Apple Cider Glazed Sweet Potatoes image

Oven-roasted sweet potatoes glazed with an apple cider reduction.

1 1/2 lbs. sweet potatoes (peeled and cut into 3/4-inch pieces)
1 tbsp. olive oil
salt + pepper to taste
1/2 c. spiced apple cider

Steps:

  • Preheat oven to 400 degrees.
  • Toss sweet potatoes with oil on a rimmed baking sheet. Season with salt and pepper. Bake 25 minutes, stirring halfway through cooking time.
  • While potatoes are roasting, heat apple cider in a small saucepan over high heat. Bring to a boil and cook until reduced to about 2 tablespoons, about 12 minutes.
  • Drizzle sweet potatoes with apple cider reduction; toss to coat. Bake 5 minutes more.

4 lbs. sweet potatoes - peeled and diced
2½ cups apple cider
½ brown sugar
½ cup butter, divided
Cinnamon Stick

Steps:

  • Using a nonreactive saucepan, combine the sweet potatoes, apple cider, brown sugar, 6 tbsp. of the butter, and cinnamon stick.
  • Bring to a boil over moderate heat.
  • Reduce to a simmer and partially cover to continue cooking.
  • Stir occasionally until the potatoes are tender (approx. 45 minutes)
  • Remove the cinnamon stick.
  • Smash or puree (if you prefer a creamier mix).
  • Place in an oven-safe casserole dish.
  • Preheat oven to 325°F.
  • Top with remaining 2 tbsp. of butter.
  • Cover with foil and bake, stirring a few times, for 20 minutes.
  • Remove the foil and bake for an additional five minutes.
  • Sprinkle with cinnamon and serve!

I have not tried this recipe. I'm posting this recipe for safe keeping. I got this recipe from The South Beach Diet Parties & Holidays Cookbook.

6 medium sweet potatoes, sliced into 8 wedges each (about 3 pounds)
1 tablespoon extra virgin olive oil
1/2 teaspoon ground cinnamon
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/3 cup unsweetened apple cider

Steps:

  • Heat oven to 400. Toss together potato slices, oil, cinnamon, salt, and pepper in a large bowl.
  • Transfer to a large baking dish and drizzle with cider. Roast until lightly browned and cooked through, about 30 minutes.

I got this from a Kitchen Basics Healthy Cooking with Stock cookbook . I have not tried it yet, but it sounds good so I wanted to share it. Hope you enjoy.

6 cups kithchen basics unsalted vegetable stock
1 3/4 lbs sweet potatoes, peeled and diced 1-inch
1 small parsnip, peeled and diced 1-inch
2 garlic cloves, coarsely chopped
2 tablespoons olive oil
1 cup pure apple cider
1 teaspoon Tabasco sauce
1 granny smith apple, diced, for garnish
1 tablespoon minced parsley, for garnish
salt and pepper

Steps:

  • Toss together the sweet poatoes, parsnips, garlic and olive oil.
  • Spresd on sheet pan and bake in pre-heated 375 degree oven until tender, about 45 minutes.
  • Tranfer half of the roasted vegetables to a blender and puree with 3 cups of the stock.
  • Pour into a large saucepan.
  • Repeat with the remaining vegetables and stock.
  • Add the apple cider and tobasco and heat through.
  • Season to taste.
  • Serve with the diced apples and minced parsley.
