2 cups apple cider
6 tablespoons heavy cream
Pinch kosher salt

Steps:

  • Reduce the apple cider in a saucepan over medium-high heat until it's thick and coats the back of a wooden spoon, 10 to 15 minutes. Stir in the cream and salt and cook until it reaches the desired consistency, an additional 2 to 3 minutes.

I didn't think I liked apple fritters, but turns out I just don't like chunks of almost raw apple, surrounded by a doughnut. Maybe I've just been going to the wrong shops, but I've never enjoyed the texture, and always wanted to try them with cooked apples.

1 tablespoon butter
2 large Granny Smith apples - peeled, cored and cut into 1/4-inch dice
1 tablespoon white sugar
1 ¼ cups all-purpose flour
1 ½ teaspoons baking powder
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground ginger
⅛ teaspoon ground nutmeg
1 large egg
¼ cup white sugar
1 tablespoon melted butter
½ cup sparkling apple cider
2 cups vegetable oil for frying
½ cup confectioners' sugar, or more as needed
1 tablespoon sparkling apple cider, or as needed to make glaze

Steps:

  • Melt butter over medium-high heat and cook until it turns golden brown, 2 to 3 minutes. Add apples and cook over medium-high heat until apples just begin to soften around the edges, 3 to 4 minutes. Sprinkle in 1 tablespoon sugar and continue cooking another 2 minutes. Remove from heat. Drain in a strainer; let cool to room temperature.
  • Whisk flour, baking powder, salt, cinnamon, ginger, and nutmeg together in a mixing bowl until well combined.
  • Whisk egg, 1/4 cup sugar, and melted butter together in a separate mixing bowl. Add cooled apple pieces and sparkling apple cider; add the flour mixture. Stir just until flour is incorporated.
  • Heat oil in a deep-fryer or large saucepan to 350 degrees F (175 degrees C). Spoon about 2 tablespoons batter per fritter, into hot oil, slightly flattening them out. Cook in batches. Fry on one side until small bubbles appear on the surface, about 2 minutes. Carefully flip fritters over and fry the other side until richly browned, about 2 more minutes.
  • Transfer with a slotted spoon to a paper-towel-lined plate to drain grease. Cool slightly before glazing.
  • Whisk powdered sugar and cinnamon in a mixing bowl. Add enough apple cider, 1 teaspoon at a time, to form a smooth glaze that is just runny enough to drizzle over fritters.

My mom made these for us after school in the fall with the apples we'd pick and buy from a fruit farm. Warm, crisp, and sweet, a perfect fall treat.

1 quart vegetable oil for deep-frying
1 ½ cups all-purpose flour
1 tablespoon white sugar
2 teaspoons baking powder
½ teaspoon salt
⅔ cup milk
2 eggs, beaten
1 tablespoon vegetable oil
3 cups apples - peeled, cored and chopped
1 cup cinnamon sugar

Steps:

  • Heat the oil in a deep-fryer or electric skillet to 375 degrees F (190 degrees C).
  • In a large bowl, stir together the flour, sugar, baking powder and salt. Pour in the milk, eggs and oil and stir until well blended. Mix in apples until they are evenly distributed.
  • Drop spoonfuls of the batter into the hot oil and fry until golden on both sides, about 5 minutes depending on the size. Fry in smaller batches so they are not crowded. Remove from the hot oil using a slotted spoon and drain briefly on paper towels. Toss with cinnamon sugar while still warm.

1 cup Stayman Winesap apples, peeled and cubed
2 cups apple cider
1 cup all-purpose flour
1/2 teaspoon salt
2 teaspoons baking powder
1 tablespoon plus 1 teaspoon sugar
1 large egg, beaten
2/3 cup milk, room temperature
3 tablespoons unsalted butter, melted and cooled
6 cups lard or vegetable oil
Powdered sugar and cinnamon
2/3 cup sugar
1/4 teaspoon freshly grated nutmeg
2 teaspoons cornstarch
1/4 teaspoon salt
3/4 cup hard cider
1/4 cup water
1 bay leaf
1 (2-inch) strip lemon peel
1/4 cup bourbon

Steps:

  • Macerate apples for 1/2 hour with apple cider.
  • Sift together flour, salt, baking powder and sugar. Make a well in the center of dry ingredients and beat in egg, milk and butter. Mix until homogeneous. Drain apples and gently fold into the batter. Set aside for up to 1 hour.
  • In a large saucepan, combine sugar, nutmeg, cornstarch and salt. Add remaining ingredients for cider sauce, except bourbon, and bring to a simmer. Simmer 10 minutes. Stir in bourbon. Remove from heat and set aside.
  • Heat lard or oil in a heavy 4 quart saucepan to 375 degrees. Drop fritter mixture into hot fat by the teaspoonful. Fry until golden and drain well. Dust with powdered sugar and cinnamon. Serve with cider sauce on the side.

  • Pour the apple cider into a medium saucepan, place the pan on medium heat, and bring it to a low boil. Continue to cook the apple cider until it reduces down to 3/4 cup, which might take 45-55 minutes. This step can be done ahead of time and the apple cider concentrate can be stored in the refrigerator until you're ready to use it.
  • While you wait for the dough to rise, prepare the apple filling. Peel, core, and chop the apples into small pieces about 1/2-3/4" wide. Place a large saucepan over medium heat, and melt the butter. Add the sugar, and stir it in until the sugar melts. (The mixture will be sandy and grainy.) Add the apples, cinnamon, vanilla, salt, and apple cider vinegar.
  • After an hour, dust your work surface with flour, punch down the dough, and turn it out onto your work surface. Gently pat it or roll it into a thin layer about 1/2-inch thick. Spread half of the apples over half of the dough. Fold the dough over on itself, and press down gently to seal the apples into the middle of the dough.
