Mayan Hot Chocolate image

Don't knock it till you've tried it. This rich, delicious, and kicky hot chocolate might make you abandon your traditional ties. No marshmallows needed; this is for grown-ups. Everything in this recipe can be altered to suit your taste, however I recommend following the recipe to the letter the first time you try.

1 cup milk
3 tablespoons instant hot chocolate mix
1 teaspoon ground cinnamon
1 pinch cayenne pepper

Steps:

  • Mix the hot chocolate mix, cinnamon, and cayenne pepper together in a mug.
  • Pour the milk into a glass measuring cup; heat in microwave on High until it begins to boil, about 2 minutes. Slowly pour over the mixture in the mug, stirring with a small whisk as you pour. Enjoy immediately.

Mayan Mini Chocolate Donuts with Spicy Ganache Glaze image

I've had so much fun with the mini-donut pan serendipitously acquired during the winter holidays. This South of the Border recipe inspired by the rich, spicy flavors of the ancient Mayan culture is sure to please breakfast pastry fans who love a little punch of heat. Plus, since they're baked, you can almost feel healthy about eating a few!

1 1/2 cup(s) all purpose flour
1/3 cup(s) unsweetened baking cocoa
2/3 cup(s) sugar
1 teaspoon(s) baking powder
1/2 teaspoon(s) ground cinnamon
1/4 teaspoon(s) ground cayenne pepper
1/8 teaspoon(s) salt
2 - large eggs
1/2 cup(s) milk
2 tablespoon(s) butter, melted
1 teaspoon(s) vanilla
GANACHE
3/4 cup(s) semi-sweet chocolate chips
1/2 cup(s) heavy whipping cream
1 tablespoon(s) butter
2 teaspoon(s) light corn syrup
1/4 teaspoon(s) ground cinnamon
1/8 teaspoon(s) ground cayenne pepper
1 tablespoon(s) coarse sugar sprinkles, if desired

Steps:

  • Preheat oven to 325 F degrees.
  • In large mixing bowl, whisk together flour, cocoa powder, sugar, baking powder, cinnamon, cayenne and salt until well combined.
  • Add eggs, milk, butter and vanilla to the dry ingredients and mix together taking care not to over stir.
  • Place the batter into a zip-top food storage bag and snip a small piece off the corner of the bag off and pipe batter into baking spray prepared mini donut pan, filling each mold about half full.
  • Bake at 325 F degree for approximately 6 to 8 minutes or until pulled toothpick comes out clean. Cool for 10 minutes on wire rack.
  • While donuts are cooling, place chocolate chips, cream, butter and corn syrup into a small microwave safe bowl. On high, microwave in 20 second blasts, stirring in between, until mixture is melted. Stir in cinnamon and cayenne until well combined.
  • Dip top half of donuts into glace and return to wire racks to "set" for approximately 5 minutes.
  • If desired, sprinkle each donute with decorator sugar before chocolate ganache sets.

  • Preheat oven to 350 degrees F. Lightly grease or spray a 9" square baking pan. (I like to line mine with foil and then spray for easy removal and cutting.)
  • In a medium bowl melt butter in microwave. Don't boil it, just heat it until it's melted. Set aside to cool for a minute.
  • In a separate bowl, whisk flour, salt, espresso powder, cinnamon and cayenne together until thoroughly combined. Stir in chocolate and cinnamon chips to coat them in the mixture. Set aside.
  • Whisk sugar into melted butter then add cocoa and whisk to combine. Add eggs and vanilla and continue to whisk until thoroughly combined.
