 1/2 cup crumb mixture for topping. Press remaining mixture in bottom of dish.
- In medium bowl, beat cream cheese, sour cream and 1/4 cup sugar with electric mixer on medium speed until smooth; set aside.
- Beat gelatin mixture with electric mixer on low speed until foamy; beat on high speed until light and fluffy (mixture will look like beaten egg whites). Beat in cream cheese mixture just until mixed. Gently stir in pineapple (with juice). Pour into crust-lined dish; smooth top. Sprinkle reserved 1/2 cup crumb mixture over top. Refrigerate about 4 hours or until set. For 18 servings, cut into 6 rows by 3 rows.

- Make the shortbread crust in a food processor: Place flour, sugar, salt, and butter in a food processor and pulse until it starts to clump. Transfer to the prepared baking pan and press with your fingers into the bottom of the pan. Then place a piece of paper on top of the crust and even with a flat-bottomed cup. Bake for 15 minutes until crust is lightly browned.
- If you don't have a food processor, then make the shortbread crust with a pastry cutter or two forks instead: In this case mix together flour, salt, and sugar in a large mixing bowl. Then add butter and cut it into the mixture until it starts to clump.
