If you love apple pie or apple crumble, you'll LOVE this Apple Cinnamon Stovetop Oatmeal! Warm, cozy, and loaded with cooked apples plus all the delicious spices.

1/2 tablespoon unsalted butter
1 medium crisp apple, about 1 1/2 cups diced
3 tablespoons honey (OR 2 tablespoons brown sugar), plus a little more to drizzle over the finished oatmeal
1 teaspoon cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon ground nutmeg
pinch of salt
2 cups water
1 cup old fashioned oats (or gluten free oats!)
1/2 cup chopped walnuts (optional)
1/2 cup milk (optional)

Steps:

  • In a medium saucepan, melt the butter over medium high heat. Add 1 cup of the apples, the honey or brown sugar, and sprinkle in the spices and salt. Cook for 2-3 minutes until the apples are softened.
  • Pour in the water, turn the heat up to high, and bring to a low boil. Add the oats and reduce the heat to medium/medium high. Cook, stirring occasionally for 3-5 more minutes.
  • Add the walnuts (if using), and continue cooking until most of the liquid is absorbed. Divide the oatmeal between two bowls, sprinkle each with the remaining apples, drizzle with a little more honey, and splash 1/4 cup milk into each bowl.

2 cups rolled oats
3 3/4 cups water
3 small sweet apples or 2 cups apple pieces (diced small)
1/2 teaspoon kosher salt
1/2 teaspoon cinnamon
dash of nutmeg
1/4 cup (plus 1-2 tablespoons brown sugar, adjust to taste)
Butter (a teaspoon or so for on top of each serving)
Optional: chopped pecans (just a sprinkling for serving each bowl)

Steps:

  • Combine the oats, water, apples, cinnamon and nutmeg in a medium size saucepan. Bring to a boil over medium high heat, stirring occasionally.
  • As soon as it boils, reduce heat to low and simmer for just a few minutes, until the oats are soft and the apples are tender. Remove from the heat and add brown sugar to taste.
  • The sweeter the apples, the less brown sugar you will need. Scoop into serving bowls and top with butter and pecans if desired. Enjoy!

¼ cup apple juice
1 apple, cored and chopped
⅔ cup rolled oats
1 teaspoon ground cinnamon
1 cup milk

Steps:

  • Combine the water, apple juice, and apples in a saucepan. Bring to a boil over high heat, and stir in the rolled oats and cinnamon. Return to a boil, then reduce heat to low, and simmer until thick, about 3 minutes. Spoon into serving bowls, and pour milk over the servings.

This hearty, delicious recipe is excellent right out of the pot, but I also make this ahead and re-heat it during the week for a quick and filling breakfast.

2 tablespoons butter (preferably unsalted)
1 large apple, diced (Granny Smith works great)
1/4 cup chopped walnuts
1 tablespoon pumpkin pie spice
1/2 tablespoon cinnamon
1/4 cup brown sugar
2 tablespoons water
4 cups water (*)
2 cups organic rolled oats (*)
cinnamon, to taste
sugar

Steps:

  • *Note:Oatmeal ingredients and cooking instructions based off my favorite brand of rolled oats and may vary from your own; I recommend following your own brand's directions to make 4 servings.
  • Over medium heat, melt butter in skillet.
  • Add apples and walnuts and sauté for a couple of minutes, then add pumpkin pie seasoning and cinnamon.
  • Continue to sauté for another minute, stirring continuously.
  • Once apples have softened a bit, add brown sugar and 2 tablespoons water.
  • Continue to sauté for a few more minutes, until apples are"al dente".
  • Remove from heat.
  • Bring 4 cups water to a boil, add oats.
  • Cook for 10-20 minutes over medium heat, depending on your desired thickness.
  • When oatmeal is about 80% of your desired thickness, add apple mixture and mix in well.
  • Add cinnamon and sugar to taste.
  • Remove from heat and let stand until it reaches your desired consistency.
  • Serve with a little bit of your favorite milk.

I made these up this morning when we were looking for a different flavour of scone for breakfast. I forgot to put sugar in the scones, so I sprinkled the top with Demmara Sugar - and I like them better that way! It adds a nice crunch on top. These are not your typical buttery scone - these are more of a hearty, healthy, and hold you till lunch kind of scone! If you don't have cinnamon chips, add a tbsp or two of brown sugar and increase the cinnamon to 1 tsp to compensate.

1/2 cup oatmeal, preferably large flake but quick oats will work
1/2 cup all-purpose flour
1/2 cup whole wheat flour
2 teaspoons baking powder
1/2 teaspoon cinnamon
1 tablespoon oil
1 large apple, chopped
1/4 cup cinnamon baking chips
1/4 cup walnuts, chopped
1 teaspoon vanilla extract
1/2 cup milk
light demerara sugar, for sprinkling on top

Steps:

  • Heat oven to 400.
  • Mix dry ingredients together (oatmeal, flours, baking powder, cinnamon). Stir oil into dry ingredients well. Add apple, cinnamon chips, and walnuts and stir. Add vanilla to milk, and combine with the dry ingredients; stir until the dry ingredients are damp.
  • Drop into four mounds on parhment paper lined or greased baking sheet. Sprinkle with sugar.
  • Bake at 400 for 20 minutes, until lightly browned.

Steps:

  • In a saucepan, combine apple, apple juice, oats, cinnamon and salt.
