Anita's Famous International Chicken and Rice Dish image

I found this recipe in a Newspaper many years ago and I believe that it is an African dish if my memory is correct, although don't quote me on it. "This takes a little while to make but it's VERY delicious and worth the effort." The flavors are unique and wonderful!

3 lbs cooked chicken
1 tablespoon garlic salt
4 garlic cloves
3/4 cup vegetable oil (olive)
1/2 cup yellow onion, finely chopped
1 teaspoon ground ginger
1/2 green pepper, finely chopped
1 (16 ounce) can tomatoes
2 (6 ounce) cans tomato paste
1 tablespoon salt
1/2 teaspoon black pepper
1/2 teaspoon thyme
1 teaspoon crushed red pepper
2 cups white rice (Jasmine)
5 cups water or 5 cups chicken stock
1/2 cup yellow onion, sliced
1 teaspoon poultry seasoning

Steps:

  • In a 10 inch skilled saute chicken which has been skinned, deboned, and cut-up; with garlic salt and 1/2 cup oil until lightly browned. Set aside.
  • In a 4 quart kettle saute chopped yellow onions, ginger and green pepper in 1/4 cup oil until onions are soft.
  • Add tomatoes and simmer 5 minutes. Add salt, black pepper thyme, tomato paste and simmer 10 minutes.
  • Add the cooked meat and crushed red pepper. Simmer 20 minutes.
  • In a 2 quart saucepan cook rice, chicken stock and onions until tender.
  • Serve the rice on a platter arranging the meat/sauce in the center.
  • I have made this and mixed all ingredients together with rice for my daughter to take to school for a sharing of African ethnic cooking. It was a big hit. Nearly everyone asked for the recipe.
  • This takes a little while to make but its delicious and well worth the effort.".

This is an example of less being more and with only 3 ingredients you just can't go wrong! This is absolutely gorgeous, just don't try to put anything with it and keep it simple! Pure comfort food, especially if made using basmati rice

cold leftover rice, enough for 1 person
2 eggs
25 g butter
salt & freshly ground black pepper

Steps:

  • Melt the butter on a medium heat in a frying pan, do not let it brown.
  • Crack the eggs into a cup, season with salt and pepper and beat well.
  • Add to the butter in the pan as if you were making scrambled eggs.
  • When the eggs are half scrambled add the rice, crumbling into the pan if it has stuck together.
  • Stirring constantly, cook the rice until completely warmed through and serve immediately.

This is a really tasty and fragrant take on chicken and rice. I came up with it after adapting various recipes for chicken and rice. The fresh herbs really add flavour and unusual texture to the dish

2 large chicken fillets, cut up into bite sized pieces
150 g rice (I prefer a long grain & wild rice mix, but it's up to you)
1 tablespoon lemon juice
1 onion, chopped
1 red peppers or 1 green pepper, chopped
1 hot chili pepper, chopped (add more chilli if you like it spicy)
1 clove garlic, finely chopped
paprika
salt and pepper
1/2 pint stock
1/2 pint passata or 1 can chopped tomato
1/4 cup chopped parsley, to taste
1/4 cup of chopped basil, to taste

Steps:

  • Preheat the oven to Gas Mark 5 (375 Fahrenheit, 175 Centigrade - moderately hot).
  • Mix all the ingredients except the chicken, herbs and paprika in a casserole dish.
  • Cover and place in the oven.
  • Cook for 20 minutes.
  • Remove from oven and place the chicken pieces and herbs on the top of the mixture. Sprinkle the paprika over the chicken pieces.
  • Cook covered for a further 30 minutes.

I have been making this simple dish for years. It only contains 2 main ingredients but it is full of flavor.

2 -3 boneless skinless chicken breasts
2 (5 ounce) bags saffron yellow rice (I use Mahatma brand)
2 tablespoons butter
3 1/3 cups water
salt & pepper

Steps:

  • Remove any excess fat from the chicken then cut into bite sizes pieces.
  • Sprinkle the chicken with salt & pepper before cooking. Then lightly spray a large pot with cooking spray and cook the chicken until almost done.
  • Drain any liquid from the chicken. Leave the chicken in the pot & add 3 1/3 cups of water & 2 tablespoons of butter. Bring to a boil then stir in the rice mix. Reduce heat & simmer, covered, for 20 minutes.

1 cup coconut milk
1 sprig fresh thyme
