One of my favorite quick, breakfast treats. You can make it gluten-free by using corn tortillas! Top this delicious quesadilla with honey, maple syrup, powdered sugar, or whipped topping. Serve as either breakfast or dessert!

1 Honeycrisp apple, diced
2 tablespoons light corn syrup
1 tablespoon honey
1 tablespoon maple syrup
1 pinch ground cinnamon, or more to taste
1 pinch brown sugar
2 11-inch flour tortillas

Steps:

  • Heat a large skillet over medium-low heat. Cook apple, corn syrup, honey, maple syrup, ground cinnamon, and brown sugar in hot skillet, stirring every few minutes, until apples are slightly softened and caramelized, 8 to 10 minutes. Transfer apple mixture to a bowl.
  • Place 1 tortilla in the same skillet over medium-low heat; spread apple mixture on top of tortilla. Top with remaining tortilla. Cook until the bottom tortilla is golden brown, 1 to 3 minutes. Carefully flip the quesadilla and cook until the other tortilla is golden brown, 1 to 3 minutes more.

1/2 cup low-fat vanilla yogurt
2 tablespoons unsweetened applesauce
1 dash ground cinnamon
1 medium apple, cored and chopped
3/4 cup unsweetened applesauce
1/8 teaspoon ground cinnamon
4 flour tortillas
1 cup cheddar cheese, shredded
nonstick cooking spray

Steps:

  • prepare spiced yougurt dippind sauce by adding 1/2 cup vanilla yogurt, 2 tablespoons applesauce and dash of ground cinnamon. Chill till needed.
  • combine apple, applesauce and cinnamon together and mix well.
  • spoon half of apple mixture onto tortilla, sprinkle with half cheese. top with another tortilla. repeat.
  • spray nonstick skillet with cooking spray, heat over medium heat untill hot. cook quesadillas, one at a time for about 2 minutes on each side or until golden brown. cout each quesadilla into four wedges.

4 flour tortillas (6 inches)
2/3 cup unsweetened applesauce
2/3 cup shredded cheddar cheese
Cinnamon-sugar, optional
1 tablespoon butter, melted

Steps:

  • Place two tortillas on an ungreased baking sheet. Spread each with applesauce; sprinkle with cheese and cinnamon-sugar if desired. Top with remaining tortillas. Brush tops with butter. Sprinkle with cinnamon-sugar. Bake at 400° for 7-8 minutes or until lightly browned. Cut each into eight wedges.

SARASOTA'S SIMPLE YOGURT, BASIL, LEMON DIPPING SAUCE



Sarasota's Simple Yogurt, Basil, Lemon Dipping Sauce image

This is so easy and quick. I made this for lunch today to go with steamed artichokes which I made with Recipe #332641. I was extremely short on time and almost canceled making the artichokes, but found this. What a great way to cook them in just minutes. And they were perfect. Now the sauce is a long time favorite which is just easy. It is wonderful on a vegetable platter, also with fried vegetables as a lighter fresh sauce, grilled asparagus as an appetizer, and of course my "chokes." What a nice light appetizer. There was 4 of us and we ate quite a bit, but I love to make the whole batch and during the week I will add some with steamed vegetables. This is also a nice condiment on soups (my favorite is pea soup), in pita pockets. So don't throw the leftover out.

32 ounces plain yogurt (I like to use greek yogurt, but everyday yogurt is just fine)
3 tablespoons fresh lemon juice
1 tablespoon minced garlic (more or less if you like)
1/2 teaspoon sugar
1/3 cup fresh basil, chopped fine

  • Yogurt -- The best way to do this if you have time, is to put the yogurt in a piece of cheesecloth in a strainer or colander and then in a small bowl over night (wrapped with saran wrap. This allows the sour cream to drain, so the dip isn't wet or runny.
  • Personally, I had no time, but I did buy the greek yogurt which is a bit thicker, mixed everything together and enjoyed. Also, I have used this with just everyday yogurt and did not take the time to let it set over night and it was fine.

3/4 cup unsweetened applesauce (unsweetened)
1/8 teaspoon cinnamon
4 (6 inch) flour tortillas
1/4 cup shredded low-fat cheddar cheese
nonstick cooking spray
1/2 cup nonfat vanilla yogurt or 1/2 cup low-fat yogurt
2 tablespoons unsweetened applesauce
1 dash cinnamon

Steps:

  • Prepare dipping sauce;set aside.
  • Combine apple, applesauce and cinnamon in small bowl, mix well.
  • Spoon half the apple mixture on tortilla; sprinkle with half the cheese.
  • Top with another tortilla.
  • Repeat with remaining tortilla, apple mixture and cheese.
  • Spray large nonstick pan with spray; over medium heat till hot.
  • Cook quesadillas one at a time, about 2 minutes each side till golden brown.
  • Cut each quesadilla into four wedges.
  • Serve with dipping sauce.
