Always save 1 cup of starter for your next cakes, then start with day 2 of the starter instructions instead of having to start a new starter each time. You can also give some starter to friends, or sourdough starter can be used in place of the Friendship Starter.

Steps:
- To Make Starter: Dissolve yeast in warm water. Add 1 tablespoon white sugar, 1 tablespoon vinegar, 1/2 teaspoon salt, 1 cup of the flour, and 1 cup of the milk in a non-metal bowl and stir with a non-metal spoon until creamy. Cover bowl with plastic wrap and let stand in a warm place for two days to ferment. It will become bubbly and have a sour odor. Do not place in refrigerator. On second day, third day, and fourth day: stir. On fifth day, add 1 cup flour, 1 cup sugar, 1 cup milk, and stir. On sixth, seventh, eighth, and ninth day: stir. On tenth day add 1 cup flour, 1 cup sugar, and 1 cup milk. Reserve 1 cup starter; pour remaining starter, 1 cup each, into 3 containers to give away to friends if desired. Starter is enough for 8 loaves.
- To Make Cakes: Preheat oven to 350 degrees F (175 degrees C). Grease two 8 or 9 inch loaf pans.
- Mix 1 cup of the starter, oil, baking powder, eggs, 1 cup of the sugar, 2 cups of the flour, 1/4 teaspoon of the salt, vanilla, and chopped nuts. Stir in the baking soda just before pouring the batter into the prepared pans.
- Bake at 350 degrees F (175 degrees C) for 45 minutes to 1 hour. Bananas, dates, or raisins can be added for variety.

An easy, 1-bowl, 9x13 cake with that is extra moist. This Amish cake recipe has a butter, brown sugar & nut topping that bakes into the top of the cake.

- Preheat the oven to 375 degrees.
- In a large bowl, cream together the butter and sugar.
- Add the buttermilk and baking soda. Mix well.
- Add in the flour and vanilla. Mix until combined.
- Bake at 375 degrees for 30 minutes or until the center bounces back when you touch it.
- While the cake is baking, make the topping. In a bowl, combine the butter, milk, brown sugar and nuts. Mix well.
- Spread this mixture all over the top of the warm cake.
- Place under the broiler (turned to low) and bake for 1-3 minutes or until the nut topping is bubbling.
- Remove from the oven and allow the cake to cool.
- Serve warm alone, with whipped cream or with ice cream.

- In a large saucepan, combine the first eight ingredients; cook and stir over medium-low heat until sugar is dissolved. Remove from the heat; cool. , In a large bowl, beat egg yolks; gradually stir in spice mixture. Combine the flour, baking powder, salt and baking soda; gradually add to spice mixture until blended. Stir in pecans. In a small bowl, beat egg whites until soft peaks form; fold into the batter. , Pour into two greased and floured 9-in. round baking pans. Bake at 325° until a toothpick inserted in the center comes out clean, 35-40 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely. , For frosting, in a large bowl, beat cream cheese and butter until fluffy. Add vanilla and salt. Gradually beat in confectioners' sugar until smooth. To decorate, spread frosting between layers and over top and sides of cake, leaving cake slightly exposed on the sides. If desired, top with pecans, cinnamon sticks, fresh bay leaves, fresh rosemary sprigs and confectioners' sugar. Store in the refrigerator.

AMISH APPLE CAKE WITH HOT CARAMEL SAUCE
This is one of our favorite cake recipes, originally published in Cooking from Quilt Country by Marcia Adams. I modified the caramel sauce a bit and increased the amount of the sauce since it is so wonderful! The cake keeps well and can be reheated briefly in the microwave. Extra caramel sauce is divine over ice cream!

- Preheat oven to 350 degrees.
- In a large bowl, cream the butter.
- Add the sugar and beat until fluffy.
- Add egg and beat until blended, then mix in the baking soda, salt, cinnamon, and nutmeg.
- Add the flour and stir just until blended.
- Stir in the apples and nuts.
- Pour into an oiled 9 inch round cake pan (I use a glass pie plate) and bake for 30 minutes or until the top springs back when touched lightly in the center.
- Prepare sauce.
- In a saucepan, melt the butter, brown sugar, and salt.
- Bring to a boil, stirring with a whisk, then remove from heat and whisk in the vanilla and the cream.
- (The sauce can be made ahead of time and reheated over hot water.) Serve the cake warm with the hot caramel sauce and a dollop of whipped cream.
- The cake gets better as it ages, keeps for a week in the refrigerator, and also freezes well.
- It can be reheated in the microwave.
SWIRL SPICE CAKE
This might look like a relative of coffee cake but don't be fooled. The layer of streusel in this marbled loaf cake gets a complex punch of flavor from a coffee spice blend that includes dried orange peel, cardamom, and fennel seeds.

- Streusel
- Whisk pecans, spice mixture, brown sugar, flour, and salt in a small bowl to combine. Drizzle in butter and mix until clumps form. Set aside.
- Cake and Assembly
- Preheat an oven to 325°F. Lightly coat an 8½x4½" loaf pan with nonstick spray. Line with parchment paper, leaving overhang on long sides. Press paper into pan, then turn over, so greased side is facing up. Whisk flour, baking soda, baking powder, and ½ tsp. salt in a medium bowl to combine.
- Beat sugar and butter in the bowl of a stand mixer fitted with paddle attachment on medium-high speed, scraping down sides of bowl halfway through, until very light and fluffy, 6-8 minutes. Reduce speed to medium. With motor running, add eggs one at a time, beating to incorporate and scraping down sides of bowl after each addition. Reduce speed to low; add half of dry ingredients and mix just to combine. Add sour cream and vanilla and beat to combine. Add remaining dry ingredients and beat until incorporated.
- Scrape half of batter into prepared pan. Top with streusel (yes, it will look like a lot, but use all of it!), then scrape remaining batter over. Starting at a short side of the pan and working your way to the other short side, drag a butter knife back and forth from one long side to the other through batter to marble streusel; smooth surface.
- Bake cake until a tester inserted into the center comes out clean, 80-90 minutes. Transfer pan to a wire rack and let cake cool in pan 15 minutes. Run a small knife around edges of cake to loosen if needed, then, using parchment paper, lift out of pan onto rack. Peel away parchment. Let cake cool completely.
- Combine powdered sugar and a pinch of salt in a small bowl, then mix in orange juice, adding up to a teaspoonful more if needed, until you have a thick but pourable icing. Drizzle over cake and let sit until icing is set before serving, about 15 minutes.
- Do ahead: Cake can be baked 3 days ahead. Store airtight at room temperature.
AMISH CAKE
I love brown sugar cakes and this is one of the best. From Amish Cooking by Pathway Publishers. Please note that buttermilk or sour milk can be used. Sour milk is made by adding 1 tablespoon lemon juice or vinegar in the bottom of a measuring cup then fill the rest of the way with milk. Set aside to sour for 5 minutes.

- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. This is FABULOUS...YUMMO! There are 3 steps to this Amish Friendship Cake Starter... There is the Initial Amish Starter, The Secondary Starter, and The Amish Friendship Cake... I have posted all the recipes here all in one place. Preparation time is way off, as this is not your typical recipe and preparation takes 30 days. If you want to make a Carrot Cake, use a Spice Cake mix in place of the Yellow Cake mix, and add 1 c. shredded carrot, and 1 c. raisins to the recipe.

- Amish Friendship Cake Initial STARTER:.
- Day 1-Day 14:.
- 1 cup cubed pineapple, drained.
- 1 cup sugar.
- 2 T. Brandy.
- Combine in a glass gallon jar. Let set it set for 2 weeks.
- Cover loosely with aluminum foil, with a wooden spoon inserted through the foil to stir daily-DO NOT REMOVE FOIL OR SPOON!
- Be sure to stir daily.
- Day 15:.
- Add 1 cup Marachino cherries including the juice.
- 1 cup sugar.
- 2 T. Brandy.
- Let set two more weeks, stirring daily.
- Day 30:.
- Strain the fruit from the juice using a plastic strainer. (DO NOT USE A METAL STRAINER.).
- The resulting "juice" is the "starter" for your Amish Friendship Cake.
- Amish Frienship Cake Secondary STARTER:.
- First we prepare another starter from the starter above.
- 1 1/2 cups starter, prepared above.
- 1 lg. can sliced peaches, with juice.
- 2 1/2 cups sugar.
- Put peaches and juice in a gallon jar. Stir once a day for 10 days:.
- On the 10th day, Add:.
- 2 1/2 cups sugar.
- 1 20 oz. can pineapple chunks and juice.
- Stir every day for 10 days.
- On the 20th Day, Add:.
- 2 1/2 cups sugar.
- 1 10 oz. jar Marachino cherries and juice.
- 1 20 oz. can fruit cocktail and juice.
- Stir every day for 10 days.
- On the 30th Day:.
- Drain liquid from fruit.
- Divide the juice into 5-6 jars each containing 1 1/2 cups of juice.
- Give to friends, and keep one for yourself.
- Your friends can now start with the starter you have given them, and make the 30 day cake directly.
- Divide fruit in thirds. You can freeze 2/3 of the fruit to use later.
- Note:.
- When putting fruit or juice in jars, leave jars on the counter & DO NOT REFRIGERATE! DO NOT PUT LID ON TIGHT, set it on top of jar - loosely! DO NOT PUT JUICE IN THE REFRIGERATOR!
- Amish Friendship Cake:.
- Cake 1 yellow cake mix, without pudding in it.
- 2/3 cup oil.
- 4 eggs.
- 1/3 of the fruit, prepared with the starter above.
- 1 cup nuts, chopped.
- 1 box Vanilla instant pudding.
- Mix all ingredients together, and bake in a greased Bundt pan at 350, for 50 minutes or until done.
- Important Note:.
- Do not use a metal strainer when straining the fruit.
- When adding fruit and juice to the jar, leave it on the counter & DO NOT REFRIGERATE! DO NOT PUT LID ON TIGHT. Set it on top loosely! DO NOT PUT JUICE IN THE REFRIGERATOR!
- I frost my cakes with Cream Cheese frosting and top with walnuts.
