APPLE, CARROT, AND GINGER MUFFINS

- Preheat the oven to 350 degrees F (175 degrees C). Spray 16 muffin cups with cooking spray or line with paper liners.
- Stir together flour, oats, baking powder, baking soda, cinnamon, ground ginger, salt, and nutmeg in a large bowl. Whisk together maple syrup, Greek yogurt, applesauce, eggs, and vanilla extract in a second bowl until thoroughly combined. Add maple syrup mixture to flour mixture and stir until just combined. Fold in carrots, apple, crystallized ginger, raisins, and walnuts.
- Divide batter evenly between 16 prepared muffin cups, filling each to the top.
- Bake in the preheated oven until tops spring back when lightly pressed and a toothpick inserted into the center of one of the muffins comes out clean, 18 to 22 minutes. Cool in the tins for 5 minutes. Transfer to a wire rack to cool completely.

- In a small bowl, combine the first eight ingredients. In another bowl, whisk the egg white, buttermilk and oil. Stir into dry ingredients just until moistened. Fold in apple. , Coat muffin cups with cooking spray; fill three-fourths full with batter. Bake at 375° for 16-18 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm.

Steps:
- Heat oven to 425 degrees.
- Line muffin cups of standard muffin pan with paper liners or spray with non-stick cooking spray.
- In a measuring cup combine milk and vinegar; set aside.
- In a large bowl combine 7 dry ingredients. Make a well in the center; set aside.
- In a medium bowl, combine milk and next 5 ingredients.
- Pour wet mixture into the well of the dry ingredients and mix until just combined and slightly lumpy.
- Pour into muffin pan.
- Make the streusel topping by combining flour and cinnamon. Stir in oil until mixture represents course crumbs. Stir in apple. Sprinkle over batter.
- Bake 15-18 minutes, or until tops are golden and toothpick comes out clean.
- Cool for 5 minutes in pan on rack. Remove from pan and cool completely.

This is my own adaptation of a recipe I found on the back of the oat bran box. These are also good with cinnamon sugar sprinkled on top before baking, and are especially yummy warmed up in the microwave about 10-15 seconds , with a little margarine!

- Preheat oven to 400.
- Line 12 muffin cups with paper liners, or grease muffin tins.
- In a large bowl, mix together dry ingredients, including nuts & raisins if using.
- In another bowl, mix together vanilla, oil, eggs & applesauce until well blended.
- Make a well in the center of the dry ingredients; add wet ingredients & mix until well blended.
- Let mixture sit for 10 minutes (for oat bran to absorb some of the liquid).
- Spoon mixture into paper-lined muffin cups and bake 15-20 minutes or until golden brown & toothpick comes out clean.
- Let muffins cool in pan for 5 minutes; then remove to a wire rack to cool completely.
APPLE OAT-BRAN MUFFINS
These muffins are delicious and loaded with fiber and heart-friendly oat bran. They may truly be the breakfast of champions. You may use Granny Smith or Gravenstein apples, but feel free to try your favorite green apple. You can freeze what you don't consume right away for a later date.

- Heat oven to 325°F Lightly oil muffin pan. Peel and core apples; chop them coarsely. Set aside.
- In a mixing bowl, stir together pastry flour, white flour, oat bran, baking soda, cinnamon, and nutmeg.
- Add thawed apple juice concentrate, chopped apples, and enough water to make a light batter.
