BREAKFAST APPLE CAKE
Baked in a pretty tube pan and drizzled with icing, this breakfast cake will be a highlight of your holiday menu. I adapted the recipe from one of my grandmother's. -Shaunda Wenger, Nibley, Utah

- In a large bowl, beat the egg whites, sugar, sour cream, applesauce and vanilla. Combine the flour, baking soda, baking powder and salt; gradually add to sour cream mixture, beating just until combined., In a large bowl, combine the filling ingredients. Spoon half of the batter into a greased and floured 10-in. fluted tube pan. Top with half of the filling. Repeat layers. , Bake at 350° for 40-45 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes; invert pan and remove cake to a wire rack to cool completely. Combine glaze ingredients; drizzle over cake.

- Preheat oven to 350°. In a large bowl, beat the sugar, oil, eggs and vanilla until well blended. Combine the flour, baking powder, salt, cinnamon and baking soda; gradually beat into sugar mixture until blended. Fold in apples and walnuts., Transfer to a greased 13x9-in. baking dish. Bake until a toothpick inserted in the center comes out clean, 35-45 minutes. Cool on a wire rack. Serve with whipped topping.

I make this cake a lot as it is not overly sweet but is very moist and flavorful. My mother in-law loves this cake so I always make two of them. Stouffers sent me this recipe and a few more along with some coupons lucky me!

Steps:
- Preheat oven to 350 degrees Fahrenheit.
- Grease and flour a 13x9x2 baking pan.
- Beat cake mix, eggs, milk and cinnamon in large mixing bowl until just moistened. Beat two minutes at medium speed.
- Fold apples into batter. Pour half the batter into prepared pan. Sprinkle with half the Streusel Topping.
- Top with remaining batter. Sprinkle with remaining Streusel Topping.
- Bake for 40 to 45 minutes or until toothpick inserted in center comes out clean.
- FOR STREUSEL TOPPING:.
- Combine all ingredients in bowl mix well.

APPLE BREAKFAST CAKE
A quick yummy dish for brunch. Original recipe from Sunset October 2009 but I added the bacon and cheese on top. I don't have an ovenproof skillet so I cooked the butter, sugar, cinnamon and apples in a saucepan, poured the egg mixture in a greased 8" square glass casserole and poured the apple mixture on top. It worked fine. It'll serve six if you have other dishes available or armed guards at the buffet table.

Steps:
- Peheat oven to 425 degrees F.
- Melt butter in a 12 inch ovenproof frying pan over high heat.
- Add brown sugar and cinnamon, swirling to combine.
- Add apple slices and cook until just starting to soften, about 3 minutes.
- In a blender, whirl together eggs, bacon, salt, flour and milk.
- Pour egg mixture into pan and bake until puffed and brown, about 15 minutes.
- Sprinkle with lemon juice and powdered sugar.
- Top with cheese, optional.

- Place rack in the center of the oven and preheat to 375 degrees. Coat a 9" x 13" baking dish with cooking spray then set aside. In a medium-sized mixing bowl, toss the diced apples with lemon juice to prevent browning then set aside.
- Place oats in a food processor or blender then pulse until mixture becomes the consistency of coarse cornmeal. Sift flour, baking soda and cinnamon into a small bowl then add the oat flour. Stir to combine then set aside.
- In a large mixing bowl or the bowl of a stand mixer, cream butter and sugar together for approximately 4 minutes, until light and fluffy. Scrape down the sides of the bowl then add vanilla and salt. Begin beating and add the eggs one at a time, combining the first egg completely before adding the next.
- Add half of the dry ingredients, stir to combine then add apple juice. Mix completely before stirring in remaining dry ingredients. Once batter is completely combined, fold in diced apples and ½ cup of chopped pecans. When the apples and pecans are thoroughly mixed into the batter, transfer mixture to baking dish.
