1 large apple, cored and sliced

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Melt butter in an oven-safe skillet over medium heat; cook and stir apple slices, about 1/4 cup sugar, and cinnamon in butter until apples are tender, about 5 minutes.
  • Beat eggs, milk, flour, remaining 1/4 cup sugar, baking powder, vanilla extract, and salt in a large bowl until batter is smooth; pour batter evenly over apples.
  • Bake in the preheated oven until golden brown, about 10 minutes. Run a spatula around the edges of the pancake to loosen. Invert skillet over a large plate to serve.

¾ cup milk
1 ½ tablespoons vinegar
1 cup flour
3 tablespoons sugar
1 teaspoon cinnamon ((if you really love cinnamon you can add another ½ teaspoon))
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
1 egg
2 tablespoons oil
2 tablespoons butter
2 apples (peeled, cored, and diced)
2 tablespoons brown sugar
½ teaspoon cinnamon
⅓ cup maple syrup

Steps:

  • Preheat a skillet to medium-high heat (275 degrees).
  • Whisk together the milk and vinegar and allow to rest for 5 minutes.
  • While milk is curdling, whisk together flour, sugar, baking powder, baking soda, and salt in a large bowl.
  • Whisk egg and oil into milk. Add wet ingredients to dry ingredients and stir until combined (don't over-mix, it should still have some lumps).
  • Spray skillet with cooking spray. Use a 1/4 cup measuring cup to pour batter onto skillet. Cook about 2 minutes until bubbles form and the edges start to look "dry". Use a spatula to flip the pancake and cook another 1-2 minutes on the other side. Set pancakes aside and repeat with remaining batter.
  • Add butter, apples, brown sugar, and cinnamon to a medium sauce pan. Stir over medium heat 3-5 minutes until apples are very tender. Stir in syrup. Serve apple topping over warm pancakes.

2 cups all-purpose flour

Steps:

  • For the brown butter crumble topping: Put the butter in a small saucepan and cook over medium heat until amber brown, 3 to 4 minutes.
  • Whisk together the flour, granulated sugar, brown sugar, cinnamon, nutmeg and salt in a medium bowl. Stir in the butter. Refrigerate the mixture for 15 minutes, then squeeze it to make crumbles.
  • For the apple pancake bars: Preheat the oven to 375 degrees F. Line a 9-by-13-inch baking dish with a parchment paper overhang on the long ends and spray with nonstick baking spray.
  • Whisk together the flour, granulated sugar, baking powder, baking soda and salt in a large bowl. Whisk together the buttermilk, butter, vanilla and eggs in a medium bowl until smooth. Add the wet mixture to the dry along with the granola, lemon zest and juice and apples and mix until just combined. Lumps are ok. Transfer the batter to the prepared baking dish and let it rest for 15 minutes.
  • Sprinkle the crumble evenly over the batter and bake until lightly golden brown and the top springs back when touched, 15 to 20 minutes (see Cook's Note). Let cool for 10 minutes, then remove to a baking rack.
  • For the apple syrup: Meanwhile, combine the apple juice, granulated sugar and apples in a shallow skillet, bring to a boil and cook until the mixture is thickened and reduced by half. Add a splash of lemon juice, strain the syrup through a fine strainer and keep warm.
  • Dust the top of the apple pancake with the confectioners' sugar, cut into bars and transfer to a platter. Drizzle the warm apple syrup over the bars or pass it for dipping.

1 tablespoon water
1 teaspoon lemon juice
1 cup white sugar

Steps:

This is a recipe I worked on after having the Washington Apple Crisp pancakes from IHOP. I use a 1/2 cup ladle to pour out the batter and get five pancakes. You can freeze the leftover streusel topping.

4 fuji apples, peeled, cored, and sliced
1/2 cup sugar
1 teaspoon ground cinnamon (I used Chinese Cassia)
1/2 vanilla bean, scraped (I used Tahitian)
1/4 cup fresh lemon juice
4 tablespoons unsalted butter
3/4 cup sugar
3/4 cup flour
1 tablespoon water
1 1/2 tablespoons ground chinese cassia cinnamon
1/4 cup unsalted butter, softened
1 egg
3/4 cup milk
2 tablespoons unsalted butter, melted
1 cup flour
1 tablespoon sugar
3 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon (I used Chinese Cassia)
1 pinch ground nutmeg
1 pinch ground cloves

Steps:

  • For the apples:.
  • Melt butter in sauté pan over medium heat for 6-8 minutes or until light golden brown in color.
  • Meanwhile, in a medium bowl, add together the apples, lemon, vanilla, sugar, and cinnamon. Mix well.
  • When butter is ready, add apple mixture to the pan and cook, covered, for 5-10 minutes or until caramelized in color and softened.
  • Keep warm on a burner on low setting.
  • For the Streusel:.
  • While the apples are cooking, prepare the streusel.
  • Add all ingredients into a bowl.
  • Blend with fork until crumbly.
  • Place 2-4 tablespoons of mixture over top of the apple compote. Simmer, uncovered on stove while cooking pancakes.
  • For the Pancakes:.
  • In a medium bowl, whip egg.
  • Add butter and milk and whip together.
  • Add the dry ingredients.
  • Mix well.
  • Over medium heat, in a nonstick pan that has been buttered, place 1/4 cup batter.
  • Cook until edges and top look dry and slightly bubbly, turn and cook for another few minutes until golden brown.
  • Place pancakes on plate, top with apple compote and streusel topping.

1/2 cup (100 grams) dark brown sugar
1/4 cup (80 grams) maple syrup
2 tablespoons (33 grams) unsalted butter
1 1/4 teaspoons ground cinnamon
Kosher salt
1 medium apple (something firm and medium tart/sweet--Fuji, Honeycrisp, Pink Lady, something like that), peeled, cored and sliced 1/4 inch (about 1 cup)
4 large eggs
2 tablespoons (25 grams) granulated sugar
1/2 cup (120 grams) buttermilk
1/3 cup (42 grams) all-purpose flour
1 teaspoon vanilla
1/8 teaspoon freshly grated nutmeg, optional
Flaky salt, for finishing

Steps:

  • Preheat the oven to 450 degrees F.
  • In an 8-inch nonstick skillet over low heat, combine the brown sugar, maple syrup, butter, 3/4 teaspoon cinnamon and a pinch kosher salt. Melt together and whisk to combine. Turn the heat up to medium and bring the mixture to a boil. Allow to boil vigorously for 2 to 3 minutes. Carefully add the apples and toss around until the apples are fully coated in the caramel. Reduce the heat to low and allow to bubble for 3 to 4 minutes, or until the apples begin to soften and appear translucent. Place the skillet onto a parchment-lined baking sheet (to catch any bubbled-over caramel) and bake for 5 minutes while you prepare the batter.
  • In a large 8-cup liquid measure or large mixing bowl, beat the eggs and granulated sugar until frothy. Add the buttermilk, flour, vanilla, 1/2 teaspoon cinnamon, 1/4 teaspoon kosher salt and the nutmeg if using. Whisk to combine until no longer lumpy.
  • Open the oven and carefully remove the pan. Pour the batter into the skillet over the apples, swirling around the perimeter and ending in the center. (Beginning on the sides and working inward gives the pancake better structure instead of just pouring all of the batter in the middle. This will also ensure that the pancake "souffles" evenly). Place back into the oven to bake for 18 to 20 minutes, or until the sides have risen and the edges are dark. Remove from the oven and allow to settle for a minute or two. Carefully invert on a plate. Sprinkle with flaky salt and serve immediately.

You can't beat a traditional apple filling topped with crispy, buttery crumble - classic comfort food at its best

575g Bramley apple (3 medium apples), peeled, cored and sliced to 1cm thick
2 tbsp golden caster sugar
175g plain flour
110g golden caster sugar
110g cold butter
1 tbsp rolled oats
1 tbsp demerara sugar
double cream , clotted cream or custard, to serve

Steps:

  • Heat the oven to 190C/170 fan/gas 5.
  • Toss 575g peeled, cored and sliced Bramley apples with 2 tbsp golden caster sugar and put in a 23cm round baking dish at least 5cm deep, or a 20cm square dish. Flatten down with your hand to prevent too much crumble falling through.
  • Put 175g plain flour and 110g golden caster sugar in a bowl with a good pinch of salt.
  • Slice in 110g cold butter and rub it in with your fingertips until the mixture looks like moist breadcrumbs. Shake the bowl and any big bits will come to the surface - rub them in. Alternatively, pulse in a processor until sandy (don't over-process).
  • Pour the crumb mix over the apples to form a pile in the centre, then use a fork to even out.
  • Gently press the surface with the back of the fork so the crumble holds together and goes crisp, then lightly drag the fork over the top for a decorative finish.
  • Sprinkle 1 tbsp rolled oats and 1 tbsp demerara sugar over evenly, if you wish.
  • Set on a baking tray and put in the preheated oven for 35-40 minutes, until the top is golden and the apples feel very soft when you insert a small, sharp knife. Leave to cool for 10 minutes before serving.
