- In a large pan, melt butter on med-high heat.
- Saute onion, celery, garlic and apple.
- Add sage, pinch of nutmeg and the bread cubes.
- Reduce heat to medium.
- Add stock and fresh herbs.
- Season and taste.
- Remove from heat; place in an oven-proof roasting pan.
- Bake in a 350 degree oven for 30 minutes.
SAGE, SAUSAGE AND APPLE DRESSING

- Preheat the oven to 325 degrees F.
- Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
- Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
- Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.

"THIS IS one of my mom's original recipes. Though it is very simple to make this dressing, the sweet-sour combination plus the tang of the onion seems to convince people there is some secret ingredient. All my daughters now make this salad as standard fare in their homes."

- Place lettuce in a large bowl. In a small bowl, stir together sugar, vinegar and cream or sour cream until sugar dissolves and dressing is smooth. Stir in green onion. Just before serving, pour over lettuce; toss lightly.

- Melt butter in a skillet, medium high heat.
- Add apples and onions, cook until glossy 3-4 minutes.
- Add sugar& salt.
- Reduce heat to very low cover& cook until almost tender, 30 min, stir frequently.
- Stir in the Sherry.
- Continue cooking until the mixture is very soft.
- Transfer to food processor and mix doing on/off.
- Do not over process.

APPLE, SAGE, AND ONION SOUP WITH CHEDDAR-BACON CROUTONS
This recipe is from the cookbook "Everyday Dining with Wine" by Andrea Immer. An all-American version of the traditional French onion soup, but with Granny Smith apples providing some tart flavor, and Cheddar cheese taking the place of traditional Gruyère. Enjoy!

Steps:
- Heat the butter in a large stockpot or Dutch oven over medium-high heat.
- Add the onions, apples, and 1/2 teaspoon salt and stir thoroughly to coat the onions and apples in the butter.
- Cook, stirring frequently, until the onions and apples are deeply caramelized, and the bottom of the pot is coated with a dark brown crust, about 30 minutes.
- Stir in the chicken broth, beef broth, wine, and bay leaf.
- Bring to a boil and scrape the bottom of the pot with a wooden spoon to loosen the brown crust.
- Simmer for 20 minutes to blend flavors.
- Discard the bay leaf and season with additional salt and freshly ground black pepper.
- Adjust the oven rack to the upper-middle position and heat the broiler.
- Combine the cheese and bacon in a bowl and stir to distribute evenly.
- Place oven-proof soup crocks on a rimmed baking sheet.
- Stir the chopped sage into the simmering broth.
- Fill each crock almost to the top with soup.
- Top each crock with 2 baguette slices and sprinkle with some of the cheese-bacon mixture.
- Place the baking sheet in the oven and broil until the cheese is bubbling and well browned, 2 to 4 minutes.
- Watch the soup carefully, because once the cheese is well browned it will quickly burn.
- Serve immediately.

- Preheat oven to 300°F with racks in upper and lower thirds. Spread bread on 2 rimmed baking sheets and bake until dry and crisp (but hasn't taken on any color), 18 to 20 minutes, rotating baking sheets from top to bottom halfway through. Let cool for 30 minutes. (Cooled, toasted bread cubes can be stored in an airtight container at room temperature for up to 2 days.)
- While bread cools, increase oven to 350°F. Grease a 13-by-9-inch baking dish with 1 tablespoon butter. Heat oil and 2 tablespoons butter in a large skillet over medium-high until butter melts. Add sage; cook, stirring often, until crisp, about 1 minute. Using a slotted spoon, transfer sage to a plate.
- Add onions, celery, pepper, and 1½ teaspoons salt to same skillet; cook, stirring often, until mixture softens and just begins to turn golden, 6 to 8 minutes. Transfer to a large bowl; add bread, grated apple, and half of the crisped sage.
- Whisk eggs in a medium bowl until lightly beaten; add broth, vinegar, and remaining 1 teaspoon salt and whisk to combine. Pour broth mixture over bread mixture; stir gently to combine. Let mixture stand, stirring occasionally, until liquid is absorbed, 5 to 10 minutes.
