Steps:

  • Choose a chicken marinade flavor and place all ingredients (minus the chicken breast) into a medium bowl and whisk to combine.
  • Place chicken breast into a glass container or gallon-size bag. Then, pour the marinade on top of the chicken, making sure it is covered.
  • Let chicken marinate in the refrigerator for at least 30 minutes or for up to 6 hours.

1 cup apple juice
1/2 cup canola oil
1/4 cup packed brown sugar
1/4 cup reduced-sodium soy sauce
3 tablespoons lemon juice
2 tablespoons minced fresh parsley
3 garlic cloves, minced
6 boneless skinless chicken breast halves (6 ounces each)
4 large carrots
2 medium zucchini
2 medium yellow summer squash

Steps:

  • In a small bowl, whisk the first seven ingredients until blended. Place 1 cup marinade and chicken in a large resealable plastic bag; seal bag and turn to coat. Refrigerate 6 hours or overnight. Cover and refrigerate remaining marinade., Cut carrots, zucchini and squash lengthwise into quarters; cut crosswise into 2-in. pieces. Toss with 1/2 cup reserved marinade., Drain chicken, discarding marinade in bag. Grill chicken, covered, over medium heat or broil 4 in. from heat 6-8 minutes on each side or until a thermometer reads 165°, basting frequently with remaining marinade during the last 5 minutes. Keep warm., Transfer vegetables to a grill wok or basket; place on grill rack. Grill, covered, over medium heat 10-12 minutes or until crisp-tender, stirring frequently. Serve with chicken.

1 3- to 4-pound chicken, cut into 16 pieces
1 to 2 tablespoons corn or canola oil
1 large onion, chopped
1 clove garlic, minced
1/4 cup dry white wine
1 cup apple juice
1 tablespoon fresh ginger, finely chopped
1 tablespoon cornstarch
1 cup plain low-fat or nonfat yogurt
2 well-flavored apples, cored and cut into small chunks
Freshly ground black pepper to taste
8 ounces medium egg noodles, cooked and drained

Steps:

  • Remove as much skin and external fat as possible from chicken. Heat 1 tablespoon oil in nonstick skillet or 2 tablespoons oil in regular skillet large enough to hold chicken pieces in single layer. Brown chicken on both sides in hot oil over medium heat; remove and set aside.
  • Saute onion and garlic in same pan until onion is soft. Add wine, apple juice and ginger to pan and cook over medium-high heat until liquid is reduced to 1 cup.
  • Stir cornstarch into yogurt. Add to pan with apples and chicken and season with pepper. Cook, covered, for about 20 minutes, until chicken is cooked through.
  • Arrange noodles on each of 4 plates. Spoon chicken and sauce over noodles.

This marinade makes chicken extremely moist and flavorful. Great for grilling or baking! The cook time includes the important marinating time. It requires overnight, but the longer the better. I stumbled upon it while doing an internet search and don't know the site I found it on, so if its your recipe feel free to let us know! Its a good one!

1 cup apple juice
1/2 cup apple cider vinegar
1/2 cup vegetable oil
1/4 cup soy sauce
1/2 cup honey
1 tablespoon ginger
3 -4 garlic cloves

Steps:

  • In a 4-6 cup volume bowl whisk together apple juice, apple cider vinegar and vegetable oil.
  • Next whisk in the honey.
  • It is helpful to use the same measuring cup that you just measured the vegetable oil in, to allow the honey to easily slide out.
  • Continue whisking until combined.
  • Whisk 1 tbsp ginger.
  • Mince 3-4 garlic cloves according to size of cloves and taste.
  • Whisk in garlic.
  • Marinade 4-8 chicken breasts, depending on size, in large lidded bowl or disposable zip top baggie.
  • This makes a lot, over 2 1/2 cups, but with these ingredients on hand, its easy to mix up more if you need it.
  • Marinate chicken at least 8 hours in refrigerator.
  • Grill or bake as desired.
