MOROCCAN CARROT & CHICKPEA SALAD



Moroccan Carrot & Chickpea Salad image

With fragrant spices, bright colors and savory flavors, this exotic twist on the carrot-raisin salad is a feast for the senses.

Number Of Ingredients 18

¼ cup extra virgin olive oil
1 teaspoon lemon zest and 3 tablespoons lemon juice, from one large lemon
¼ cup freshly squeezed orange juice, from one large orange
1½ tablespoons honey
¾ teaspoon salt
1 teaspoon ground cumin
½ teaspoon ground ginger
½ teaspoon ground cinnamon
¼ teaspoon ground coriander
¼ teaspoon ground allspice
¼ teaspoon cayenne pepper
1 pound carrots, peeled and shredded
⅓ cup currants
½ cup slivered almonds, toasted (see note below)
½ cup chopped fresh mint or cilantro (or a combination), plus more for serving
1 (15-ounce) can chickpeas, rinsed and drained
2 tablespoons finely minced shallots, from one large shallot
1 garlic clove, minced

Steps:

  • In a large bowl (large enough to mix the entire salad), whisk together all of the ingredients for the dressing.
  • To the dressing, add all of the ingredients for the salad and toss well. Cover with plastic wrap and refrigerate for at least 30 minutes or up to a few hours. Taste and adjust seasoning if necessary (you might need more salt, lemon or honey, depending on the sweetness of the carrots). Transfer to a serving dish and garnish with more fresh chopped herbs. Serve cold.
  • Note: To toast the almonds, preheat the oven to 350°F. Place the almonds on a foil-lined baking sheet for easy clean-up. Bake for about 5 minutes, until the almonds are golden.

This is a fantastic summer salad. Fresh, clean, bright flavors, incredibly healthy and yummy. This recipe is gluten free/corn free/nut free (even though you could add some if you felt like it) and has great nutritional properties.

3 boneless chicken breasts
3 tablespoons Ras El Hanout Spice Blend
1 (16 ounce) bag dried garbanzo beans (or 2 cans)
1 cup red lentil
1 small onion, diced finely
1/4 cup diced sun-dried tomato
1/2 cup artichoke heart, chopped finely (frozen or canned)
3 tablespoons capers
1 lemon, zest of
1 inch piece ginger (grated finely)
1 tablespoon sage (dried or fresh)
1 teaspoon honey
1/3 cup red wine vinegar
1/2 cup olive oil
salt and pepper
serve with fresh herb (parsley, mint, fresh sage)

Steps:

  • If using dried chickpeas, cook them in 2 cups of water and a tsbp of salt in a pressure cooker for 1 hour or follow directions on the bag for normal cooking. If using can, drain peas and add into a large bowl.
  • Simmer red lentils in 2 cups water for ten minutes or until done, drain, and add to bowl.
  • Rub salt and ras el hanut onto both sides of chicken breasts and either grill or put in the oven under the broiler until just done. Chop into larger bite size pieces and add into bowl.
  • Add tomatoes, onions, artichoke hearts, capers to bowl.
  • Dressing:.
  • Add zest of 1 lemon, grated ginger, sage, salt, pepper, honey, vinegar and oil into bowl or food processor and blend up until emulsified. Add dressing to bowl and stir all ingredients together.
  • Serve with fresh wedges of lemon and fresh herbs (parsley, mint, or sage).

This tastes wonderful with all sorts of meals - especially anything done on the bbq. The beans do need to be soaked overnight.

1 1/3 cups dried garbanzo beans, soaked overnight
4 scallions, finely chopped
1 large ripe tomatoes, peeled,seeded and finely chopped
1/2 cup cilantro or 1/2 cup parsley, minced
8 kalamata olives, pitted and finely chopped
1 clove garlic, minced
2 tablespoons olive oil
1 1/2 tablespoons fresh lemon juice
1/2 teaspoon ground cumin
1/4 teaspoon black pepper
1 pinch cayenne

Steps:

  • Put chickpeas in a large saucepan.
  • Add water to cover and stir in 1 tsp of salt.
  • Bring to a boil over high heat, then lower heat to medium and simmer until tender, about 1 hour.
  • Drain the chickpeas and discard any loose skins.
  • In a serving bowl, combine all the remaining ingredients.
  • Add the chickpeas and toss well.
  • Cover and refrigerate for atleast 4 hours before serving.

Here is a recipe that will take less than 1/2 hour to prepare and will keep in the refrigerator for several months. It is idiot-proof, I promise, and tastes good too. In no time at all you will once again be able to enjoy ketchup again.

2 (8 ounce) cans of organic tomato paste
1/4 cup apple cider vinegar
2 tablespoons lemon juice or 2 tablespoons orange juice
1/2 teaspoon onion salt
1/2 teaspoon garlic salt
1/4 cup honey or 1/4 cup maple syrup

Steps:

  • Bring ingredients to boil on the stove. Simmer 15 minutes, then take ketchup off heat for 10 minutes. Pour into a condiment jar and refrigerate. Makes a little over 4 cups of ketchup.

  • Add coconut oil to a large pot and place over medium heat. Once oil is hot add in onion and sauté until onion is translucent, about 3-5 minutes. Stir in the following spices: turmeric, cumin, cinnamon and salt and pepper; cook for 30 seconds more.
  • Next add in broth (or water) and quinoa; bring mixture to a boil, then cover, reduce heat to low and cook for exactly 15 minutes. After 15 minutes, remove from heat and fluff quinoa with a fork.
  • Stir in chickpeas, cranberries and parsley to the quinoa and mix until well-combined. Taste and adjust seasonings. Garnish with toasted almonds and extra parsley. Serves 4.
  • To serve: Place in mason jars or meal prep containers for lunch throughout the week. Garnish with extra toasted almonds.
