APPLE CRISP CAKE
This warm and spicy cake is a comforting twist on a favorite fall dessert. Dotted with apples and topped with the perfect crispy streusel, it's the must-try cake of the season!

Steps:
- Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
- In medium bowl, mix oats, flour, brown sugar and 1 teaspoon cinnamon. Cut in cold butter, using fork or pastry blender, until mixture is crumbly. Stir in nuts; set aside.
- In 10-inch nonstick skillet, cook 1 tablespoon butter and the apples over medium heat, stirring frequently, about 5 minutes or until apples are tender. Set aside.
- In large bowl, beat Cake ingredients with electric mixer on medium speed 2 minutes, scraping bowl occasionally. Pour into pan; top evenly with cooked apples. Sprinkle streusel evenly over apples. Bake 44 to 48 minutes or until toothpick inserted in center comes out clean. Remove from oven to cooling rack. Cool completely, about 1 hour. Cut into 6 rows by 4 rows.
- When ready to serve, in chilled medium bowl, beat whipping cream with electric mixer on medium-high speed until slightly thickened. Reduce speed; beat in powdered sugar, 1/2 teaspoon cinnamon and the vanilla. Increase speed; beat mixture until stiff peaks from. Top cake with whipped cream.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x12-inch baking dish generously.
- Whisk flour, sea salt, baking powder, and baking soda together in a bowl. Set aside.
- Combine walnuts, brown sugar, white sugar, salt, cinnamon, and melted butter in a bowl. Mix until walnuts and sugar are thoroughly coated with butter.
- Cream butter and sugar together in another bowl with a spatula until well blended. Add 1 egg and whisk until mixture is smooth, 2 to 3 minutes. Whisk in second egg until thoroughly incorporated. Add vanilla extract and yogurt; whisk together. Add flour mixture to wet ingredients; whisk just until flour disappears. Do not overmix.
- Remove cores from apples. Cut across into 1/8- to 1/4-inch slices. Stack up a few slices, make 1 cut down the center, and dice across into cubes. Add to cake batter, folding in with a spatula until just combined.
- Spread 1/2 of the batter evenly into the bottom of the prepared baking dish. Scatter 1/2 of the crumble mixture evenly over the top. Top with the rest of the batter in dollops. Spread carefully to evenly distribute, trying not to disturb the crumbs. Top with the rest of the crumb mixture. Press crumbs into the batter very gently.
- Bake in the center of the preheated oven until a toothpick or bamboo skewer inserted into the center comes out clean, about 40 minutes. Let cool to room temperature, about 30 minutes, before slicing and serving.

Delicious moist Apple Cake with a lovely crunchy topping

- Preheat Oven to 160C Bake (325F)
- Prepare a medium sized cake tin or dish (23cm or 9") with butter/spray on the base and sides and line with baking paper
- Prepare milk and vinegar if not using buttermilk, place 1 tablespoon white vinegar into a measuring cup and fill the cup to the top with milk. Set aside
- In a large bowl combine the brown sugar and oil and blend to combine (I just used a wooden spoon)
- To this add the egg and mix well,
- Stir in the buttermilk and vanilla essence and mix well
- Add the baking soda, cinnamon and flour and gently combine
- Peel and dice the apples into approx 1cm cubes and add to the batter and fold through
- Spoon into the prepared tin and smooth the top
- In a small bowl add the ingredients for the topping and rub the butter through with your fingers until all incorporated and generously sprinkle over the top of the cake batter
- Bake in the preheated oven for 55 minutes or until a knife or skewer comes out clean with no damp batter remaining.
- Delicious served warm or cold
- Enjoy!

- In a large bowl, cream the butter, sugar and vanilla. Add eggs, 1 at a time, beating well after each addition. Combine the flour, cinnamon, nutmeg, salt and baking soda; gradually add to creamed mixture and mix well (batter will be stiff).
