SHORTCUT APPLE CIDER DOUGHNUTS
Steps:
- Add enough oil to a Dutch oven or other frying vessel of choice to be 2 inches deep. Heat the oil to 350 degrees F (it will take a few minutes for the oil to heat up).
- Put the apple juice concentrate in a small saucepan and bring to a boil over high heat. Then reduce to a low boil and cook until reduced by half and it's thickened and glaze-like, about 15 minutes. Transfer to a small heatproof bowl.
- Add the sugar and cinnamon to a small bowl and stir to combine.
- Remove the biscuits from the can and use a 1 1/2-inch round cutter to cut holes from the center of the biscuit dough.
- Once the oil is hot, add the doughnuts 3 to 4 at a time (the doughnuts should have room to bop around). Cook until golden brown on both sides, about 2 1/2 minutes total (flipping once). Repeat with the remaining doughnuts.
- Transfer to a paper-towel-lined plate to soak up the grease.
- Dip both sides of the doughnut in the glaze, then sprinkle the cinnamon-sugar on the "right-side-up" side. Transfer to a cooling rack so any excess glaze can drip off. Serve warm.

- Cut in butter until mixture resembles coarse crumbs.
- Stir in apple cider until soft dough forms and leaves sides of bowl.
- Turn out on floured surface. Knead into a ball and pat out to 1/2 inch thickness.
- Cut into biscuits. Place 1 inch apart on ungreased cookie sheet.
- Sprinkle with cinnamon. Prick with fork.
- Bake 12 to 15 minutes at 450 degrees.
- Cool on rack.

- Place apples in a large stockpot and add enough water cover by at least 2 inches. Stir in sugar, cinnamon, and allspice. Bring to a boil. Boil, uncovered, for 1 hour. Cover pot, reduce heat, and simmer for 2 hours.
- Strain apple mixture though a fine mesh sieve. Discard solids. Drain cider again though a cheesecloth lined sieve. Refrigerate until cold.

- Preheat the oven to 180°C/160°C fan/350°F/Gas 4. Start the biscuits by placing the 2 whole large eggs in a small pan of boiling water. Boil for 10 minutes, until the eggs are hard boiled. Gently drain the eggs, then run them under cold water to stop them cooking. Set aside to cool.
- Make the jam. Place the Bramley apple pieces in a medium pan. Pour in the apple cider and add 50ml of water. Add all the other jam ingredients, except the sugar. Bring to the boil over a high heat, then reduce the heat to low and simmer for 10 minutes, until the apples are tender.
- Leaving the pan on the heat, crush the apples with a potato masher. Add the sugar and cook on a medium heat for 30–35 minutes, stirring occasionally, until the mixture is thick and reaches 105°C/221°F or the jam-setting point on a sugar thermometer. Pour into a shallow dish and spread out to cool completely. Remove and discard the cinnamon stick.
- To make the caramelised cider apples, combine all the ingredients in a pan, place over a high heat and bring to the boil. Lower the heat and simmer for 20–25 minutes. Remove from the heat and transfer the apple slices to a lined baking sheet. Discard the syrup. Place the apple slices in the oven for 15–20 minutes, until browned. Set aside to cool.
