This is a very good and moist cake recipe I received from my grandmother years ago. It makes a nice addition to any dinner table.

1 cup packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
½ cup chopped pecans
2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
½ teaspoon salt
½ cup butter, room temperature
1 cup white sugar
¾ cup apple butter
1 teaspoon vanilla extract
½ cup whole bran cereal or wheat germ
1 cup sour cream
2 eggs, room temperature

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch pan.
  • Prepare the topping by mixing together the brown sugar, cinnamon, nutmeg, and chopped pecans.
  • Sift together the flour, baking powder, baking soda, and salt.
  • Beat butter and sugar together in a large bowl with an electric mixer until light and fluffy; add eggs one at a time, thoroughly beating each egg into the butter mixture before adding the next. Add apple butter, vanilla, and wheat germ or bran cereal. Add sifted dry ingredients alternately with sour cream; mix well after each addition.
  • Pour half the batter into the prepared pan; sprinkle with half of the topping. Pour remaining batter into pan and top with the rest of the topping.
  • Bake in the preheated oven until a tester inserted in the center comes out clean, about 40 minutes.

4 medium Honeycrisp apples, peeled and cut into 1-inch pieces (about 1-1/2 pounds)
2 cups sugar
1/2 cup canola oil
2 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
1 tablespoon pumpkin pie spice
2 teaspoons baking powder
1 teaspoon salt
1/2 cup buttermilk
1-1/2 cups chopped walnuts, toasted
FROSTING:
1 package (8 ounces) cream cheese, softened
1/2 cup butter, softened
1 cup confectioners' sugar
1 cup packed brown sugar
1-1/2 teaspoons vanilla extract
1 teaspoon pumpkin pie spice
1-1/2 cups chopped walnuts, toasted

Steps:

  • Preheat oven to 350°. Line bottoms of 2 greased 9-in. round baking pans with parchment; grease parchment., Place apples in a food processor; pulse until finely chopped. In a large bowl, beat sugar, oil, eggs and vanilla until well blended. In another bowl, whisk flour, pie spice, baking powder and salt; gradually beat into sugar mixture alternately with buttermilk. Stir in apples and walnuts., Transfer to prepared pans. Bake until a toothpick inserted in center comes out clean, 35-40 minutes. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a large bowl, beat cream cheese, butter, sugars, vanilla and pie spice until smooth. Spread frosting between layers and over top and sides of cake. Gently press walnuts into frosting on top of cake. Refrigerate leftovers.

Impress everyone this fall with an apple butter pound cake topped with caramel frosting and apple chips.

1 cup Slow-Cooker Apple Butter
¼ cup finely chopped, toasted pecans
Vegetable shortening
1 ½ cups butter, softened
1 (8-oz.) package cream cheese, softened
3 cups granulated sugar
6 large eggs
3 cups all-purpose flour, plus more for pan
3 teaspoons vanilla extract, divided
½ cup packed light brown sugar
¼ cup butter
3 tablespoons whole milk
1 cup powdered sugar
½ cup dried apple chips (optional)

Steps:

  • Stir together Slow-Cooker Apple Butter and pecans in a small bowl; set aside. Grease (with vegetable shortening) and flour a 14-cup Bundt pan; set aside.
  • Preheat oven to 325°F. Beat softened butter and cream cheese in bowl of a heavy-duty stand mixer fitted with paddle attachment on medium speed until creamy, about 2 minutes. Gradually add granulated sugar, beating on medium speed until light and fluffy, about 3 minutes. Add eggs, 1 at a time, beating just until blended after each addition.
  • Reduce speed to low, and gradually add flour to butter mixture, beating just until blended after each addition, stopping to scrape down bowl as needed. Stir in 2 teaspoons of the vanilla.
  • Stir ¼ cup batter into apple butter mixture. Pour half of the remaining batter into prepared Bundt pan. Using a small offset spatula or knife, make about a ¾-inch-wide x ¾-inch-deep trench (or channel) in center of batter around pan. Spoon apple butter mixture into trench. Top with remaining cake batter.
  • Bake in preheated oven until a long wooden pick inserted in center comes out clean (1 hour, 20 minutes to 1 hour, 35 minutes). Cool cake in pan on a wire rack 10 minutes, and remove from pan to wire rack. Cool completely, about 2 hours.
  • While cake cools, bring brown sugar, ¼ cup butter, and milk to a boil in a small saucepan over medium, whisking constantly. Boil, whisking constantly, 1 minute. Remove from heat; stir in remaining 1 teaspoon vanilla. Gradually whisk in powdered sugar until smooth, and whisk gently until mixture begins to cool and thickens slightly, 3 to 5 minutes. Immediately spoon over cooled cake; top with apple chips, if desired.

1 1/2 cups chopped pecans
2 cups Gold Medal™ all-purpose flour
2 teaspoons ground cinnamon
1 teaspoon baking soda
1 teaspoon salt
1/2 cup butter, melted
2 cups sugar
2 eggs
2 teaspoons vanilla
2 1/2 lb Granny Smith apples (about 4 large), peeled, cut into 1/4-inch wedges
1 cup butter
1 box (16 oz) powdered sugar
1/4 cup milk

Steps:

  • Heat oven to 350°F. Spread pecans in ungreased shallow pan. Bake uncovered 6 to 10 minutes, stirring occasionally, until light brown. Cool.
  • Spray 13x9-inch pan with cooking spray. In medium bowl, mix flour, cinnamon, baking soda and salt. In large bowl, stir together melted butter, sugar, eggs and 1 teaspoon of the vanilla until blended. Stir in flour mixture just until blended. Stir in apples and 1 cup of the toasted pecans. (Batter will be very thick, similar to cookie dough.) Spread batter in pan.
  • Bake 45 minutes or until toothpick inserted in center comes out clean. Cool completely in pan on cooling rack.
  • Meanwhile, in 1-quart heavy saucepan, cook 1 cup butter over medium heat 6 to 8 minutes, stirring constantly, until butter begins to turn golden brown. Immediately remove from heat and pour into small bowl. Cover; refrigerate 1 hour or until butter begins to solidify.
  • Beat browned butter with electric mixer on medium speed until fluffy. Gradually add powdered sugar alternately with milk, beating on low speed until blended. Stir in remaining 1 teaspoon vanilla. Frost cake. Sprinkle with remaining 1/2 cup toasted pecans. Store covered in refrigerator.

1 1/2 teaspoon(s) baking powder
1/2 teaspoon(s) baking soda

1/4 teaspoon(s) cloves
1/4 teaspoon(s) ginger
1/4 cup(s) shortening
1 1/2 cup(s) sugar
1/2 teaspoon(s) vanilla
1/4 cup(s) buttermilk
cup(s) applebutter

Steps:

  • Allow butter and eggs to stand at room temp. for 30 minutes. Meanwhile grease 2 8x1 1/2 inch round cake pans. In a medium bowl stir together flour, baking powder, baking soda, cinnamon, cloves, nutmeg, ginger; set aside.
  • Preheat oven to 350. In a large mixing bowl beat butter and shortening. Add sugar and vanilla, beat until well combined. Add eggs one at a time beating well after each addition. Alternately add flour mixture and buttermilk to butter mixture beating well after each addition. Add apple butter mix well. Spread into prepared pans. Bake 30-35 minutes or until toothpick comes out clean. Cool cake layers on wire rack. Frost with spice frosting.
  • Spice Frosting: 1 Cup shortening, 1/2 jar marshmallow cream, 4 cups powder sugar, 1 teaspoon cinnamon, 1/4 teaspoon cloves, 1/4 teaspoons, ginger, 1/4 teaspoons nutmeg, 3-4 tablespoons milk. Mix until well blended and smooth.

  • Preheat oven to 350F and butter 2 8-inch cake pans. I like to place a circle of parchment paper at the bottom of my cake pans as well to insure easy removal.
  • In a stand mixer with the paddle attachment, add the butter and salt and beat for a minute or so until very smooth. Add the powdered sugar, about a cup at a time, beating between each addition. Scrape down the sides of the bowl as needed to get everything fully incorporated. Add the molasses and cream and continue to beat until everything is smooth and well mixed. Note: if your frosting seems a little too thick, add a touch more cream or molasses, but go slowly. If your frosting is a little loose, blend in a little more sifted confectioner's sugar.
