Two of our favourite desserts are traditional apple crumble and classic cheesecake. We take a step away from the ordinary in this recipe and cram both these delicious concoctions into one decadent, mouth-watering dessert. A graham and cinnamon base is topped with a creamy, New York-style cheesecake, then layered with soft gooey, baked apples and finally topped with a crunch crumble topping. Treat yourself to it all.

1 ½ cups graham cracker crumbs
½ cup rolled oats
1 tsp cinnamon
⅓ cup butter, melted
2 (250g) blocks cream cheese, room temperature
½ cup sour cream
⅔ cup granulated sugar
1 tsp vanilla
3 large eggs
5 small baking apples, peeled, cored and thinly sliced
½ cup brown sugar
1 Tbsp cornstarch
1 tsp lemon zest
1 Tbsp lemon juice
1 tsp cinnamon
¾ cup rolled oats
½ cup all-purpose flour
½ cup brown sugar
¼ cup sliced almonds
1 tsp cinnamon
½ tsp salt
½ cup butter, softened

Steps:

  • Preheat oven to 350ºF. Line the bottom of an 8-inch springform pan with parchment paper.
  • In a medium bowl, mix graham, oats, cinnamon and butter until combined. Press mixture evenly on the bottom of prepared pan. Bake for 10 minutes. Cool. Leave oven on.
  • In the bowl of an electric mixture, beat cream cheese, sour cream, sugar and vanilla until mixture is even and smooth. Beat in eggs one at a time, mixing until fully integrated. Pour mixture over graham base. Reserve.
  • In a large bowl, mix apples, brown sugar, cornstarch, lemon zest, lemon juice and cinnamon to combine. Reserve.
  • In a medium bowl, combine oats, flour, brown sugar, almonds, cinnamon and salt. Cut in butter until mixture is crumbly with visible clumps.
  • Gently scatter apple mixture over cream cheese mixture. If some apple slices sink, that's okay. Next, gently and evenly spoon topping over apples.
  • Bake assembled cheesecake in the centre rack of oven until filling is set, about 80 minutes.
  • Remove from oven and let stand for minimum 1 hour before running a knife around the perimeter of the cheesecake and unhinging the springform pan. Slice and serve warm or chilled (to serve chilled, refrigerate cheesecake in pan, unhinge springform pan, slice and serve).

½ cup softened butter
⅓ cup white sugar
1 teaspoon vanilla extract
1 cup all-purpose flour, or as needed
1 (8 ounce) package cream cheese, softened
1 egg
¼ cup white sugar
1 tablespoon vanilla extract
4 cups peeled and sliced apples
⅓ cup white sugar
2 tablespoons ground cinnamon
¼ cup sliced almonds

Steps:

  • Preheat the oven to 450 degrees F (230 degrees C).
  • Mix butter, 1/3 cup sugar, and 1 teaspoon vanilla extract in a bowl. Stir flour into mixture to make a workable dough. You might not need all the flour. Press the crust into a 9-inch pie dish.
  • Mix cream cheese with egg, 1/4 cup sugar, and 1 tablespoon vanilla extract in a bowl. Pour cream cheese mixture into pie crust. Toss sliced apples with 1/3 cup sugar and cinnamon; top the cream cheese filling with the apple mixture. Sprinkle with sliced almonds.
  • Bake pie in the preheated oven for 10 minutes. Reduce oven temperature to 350 degrees F (175 degrees C) and continue baking until the filling is set, 20 to 25 more minutes. Cool before serving.

1-2/3 cups crushed gingersnap cookies (about 45 cookies)
1/4 cup butter, melted
FILLING:
3 packages (8 ounces each) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
2 tablespoons all-purpose flour
2 teaspoons vanilla extract
4 large eggs, lightly beaten
4 cups chopped peeled tart apples
1/2 cup sugar
2 teaspoons ground cinnamon
1 teaspoon ground nutmeg
CINNAMON SAUCE:
1/2 cup water
2 tablespoons Red Hots candies
1 tablespoon lemon juice
2 teaspoons cornstarch

Steps:

  • In a small bowl, combine cookie crumbs and butter. Press onto the bottom of a greased 9-in. springform pan. Place pan on a baking sheet. Bake at 350° for 10 minutes. Cool on a wire rack., In a large bowl, beat cream cheese until smooth. Beat in the milk, flour and vanilla. Add eggs; beat on low speed just until combined. Pour over crust. In a large bowl, combine the apples, sugar, cinnamon and nutmeg; spoon over cream cheese mixture. Return pan to baking sheet., Bake at 350° for 60-70 minutes or until center is almost set. Cool on a wire rack for 10 minutes. Loosen edges of cheesecake from pan with a knife. Cool 1 hour longer. Refrigerate overnight. , In a small saucepan, combine sauce ingredients. Bring to a boil; cook and stir for 2 minutes or until thickened; cool completely., Remove rim from pan. Drizzle sauce over cheesecake.

100g butter , melted, plus extra for tin
250g ginger nuts
100g stem ginger in syrup, drained and chopped
1 tsp ground cinnamon
1 tsp ground ginger
600g cream cheese
300g ricotta , drained
seeds of 1 vanilla pod
120g golden caster sugar
1 lemon , zested
1 tsp ground cinnamon
1 tsp ground ginger
1 tsp mixed spice
3 Granny Smith apples , peeled and cored
200g golden caster sugar
50ml brandy

Steps:

  • Butter and line the base of a 23cm loose-bottomed cake tin. Whizz the biscuits to a rough crumb in a food processor, or put them in a sandwich bag and crush with a rolling pin. Tip the crumbs into a bowl with the melted butter, stem ginger and spices, and stir well. Press the mixture into the tin, pushing up the sides a little (putting your hand in a food bag makes this easier). Leave the base to set for 30 mins in the fridge.
  • For the cheese layer, whisk all the ingredients together until smooth, then pour over the base. Chill in the fridge overnight.
  • The next day, make the topping. Mix the cinnamon, ginger and mixed spice in a large bowl. Cut each apple into 12 wedges, then toss the wedges in the spice mixture. Heat the sugar and 4 tbsp water in a saucepan and bubble to a caramel. As soon as the sugar becomes a dark caramel, take off the heat and carefully toss through the apples. Pour in the brandy, and the whole lot will bubble and seize. Return the pan to the heat and simmer gently to re-dissolve the caramel and cook the apples in the syrup. Remove from the heat and set the apples aside to cool in the syrup.
  • Ease the cheesecake out of the tin. Spoon the apples over the top with a slotted spoon. Serve the sticky brandy syrup on the side as a sauce.

2 envelopes unflavored gelatin
1/3 cup cold water
1-3/4 cups apple juice
1/2 cup sugar
3 large egg yolks, lightly beaten
3 packages (8 ounces each) cream cheese, softened
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 cup heavy whipping cream, whipped
TOPPING:
1/2 cup chopped dry roasted peanuts
2 tablespoons butter
1 cup applesauce
1/3 cup packed brown sugar
1/4 teaspoon ground cinnamon
Additional whipped cream, cinnamon and peanuts, optional

Steps:

  • In a small saucepan, sprinkle gelatin over cold water; let stand for 1 minute. Heat over low heat, stirring until gelatin is completely dissolved; set aside. , In a large saucepan, combine the apple juice and sugar until smooth. Bring to a boil over medium heat; cool slightly. , Whisk a small amount of hot mixture into the egg yolks. Return all to the pan, whisking constantly. Cook and stir over medium-high heat until thickened and bubbly. Remove from the heat. Cool to room temperature , In a large bowl, beat the cream cheese, cinnamon and nutmeg until smooth. Gradually beat in gelatin mixture until smooth. Chill until for about 20 minutes or until slightly thickened. Fold in cream. Pour into a an ungreased 9-in. springform pan. Chill 4 hours or overnight. , In a small saucepan over medium heat, brown peanuts in butter for 2 minutes. Add the applesauce, brown sugar and cinnamon; cook and stir for 5 minutes or until heated through. Cool. Spread over top of cheesecake. Garnish with additional whipped cream, cinnamon and peanuts if desired.

After searching for a gluten free apple slice recipe, I finally found this on the Philadelphia site. I have not made it yet, but I am going to make this very soon, although I might make my own apple filling.

2 cups Rice Crumbs
1/2 cup caster sugar
1 teaspoon mixed spice
150 g butter, melted
500 g cream cheese, softened
1/2 cup cream
1/3 cup caster sugar
1 egg
400 g pie apples, gluten free
raw sugar and coconut, for sprinkling

Steps:

  • Combine the rice crumbs, sugar and spice. Stir through butter and press into a lined 30 x 20cm pan. Bake at 180ºC for 10 minutes.
  • Beat the cream cheese, then cream, sugar and egg until well combined. Fold the mix through the apple. Spoon mixture over the base and sprinkle with sugar and coconut.
  • Bake at 180ºC for 30 ? 35 minutes until base is crisp, and top is golden. Cool and cut into squares.
