EASY CLASSIC MEATLOAF



Easy Classic Meatloaf image

This easy meatloaf recipe, made with 2 pounds of ground beef and a tasty topping, will become a family favorite. Tips and variations are provided.

For the Optional Glaze/Topping:
4 tablespoons ketchup
4 tablespoons maple syrup (or honey)
2 tablespoons Dijon (or similar mustard)
1 teaspoon Worcestershire sauce
For the Meatloaf:
2 pounds ground beef
2 large eggs (lightly beaten)
1/2 cup milk
1 cup fine dry breadcrumbs (plain)
2 tablespoons dried minced onion (or 1/2 cup finely minced fresh onion)
1 1/2 teaspoons burger seasoning (or 1 1/4 teaspoons salt and 1/4 teaspoon ground black pepper)
1/2 cup ketchup (plus more for topping, if desired)

Steps:

  • Gather the ingredients.
  • Heat oven to 350 F. Spray a 9 x 5 x 3-inch loaf pan with nonstick cooking spray and set aside.
  • If using the optional topping, in a small bowl, combine the ketchup, honey or maple syrup, mustard, and Worcestershire sauce until well mixed. Cover the bowl and refrigerate.
  • In a large bowl, combine the ground beef, eggs, milk, breadcrumbs, onion, burger seasoning, and 1/2 cup of ketchup.
  • Mix until well blended and pack into the prepared loaf pan. Place on a baking sheet and bake the meatloaf for 1 hour and 10 minutes.
  • Carefully drain off any excess fat.
  • Then top the loaf with the optional topping mixture or about 4 tablespoons of ketchup. Bake for 10 to 15 minutes longer.
  • Remove from the oven and let rest for at least 10 minutes, tented with aluminum foil.
  • Slice, serve, and enjoy!

1 large egg
1/4 cup 2% milk
1/3 cup crushed saltines
3 tablespoons chopped onion
1/4 teaspoon salt
1/8 teaspoon rubbed sage
Dash pepper
1/2 pound lean ground beef (90% lean)
1/4 cup ketchup
2 tablespoons brown sugar
1/4 teaspoon Worcestershire sauce

Steps:

  • Preheat oven to 350°. In a large bowl, beat egg. Add the milk, cracker crumbs, onion, salt, sage and pepper. Crumble beef over mixture and mix well. Shape into 2 loaves; place in a shallow baking dish coated with cooking spray. , Combine the ketchup, brown sugar and Worcestershire sauce; spoon over meat loaves. Bake until meat is no longer pink and a thermometer reads 160°, 40-45 minutes.

2 pounds lean ground beef
20 saltine crackers, crumbled
1 large egg, lightly beaten
1/2 cup ketchup
1 tablespoon yellow mustard
1 teaspoon salt
1/2 teaspoon pepper
1/2 yellow onion, finely chopped
Slices of white bread, lettuce and tomato, for making sandwiches, optional

Steps:

  • Preheat the oven to 350 degrees F.
  • In a stand mixer, mix the beef, cracker crumbs, egg, ketchup, mustard, salt, pepper, and onion until just blended. Shape the mixture into two loaves and place side by side crosswise in a 9-by-13-by-2-inch pan. Bake the loaves for 1 hour, or until they are browned. Transfer to a platter immediately and allow the loaves to cool slightly and firm up before slicing.
  • For sandwich: cut 2 thick slices of cooled meatloaf and place on white bread with lettuce and tomato. If you've never had a cold meatloaf sandwich the next day, you don't know what you're missing

1 egg
1 onion, chopped
1 cup milk
1 cup dried bread crumbs

2 tablespoons brown sugar
2 tablespoons prepared mustard
⅓ cup ketchup

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.

Good meatloaf is about as comforting as comfort food gets. Thankfully, meatloaf doesn't have to be complex to be good. It just needs to be tender (from breadcrumbs soaked in milk and gentle handling) and flavorful (from onion, garlic, and ketchup).

3 slices white sandwich bread
1/3 cup whole milk
1 1/2 pounds ground beef chuck
1/2 pound ground pork
1/2 medium onion, grated
2 garlic cloves, minced
1 large egg
1/2 cup ketchup
Coarse salt and ground pepper

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with aluminum foil or parchment paper. Place bread in food processor; pulse until fine crumbs form. Transfer to a small bowl; stir in milk. Set aside, about 10 minutes, stirring occasionally.
  • Meanwhile, in a large bowl, combine beef, pork, onion, garlic, egg, 1/4 cup ketchup, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper. Add bread-milk mixture, and mix very gently with a fork (do not overmix).
  • Place meat mixture on prepared baking sheet, and form into a loaf about 9 inches long and 4 to 5 inches wide.
  • Bake, brushing twice with remaining 1/4 cup ketchup during baking, until an instant-read thermometer registers 160 degrees, 45 to 55 minutes. Let meatloaf rest 10 minutes before slicing and serving.
