Grated apple is the secret ingredient in these lightly spiced and fluffy pancakes.

Number Of Ingredients 11

1 1/2 cups all-purpose flour
2 teaspoons baking powder
3/4 teaspoon ground cinnamon
1/4 teaspoon fine salt
1 cup milk
1/4 cup packed light brown sugar
1 teaspoon pure vanilla extract
2 large eggs
4 tablespoons unsalted butter, plus more for serving
1 small red-skinned apple, cored
For serving: maple syrup or honey

Steps:

  • Preheat the oven to 250 degrees F.
  • Whisk the flour, baking powder, cinnamon and salt together in a medium bowl.
  • Whisk the milk, sugar, vanilla and eggs together in a large bowl until the sugar dissolves. Melt 2 tablespoons of the butter in a medium nonstick or cast-iron skillet over medium heat. Let cool slightly, then whisk the butter into the egg mixture; reserve the skillet for cooking the pancakes. Whisk the flour mixture into the milk mixture until combined with a few lumps. Grate the apple on the large holes of a box grater and stir into the batter.
  • Melt 1 tablespoon of the remaining butter in the reserved skillet over medium heat. Drop 2 tablespoons of batter per pancake into the hot skillet. Cook until the surface of the batter forms bubbles and the edges are set, about 3 minutes. Flip the pancakes and continue to cook until puffed in the center, about 1 minute more. Transfer to a baking sheet and put in the oven to keep warm while making the rest of the pancakes. Cook the remaining batter, adding the remaining 1 tablespoon of butter as needed.
  • Serve the pancakes with butter and maple syrup or honey.

1 egg
1 tablespoon sugar
1 tablespoon ground cinnamon

2 Granny Smith apples, cored and thinly sliced
1 tablespoon sugar
1 tablespoon butter

Steps:

  • Heat 10- to 12-inch nonstick skillet over medium heat. Grease if necessary. Meanwhile, in large bowl, combine Pancake ingredients, and stir well until most of the lumps are gone.
  • Drop pancake batter onto skillet in 1/4-cup blobs, leaving space for spreading between each. Cook 3 to 4 minutes on each side, turning once, until lightly browned. Repeat to use up batter.
  • Meanwhile, in small bowl, combine apples and sugar, stirring until well combined. In 10-inch nonstick skillet, melt butter; add apple mixture. Stir gently to coat apples with butter. Cover skillet; cook 5 to 7 minutes, stirring once or twice, until apples are softened.
  • To serve, arrange pancakes on plates, and top with apples. Serve with maple syrup, if desired.

Place butter in 13x9-inch glass baking dish. Place dish in oven until butter melts, about 5 minutes. Remove dish from oven. Place apple slices in overlapping rows atop melted butter in baking dish. Return to oven and bake until apples begin to soften slightly and butter is bubbling and beginning to brown around edges of dish, about 10 minutes.

1 tablespoon fresh lemon juice
1 teaspoon vanilla

Steps:

  • Heat oven to 450°F. In oven, melt butter in 10-inch ovenproof or cast-iron skillet, about 2 minutes. Add apples, brown sugar and cinnamon; toss to coat apples. (Pan will be very hot.) Bake 2 minutes longer; stir. Bake 3 minutes longer; stir again. Reduce oven temperature to 400°F.
  • In large bowl, beat Bisquick mix, granulated sugar, buttermilk, lemon juice, vanilla and eggs with whisk or fork until blended. Pour over apples.
  • Bake 25 to 30 minutes or until golden brown. Sprinkle with cinnamon-sugar. Cut into wedges. Drizzle with syrup. Serve immediately.

Steps:

  • In medium bowl, mix brown sugar, flour, oats, cinnamon and nutmeg. Cut in butter using pastry blender or fork until mixture is crumbly. Set aside.
  • In large bowl, stir all pancake ingredients until well blended. Heat nonstick griddle to 350°F. or 12-inch skillet over medium-high heat. (To test griddle, sprinkle with a few drops of water. If bubbles jump around, heat is just right.) Brush lightly with vegetable oil or spray with cooking spray before heating to help prevent streusel from sticking to griddle.
  • For each pancake, pour 1/4 cupful batter onto hot griddle. Sprinkle each pancake evenly with scant 2 tablespoons and Streusel mixture. Cook 2 to 3 minutes or until bubbly on top and dry around edges. Turn; cook other side until light golden brown around edges about 1 minute to 1 minute 30 seconds. Scrape off griddle between batches of pancakes if necessary.
  • To serve, serve pancakes Streusel side up and top as desired using any of the toppings listed.

1 c pancake mix
water (according to pancake mix directions)
1/2 tsp cinnamon
1 medium peeled apple

Steps:

  • 1. Mix dry pancake mix with cinnamon. Add water and mix a few times.
  • 2. Cut small, THIN slices of apple (dime-nickel sized) directly into wet pancake batter. (nothing fancy. just use your paring knife and work your way around the apple and let the pieces drop in until you're down to mostly core. You could grate the apple, but I don't prefer it.)
  • 3. Mix batter a few more times to distribute the apple pieces. Cook as you would regular pancakes, about 3 minutes per side. They will be lumpy and not circular, but they'll be delicious.
  • 4. Serve with syrup or granulated sugar. (To make more, increase ingredients while keeping the ratio the same - for each 1 c mix, use 1 apple and 1/2 tsp cinnamon)
