Time 1h15m

Yield 12 servings

Number Of Ingredients 17

1 stick plus 2 teaspoons unsalted butter
1 1/2 cups packed light brown sugar
2 large eggs
2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1 cup sour cream
1 teaspoon pure vanilla extract
2 cups peeled, cored and chopped apples
1/2 cup packed light brown sugar
1/2 cup all purpose flour
1/2 teaspoon ground cinnamon
4 tablespoons unsalted butter, softened
1/2 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 tablespoons water

Steps:

  • Preheat the oven to 350 degrees F. Lightly grease a 13 by 9-inch glass baking dish with 2 teaspoons of the butter.

Number Of Ingredients 16

APPLE CAKE:
1 1/2 cups all purpose flour
1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
2 eggs
1/2 cup canola oil
1 teaspoon vanilla
1 1/2 cups finely chopped apples
1/2 cup pecans or walnuts, chopped (optional)
BROWN SUGAR GLAZE:
1/2 cup packed light brown sugar
3 Tablespoons butter

1 Tablespoon heavy cream

Steps:

  • CAKE: Heat the oven to 350° F. Grease an 8-inch pan and set aside. In a medium bowl, combine the flour, sugar, baking soda, salt and cinnamon.Stir with a whisk to mix everything together. In a large bowl, mix the eggs with a hand mixer til light in color and foamy. Add the oil and vanilla and beat well. Stir in the flour mixture with a spoon and continue stirring the batter til the flour disappears. Add the apples and nuts (if using) and stir to mix them into the batter. Scrape batter into prepared pan and bake for 40-45 minutes, or until a toothpick inserted in the center comes out clean. Place the hot cake on a wire cake. While it's still hot, prepare the glaze. GLAZE: Combine all the ingredients into a saucepan. Cook over medium heat, stirring often, until the mixture comes to a gentle boil. Cook for 3-5 minutes. APPLE DAPPLE CAKE W/ BROWN SUGAR GLAZE RECIPE - (4.5/5)

Apple Dapple Cake w/ Brown Sugar Glaze Recipe - (4.5/5) image

Provided by msippigrl

Number Of Ingredients 15

Cake batter:
1 1/2 cups sugar (up to 2 cups if using tart apples)
3 extra-large eggs
1 1/2 cups vegetable or canola oil (I used canola)
1 teaspoon vanilla extract
3 cups self-rising flour
1/4 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
3 cups peeled and chopped apples (about 3 medium)(I used Honey Crisp variety)
1/2 cup finely chopped pecans
8 pecan halves for pan, optional
Glaze:
1 stick (1/2 cup) butter
1 cup packed brown sugar (I used dark)
1/4 cup whole milk or half-and-half

Steps:

  • Preheat oven to 350 degrees F. Generously butter and flour a 12-cup Bundt cake pan. Arrange pecan halves (upside down) in the bottom of the pan, if desired. Set pan aside. In a large mixing bowl and using a mixer, beat together the sugar, eggs, and oil until creamy, 3-4 minutes. Beat in the vanilla. Sift the flour over the egg mixture in the bowl; add cinnamon and nutmeg and combine well. (I used a rubber spatula first (to reduce the flour dust) then used the mixer to finish combining.) Peel and chop the apples; then gently fold apples and pecans into the batter with a spatula. CAREFULLY spoon (so the pecans don't shift) a heaping tablespoon of the batter over each pecan half in the pan. Pour the remaining batter into the pan. Bake in the center of the oven for 50-60 minutes, or until center tests done with a toothpick. Cool in pan on a wire rack for 10 minutes, then loosen the cake from the pan and turn out onto a serving plate, pecan side up. In the meantime, make the Glaze: Melt the butter in a medium non-stick saucepan over medium heat; add the brown sugar and milk and bring to a boil, at first bubble cook for exactly 2 1/2 minutes. Remove from heat and whisk for 2-3 minutes to cool slightly. If you haven't done so already, turn the cake out onto a serving plate. Slowly drizzle the glaze over the cake. Use any leftover glaze to drizzle over individual slices at serving.

Cake
Nonstick vegetable oil spray
3 cups all purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
3/4 teaspoon salt
1/2 teaspoon ground nutmeg
1/4 teaspoon ground cloves
1/4 teaspoon ground allspice
1 3/4 pounds Granny Smith apples, peeled, cored, coarsely grated
1 1/2 cups (3 sticks) unsalted butter, room temperature
1 1/2 cups sugar
1/2 cup (packed) golden brown sugar
1 teaspoon grated lemon peel
3 large eggs
1 teaspoon vanilla extract
1 teaspoon fresh lemon juice
Glaze
1/2 cup (packed) golden brown sugar
1/4 cup (1/2 stick) unsalted butter
1/4 cup whipping cream
1/2 teaspoon vanilla extract
1/2 teaspoon fresh lemon juice
1/4 teaspoon salt

Steps:

  • For cake:
  • Position rack in center of oven and preheat to 325F. Spray 12-cup Bundt pan with nonstick spray. Sift flour and next 6 ingredients into medium bowl. Drain grated apples in strainer. Using hands or kitchen towel, squeeze out excess liquid from apples. Measure 2 cups grated apples.
  • Using electric mixer, beat butter, both sugars, and lemon peel in large bowl until fluffy. Beat in eggs, 1 at a time. Mix in vanilla and lemon juice. Beat in flour mixture. Mix in grated apples. Transfer batter to prepared pan. Bake cake until tester inserted near center comes out clean, about 1 hour. Cool in pan on rack 20 minutes.
  • Meanwhile, prepare glaze:
  • Stir all ingredients in small nonstick skillet over medium-high heat until sugar dissolves and mixture comes to boil. Reduce heat to medium; whisk until glaze is smooth, about 1 minute. Remove from heat. Invert cake onto rack set over baking sheet. Using small skewer, pierce holes all over top of warm cake. Pour glaze over top, allowing it to be absorbed before adding more. Cool cake 30 minutes. Serve warm or at room temperature.

  • As soon as the mixture comes together and becomes pretty uniformly crumbly, stop mixing; you don't want it to turn into a cohesive mass., Add the apples, boiled cider, and nuts, and mix until the apples release some of their juice and the stiff mixture becomes a thick, creamy batter, somewhere between cookie dough and brownie batter in consistency.
  • Don't worry if the mixture doesn't immediately loosen up; this will take about 3 minutes at low speed in a stand mixer. , Spread the batter in the prepared pan(s), smoothing it with your wet fingers., Bake the cake for 45 minutes for 9" x 13" pan or for 38 minutes for two 8" round pans.
  • A toothpick or paring knife inserted into the center should come out clean, or with just a few wet crumbs clinging to it.
