PUTTANESCA WITH ANGEL HAIR PASTA

Kosher salt and freshly ground black pepper
12 ounces dry angel hair pasta
3 tablespoons olive oil, plus more for tossing the pasta
One 28-ounce can whole plum tomatoes
6 cloves garlic, thinly sliced
4 anchovy fillets
1/4 to 1/2 teaspoon crushed red pepper flakes
1/2 cup roughly chopped pitted black olives
3 tablespoons drained jarred capers
2 tablespoons chopped fresh parsley leaves
Grated Parmesan, for serving

Steps:

  • Bring a pot of salted water to a boil. Cook the pasta according to the package directions for al dente. Drain, toss with some oil and keep warm.
  • Drain the tomatoes into a large bowl and reserve the juice. Roughly crush the tomatoes with your hands.
  • Heat 2 tablespoons of the oil in a large skillet over medium-low heat. Add the garlic, anchovies and chile flakes and cook, stirring occasionally, until the garlic is lightly golden, about 3 minutes. Add the crushed tomatoes and a generous pinch each of salt and pepper. Increase the heat to medium-high and bring to a simmer. Cook, stirring occasionally, until the tomatoes are soft and begin to lose their shape, 5 to 7 minutes. Stir in the olives, capers and reserved tomato juice. Continue to simmer until the sauce has thickened slightly and the flavors have blended, about 10 minutes more.
  • Add the cooked pasta to the skillet along with the parsley and remaining 1 tablespoon oil and toss well. Season with salt and pepper and serve with Parmesan.

Leaves from 2 bunch fresh basil
2 tablespoons pine nuts, untoasted
1 garlic clove
1/2 cup extra-virgin olive oil
1/2 cup freshly grated Parmigiano-Reggiano
Salt and freshly ground black pepper
1 pound angel hair pasta

Steps:

  • Bring a large pot of salted water to a boil for the pasta. Combine the basil, pine nuts, garlic, and olive oil in a blender and blend to a puree. Add the cheese, salt and pepper, and blend again.
  • Cook the pasta in the boiling, salted water until al dente, about 3 minutes. Drain and transfer to a large bowl. Add the pesto and toss. Taste for salt and pepper, and add a drizzle of oil, if you like.

When the holiday excesses are over and the lights are low, the time comes for quiet, simple dinners. This light, lively pasta is a welcome relief from the weeks of heavy protein.

Number Of Ingredients 13

2 tablespoons fennel seeds
1/2 teaspoon crushed red pepper flakes
6 tablespoons olive oil, divided
1 yellow onion, finely chopped
2 fennel bulbs, trimmed, cored, and finely chopped (core, outer layers, and fronds reserved; stalks discarded)
1/2 cup store-bought tomato sauce
1/2 cup white wine
1/2 teaspoon salt
1/2 cup currants
1/2 cup unseasoned bread crumbs, lightly toasted
1/2 cup finely chopped fennel fronds (from fennel above)
1 tablespoon dried oregano
1 pound angel hair pasta (capellini)

Steps:

  • Preheat the oven to 375°F.
  • Dry-roast the fennel seeds in a heavy-duty sauce pot over medium-high heat, until they become slightly browned and give off a nutty aroma, 30 seconds to 1 minute. Add the crushed red pepper, and give a stir or two. Don't let the flakes burn.
  • Add 4 tablespoons of the olive oil and the onion. Sauté until the onion begins to soften, 3 to 5 minutes. Add the chopped fennel. Sauté for another 5 minutes. Add the tomato sauce, wine, and salt, and stir. Cover, and transfer to the oven. Bake for 20 to 30 minutes.
  • Meanwhile, place the fennel cores and outer layers in 6 quarts of salted water, and bring to a boil.
  • Remove the pot from the oven (the vegetables should be thoroughly soft), and coarsely purée the sauce with an immersion blender. Add the currants, stir, return the pot to the stovetop over low to medium-low heat, and simmer, uncovered, for another 10 minutes. Meanwhile, make the garnish. Combine the remaining 2 tablespoons olive oil, the bread crumbs, fennel fronds, and oregano in a bowl, and toss to mix.
  • When the water has come to a boil, remove and discard the fennel, and add the angel hair. Drain the pasta after about 1 minute, when it's just short of al dente, reserving 1 cup or so of the cooking water. Return the angel hair to the pot, and set it over medium heat. Add the fennel sauce to the pasta, and toss to incorporate. Add some of the reserved cooking water if needed to help incorporate the sauce and finish cooking the pasta. Serve in shallow bowls, topping each with a "halo" of garnish.

PISTACHIO PESTO
4 c fresh basil
1/2 c olive oil
1/2 c pistachios
1/2 c grated parmesan cheese
3 clove garlic
salt and pepper
ANGEL HAIR PASTA
8 oz angel hair pasta
1/2 c pistachio pesto
1/4 c pasta water
1 c cherry tomatoes halved
1 c shaved parmesan cheese. shaved with a peeler
fresh basil

Steps:

  • 1. For the pesto: Place the basil, pistachio's, parmesan cheese, and garlic in a food processor. Process while drizzling the olive oil in until all is incorporated. Taste and season with salt and pepper.
  • 2. For the pasta. Cook the angel hair pasta in salted boiling water. Place 1/4 cup pasta water into a skillet large enough for the pasta. Add the pesto and olive oil and mix well over med. low heat.
  • 3. Drain the pasta and then add it to the pesto mixture. Taste and season with salt and pepper. Stir in the tomatoes and add the cheese and basil

1 cup roasted shelled pistachios
3/4 cup fresh basil leaves, plus more for garnish
1/2 cup extra-virgin olive oil
1/4 cup grated Parmesan, plus more for serving

Zest and juice of 1 lemon

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions.
  • While the pasta is cooking, make the pistachio pesto. Combine the pistachios, basil, olive oil, Parmesan, garlic, lemon zest and juice and some salt and pepper in a food processor and process until well combined.
  • Reserve 1 cup of the pasta water and drain the pasta. Toss the pasta with the pistachio sauce, thinning with the pasta water for the desired consistency if necessary. Serve with more Parmesan and basil leaves.

1 lemon, zested
Kosher salt and freshly ground black pepper
Parmesan, for garnish

Steps:

  • Cook the angel hair according to the package instructions. When the pasta is nearly done, heat the olive oil in a large saute pan over medium heat and add the lemon zest, salt, and pepper and cook until fragrant, about 1 minute. Drain the pasta, reserving 1/4 cup cooking water, if needed. Remove the infused oil from the heat, add the pasta, and toss to coat, adding pasta cooking water, if needed. Grate just a hint of Parmesan on the pasta before serving.
