LILIKOI BUTTER - PASSION FRUIT

Steps:

• Melt butter over medium heat.
• Mix eggs, suar and juice in a bowl.
• While stirring constantly, slowly add mix to melted butter and bring to a full rolling boil over medium heat. Use only medium heat so eggs don't coddle.
• Cook 10-15 minutes to desired consistency.
• Jar and refrigerate. OR use standard canning methods.

LILIKOI LIQUEUR (PASSION FRUIT)

Steps:

• Place half of the vodka with the passion fruit.
• Set it aside for 15 days.
• After 15 days dissolve sugar in water.
• Combine with the passion fruit mixture and add the remaining vodka.
• Set it aside for another 15 days.
• Enjoy.
• Set aside time is not included.

BAKED BANANAS AND PASSION FRUIT

Steps:

• Wrap each banana in aluminium foil, leaving the top open.
• Drizzle the honey over the bananas.
• Squeeze a little lemon juice in each packet and then drizzle over the orange juice.
• Cut the passion fruit in half and squeeze four of the halves over the bananas.
• Seal the foil parcels and bake in a pre-heated oven at 200 C or 400 F for about 20 minutes.
• Put onto plates and give everyone one two halves of passion fruit.
• Each diner should squeeze their passion fruit onto their bananas as they open the packet.

ANY FRUIT JUICE BREAD (LILIKO'I, LEMON, POMEGRANATE, ORANGE ETC)

Steps:

• Cream butter and sugar together. Beat in eggs, one at a time.
• Mix flour and baking powder together.
• Add dry ingredients and liquid ingredients to the sugar mixture until well blended.
• Pour batter into two silicone (greased) loaf pans and bake at 350F for 45-50 minutes.
• You can use oat flour for this recipe, too, but it's a bit more crumbly.
