ANITA'S FAMOUS INTERNATIONAL CHICKEN AND RICE DISH
I found this recipe in a Newspaper many years ago and I believe that it is an African dish if my memory is correct, although don't quote me on it. "This takes a little while to make but it's VERY delicious and worth the effort." The flavors are unique and wonderful!

Steps:
- In a 10 inch skilled saute chicken which has been skinned, deboned, and cut-up; with garlic salt and 1/2 cup oil until lightly browned. Set aside.
- In a 4 quart kettle saute chopped yellow onions, ginger and green pepper in 1/4 cup oil until onions are soft.
- Add tomatoes and simmer 5 minutes. Add salt, black pepper thyme, tomato paste and simmer 10 minutes.
- Add the cooked meat and crushed red pepper. Simmer 20 minutes.
- In a 2 quart saucepan cook rice, chicken stock and onions until tender.
- Serve the rice on a platter arranging the meat/sauce in the center.
- I have made this and mixed all ingredients together with rice for my daughter to take to school for a sharing of African ethnic cooking. It was a big hit. Nearly everyone asked for the recipe.
- This takes a little while to make but its delicious and well worth the effort.".
LOVELY LEFTOVER RICE DISH
This is an example of less being more and with only 3 ingredients you just can't go wrong! This is absolutely gorgeous, just don't try to put anything with it and keep it simple! Pure comfort food, especially if made using basmati rice

Steps:
- Melt the butter on a medium heat in a frying pan, do not let it brown.
- Crack the eggs into a cup, season with salt and pepper and beat well.
- Add to the butter in the pan as if you were making scrambled eggs.
- When the eggs are half scrambled add the rice, crumbling into the pan if it has stuck together.
- Stirring constantly, cook the rice until completely warmed through and serve immediately.

This is a really tasty and fragrant take on chicken and rice. I came up with it after adapting various recipes for chicken and rice. The fresh herbs really add flavour and unusual texture to the dish

Steps:
- Preheat the oven to Gas Mark 5 (375 Fahrenheit, 175 Centigrade - moderately hot).
- Mix all the ingredients except the chicken, herbs and paprika in a casserole dish.
- Cover and place in the oven.
- Cook for 20 minutes.
- Remove from oven and place the chicken pieces and herbs on the top of the mixture. Sprinkle the paprika over the chicken pieces.
- Cook covered for a further 30 minutes.

EASIEST CHICKEN & RICE DISH
I have been making this simple dish for years. It only contains 2 main ingredients but it is full of flavor.

Steps:
- Remove any excess fat from the chicken then cut into bite sizes pieces.
- Sprinkle the chicken with salt & pepper before cooking. Then lightly spray a large pot with cooking spray and cook the chicken until almost done.
- Drain any liquid from the chicken. Leave the chicken in the pot & add 3 1/3 cups of water & 2 tablespoons of butter. Bring to a boil then stir in the rice mix. Reduce heat & simmer, covered, for 20 minutes.
