1/2 pound(s) bulk, sausage - i used bob evans hot
1 - tomato, chopped
1 - onion, chopped
1 - 30 ounce(s) bag, shredded hashbrowns - thawed
8 - eggs
2 cup(s) shredded, cheddar cheese
1/2 cup(s) eggs, substitute
1 - 8 ounce(s) sour cream
1 1/2 teaspoon(s) salt
1 teaspoon(s) pepper
1 teaspoon(s) ground mustard
1/2 teaspoon(s) dill
1/2 teaspoon(s) paprika
TOPPING
3/4 - 1 cup(s) corn flakes, slightly crushed
2 - 3 tablespoon(s) melted, butter

Steps:

  • If baking the same day, preheat oven to 350 degree F. Spray a 9 x 13 baking dish with non stick cooking spray. In a large skillet, cook pork sausage (adding onion and tomato half way through) over medium-high heat about 10 minutes, stirring occasionally, until fully cooked.
  • In large bowl, toss sausage mixture, potatoes and cheese. Spread into baking dish.
  • In another large bowl, beat eggs, egg substitute, milk, sour cream and all spices with a wire whisk until well blended. Pour over potato mixture.
  • You can store this in the fridge covered overnight, or bake right away if desired.
  • Bake uncovered 35 minutes. Meanwhile, in small bowl, mix cornflake crumbs and melted butter. ( if baking this casserole at a later time, do not mix cornflakes till then.)
  • Remove casserole from oven long enough to sprinkle cornflakes over casserole.
  • Bake another 15 minutes or until knife inserted in center comes out clean. Enjoy!

1 1/2 lbs frozen southern style hash brown potatoes
2 tablespoons vegetable oil
1/2 cup green onion, chopped
1/2 cup red pepper, chopped
12 eggs, beaten
1/2 cup milk
1/2 teaspoon dry mustard
1/2 teaspoon pepper
8 ounces refrigerated crescent dinner rolls
10 slices bacon, cooked, drained and crumbled
2 1/2 cups cheddar cheese, shredded

Steps:

  • Fry potatoes in oil; add onions and peppers - fry until tender.
  • Combine eggs, milk and spices; whisk well and set aside.
  • Grease 9x13 casserole dish. Line bottom of dish with crescent rolls (unrolled and pressed flat). Layer potatoes over crescent rolls; sprinkle with bacon bits, then cheese. Pour egg mixture over top of casserole. Sprinkle with paprika.
  • Bake in preheated oven at 350° for 40 minutes.
  • Can be made the night before and refrigerated.

2 cups skim milk
1 1/2 cups lean ham, cubed
3 eggs, beaten
3/4 cup egg substitute
1 cup 2% cheddar cheese, shredded
1/2 teaspoon salt

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • Lightly grease a 9 x 12 baking dish.
  • Mix all the ingredients together.
  • Pour into prepared baking dish.
  • Bake for about 45 to 50 minutes or until set.

½ pound breakfast sausage
1 small onion, diced
½ cup milk
5 large eggs
½ teaspoon onion powder
½ teaspoon salt
¼ teaspoon garlic powder
¼ teaspoon ground black pepper
1 (12 ounce) package shredded Cheddar cheese, divided
1 (16 ounce) package frozen bite-size potato nuggets (such as Tater Tots®)

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 2-quart baking dish with cooking spray.
  • Heat a large skillet over medium-high heat. Cook and stir sausage and onion in the hot skillet until sausage is browned and crumbly, 5 to 7 minutes. Drain and cool.
  • Meanwhile, whisk milk, eggs, onion powder, salt, garlic powder, and pepper together in a bowl.
  • Spread sausage mixture over the bottom of the prepared baking dish. Pour egg mixture over the top. Layer with 1/2 of the Cheddar cheese and all of the potato nuggets. Cover with aluminum foil.
  • Bake in the preheated oven for 40 minutes. Remove foil and sprinkle with the remaining cheese. Bake until melted, about 20 minutes more. Remove from the oven and let stand for 5 minutes before serving.
