1 pound ground beef
1 small onion, minced
2 tablespoons dry mesquite flavored seasoning mix
(2) 28-ounce canned baked beans (such as Bush's Original)
1/4 cup molasses
3/4 cup brown sugar
3/4 cup barbeque sauce
2 teaspoons dry mustard powder
2 pinches cayenne pepper, or to taste

Steps:

  • Preheat your oven to 350 degrees Fahrenheit.
  • Place the ground beef, onion, and mesquite seasoning in a large skillet over medium heat. Keep stirring for 10 minutes, or until the beef has browned and broken up into crumbles.
  • Transfer the mixture into a large baking dish, draining the excess liquid. Mix in the baked beans, molasses, brown sugar, barbeque sauce, dry mustard powder, and cayenne pepper. Mix until the sugar is dissolved.
  • Bake the dish for 20 minutes, or until the beans start to bubble.

My mama says that the bacon, bell pepper, & onions add wonderful, full-bodied flavor to these beans. These are the best tasting baked beans I have ever eaten to date. Mama always used the thick, peppered bacon but I have used regular bacon and it still cooks up very tasty. You won't believe how delicious these beans are....

8 slice peppered bacon (or regular bacon)
1 medium onion (diced)
1/2 medium bell pepper (can use the whole pepper if you love it as i do)
3 large pork and beans (28 ounce size)
3/4 c barbecue sauce
1/2 c brown sugar
1/4 c distilled or apple cider vinegar (i like the apple cider)
2 tsp dry mustard (i choose to use 2 tbsp dijon mustard)

Steps:

  • 1. Adjust oven rack to lower-middle position and heat oven to 325 degrees.
  • 2. Fry bacon in large, deep sauté pan skillet until bacon has partially cooked and released about 1/4 cup drippings. Remove bacon from pan and drain on paper towels.
  • 3. Add onions and peppers to drippings in pan and sauté until tender, about 5 minutes.
  • 4. Add beans and remaining ingredients bring to a simmer. (If skillet is not large enough, add beans and heat to a simmer then transfer to a large bowl and stir in remaining ingredients).
  • 5. Pour the flavored beans into a greased 13x 9-inch (or similar size) ovenproof pan.
  • 6. Top with bacon, then bake until beans are bubbly and sauce is the consistency of pancake syrup, about 2 hours. Let stand to thicken slightly and serve.
  • 7. COOK'S NOTES: Cut the bacon slices in half, and then fry them on medium-low heat. You don't want to brown or crisp the bacon at all; the point is only to render the fat and get the bacon pieces ready to bake up and turn brown in the oven. Remove the bacon pieces once the fat is rendered, and in the name of all that is good and right, do NOT pour out the grease and clean the skillet! If you do, you'll regret it for the rest of your days. :-)

BBQ baked beans are a summer staple. This shortcut version relies on ordinary canned baked beans, which we dress up with fresh peppers, onions, cider vinegar and barbecue sauce. The sweet and tangy side dish is perfect for a summer barbecue, picnic, potluck or weeknight dinner. The beans taste even better the next day, so they can be prepared ahead of time and reheated or served at room temperature.

8 slices bacon (about 8 ounces), cut into 1/2-inch pieces
1 medium yellow onion, diced
1 green bell pepper, seeded and diced
Two 28-ounce cans baked beans
1 cup barbecue sauce
1/4 cup molasses
1/4 cup apple cider vinegar
1 tablespoon Worcestershire sauce
1/3 cup packed dark brown sugar
2 teaspoons yellow mustard powder
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat an oven-proof heavy-bottom pot or Dutch oven over medium heat. Add the bacon and cook, stirring often, until the fat has started to render and the bacon is beginning to crisp, about 5 minutes. Add the onions and bell pepper and continue to cook, stirring often, until the vegetables are slightly softened, about 3 minutes.
  • Stir in the canned beans, barbecue sauce, molasses, vinegar, Worcestershire, brown sugar, mustard powder, cayenne, 1 teaspoon salt and several grinds of black pepper. Bring to a simmer and let cook over low heat, stirring occasionally, until the sauce has thickened slightly, about 5 minutes.
  • Transfer the pot to the oven and bake (uncovered) until the sauce thickens and the beans on top begin to brown, about 40 minutes. Remove from the oven and let cool for at least 15 minutes before serving warm or at room temperature.

Pat: Every Fourth of July, Mama Neely made her famous baked beans: she'd brown ground beef and then doctor that beef with molasses, brown sugar, and plenty of spices. Let me tell you, those beans were good. And so are these. We've found that using smoked sausage in place of the ground beef (or pork shoulder, as in our restaurant recipe) adds a smoky depth to the dish. Once you make these beans, there is no going back. If you want to put your own spin on it, you can use kidney beans instead of pork and beans, but I say my mama's way is best.

2 tablespoons canola oil
1 large onion, finely chopped
3 cloves garlic, finely chopped
1/2 pound smoked sausage, sliced
Three 16-ounce cans pork and beans
1/2 cup ketchup
1/2 cup light molasses
1/4 cup light-brown sugar
2 tablespoons apple-cider vinegar
2 tablespoons prepared mustard
Dash of hot sauce, preferably Tabasco

Steps:

  • Preheat the oven to 350 degrees F. Heat the oil in a Dutch oven set over medium- high heat. Once it's hot, toss in the onion and garlic, and saute until the onion is tender, about 3 or 4 minutes. Add the sausage, and continue to cook until the meat has browned, about 4 minutes more. Stir in the pork and beans, ketchup, molasses, sugar, vinegar, mustard, and hot sauce. Bring the beans up to a simmer, then put in the hot oven for 45 minutes, uncovered, until the mixture is bubbly and thick.

These are the tastiest, most satisfying, the easiest, and the meatiest. They not only make a great side dish, but if the budget's a little tight, these will absolutely work as a main course. Sprinkle the top with sliced green onion if you like.

1 pound dried red beans
3 quarts water
1 bay leaf
1 ½ pounds boneless pork shoulder, cut into 2-inch cubes
1 yellow onion, chopped
1 cup barbecue sauce
½ cup ketchup
⅓ cup apple cider vinegar
¼ cup packed light brown sugar
3 tablespoons molasses
2 tablespoons yellow mustard
1 teaspoon Worcestershire sauce
1 tablespoon smoked paprika
⅛ teaspoon cayenne pepper
1 teaspoon freshly ground black pepper
1 tablespoon kosher salt
1 teaspoon garlic powder
2 ½ cups reserved bean cooking liquid
6 slices thick-cut bacon

Steps:

  • Add dry beans to a bowl, cover with water, and let soak for 8 hours, or overnight.
  • Drain beans and transfer to a large pot filled with 3 quarts of cold, fresh water. Add bay leaf, pork shoulder, and onion. Bring to a simmer over high heat. Reduce heat to medium-low and stir. Skim off foam if desired. Let simmer until beans are just tender, about 1 hour.
  • While beans simmer, combine barbecue sauce, ketchup, vinegar, brown sugar, molasses, mustard, Worcestershire, smoked paprika, cayenne, black pepper, kosher salt, and garlic powder in a bowl with a whisk. Set aside until needed.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Transfer tender bean mixture to a deep, 15x10-inch baking dish using a spider strainer. Pour in barbecue sauce mixture and 2 ½ cups of the bean cooking liquid. Place bacon slices on top.
  • Bake uncovered in the center of the preheated oven until the liquids have reduced into a thick sauce, 2 to 3 hours.

2 teaspoons kosher salt
1 2/3 cups sugar
1 teaspoon chili powder
1 tablespoon paprika
1 teaspoon freshly ground black pepper
3/4 teaspoon garlic salt
1 teaspoon onion powder
1 1/2 cups light brown sugar
2 3/4 cups ketchup
1 stick unsalted butter, melted, 4 oz
1 1/4 cups Water
1 1/2 cups apple cider vinegar
1 teaspoon Worcestershire sauce
1/2 large red onion
1/2 green bell pepper
1 tablespoon vegetable oil
2/3 pound ground beef, preferably 80% lean
48 ounces canned, unseasoned "pork and beans," drained, pinto beans with pork
2 cups Sweet BBQ Pit Sauce, from Step 1

Steps:

  • Sweet BBQ Pit Sauce: In a saucepan, combine the dry ingredients and mix well to break up any lumps. Add ketchup, melted butter, water, vinegar, and Worcestershire sauce. Bring sauce to a simmer over low heat. Continue to simmer, stirring the entire time until the sauce has reduced and thickened, about 15 minutes. (Keeping the heat low helps prevent the butter from separating and the sugar from burning.)
  • Sauce is done when it thinly coats a spoon and has reduced by about ⅓. Cool to room temperature, stirring occasionally so it doesn't stick to the bottom. Store in a covered container in the refrigerator. (It will keep for months, thanks to the vinegar.) Makes about 3 cups of Sweet BBQ Pit Sauce.
  • Prepare the vegetables and beef: Trim onion and pepper, then cut into chunks. Dice using a vegetable chopper, or use a knife to small dice (¼-inch pieces). Heat oil in a medium-sized skillet over medium heat. Sauté onion and pepper until softened, 6-8 minutes. Add ground beef, stir to break up meat, and continue cooking until meat is no longer pink, 6-8 minutes. Drain fat from skillet and set ground beef mixture aside.
  • Preheat oven to 375 F. In a large bowl, add ground beef mixture and Sweet BBQ Pit Sauce to the drained beans; stir to combine. Place in a 13x9-inch baking dish and cover with foil. Bake until brown and bubbly, 20-30 minutes. (Alternatively, a thermometer placed into the center of the beans should register 160 F.)
  • Remove dish from oven and remove foil. Stir and serve. Note: This is a great dish to make ahead of time. Vegetable-beef mixture can be cooked and refrigerated up to two days in advance. On the day of serving, simply mix bean ingredients (Pitmaster Jones calls this a "bean set") and bake as directed. Since you're reheating meat, use a digital thermometer to make sure the beans reach 160-165 F for safe consumption.
