AMISH BREAKFAST CASSEROLE
We've enjoyed a few hearty breakfast casseroles while visiting an Amish inn. When I asked for a recipe, one of the ladies told me the ingredients right off the top of her head. I modified it to create this quick and easy breakfast casserole my family loves. -Beth Notaro, Kokomo, Indiana

Steps:
- Preheat oven to 350°. In a large skillet, cook bacon and onion over medium heat until bacon is crisp; drain. In a large bowl, combine remaining ingredients; stir in bacon mixture. Transfer to a greased 13x9-in. baking dish., Bake, uncovered, until a knife inserted in the center comes out clean, 35-40 minutes. Let stand 10 minutes before cutting.

These cinnamon and sugar coated muffins are a delight to the senses. They are my own personal favorites.

- Preheat the oven to 350.
- Grease muffin pans.
- 1.
- In a bowl, stir together the flour, baking powder, salt and mace.
- In a large bowl, with an electric mixer, beat the sugar, oil, egg and vanilla for 30 seconds.
- Add the flour mixture and milk alternaturely to the egg mixture, beating on low speed for 30 seconds after each addition until just combined.
- Fill 10 muffin cups 2/3 full of batter.
- Bake for 15 to 20 minutes or until tops of muffins are firm and golden.
- While the muffins are baking, prepare the coating.
- In a shallow bowl, combine the 1/2 cup sugar and the cinnamon.
- In another bowl, melt the butter or margarine.
- When the muffins are done baking, while they're still hot, roll each in melted butter and then to coat all over in the cinnamon sugar mixture.
- Serve immediately as they are, or with butter and jelly.

- 1. Preheat oven to 350'. 2. In a mixing bowl combine flour, baking powder, salt and mace. 3. In another mixing bowl, beat together 1/2 c sugar, oil, egg, vanilla on medium speed for 30 seconds. 4. Add flour mixture and milk alternately to egg mixture, beating on low after each addition, just until combined. 5. Fill 10-12 greased muffin cups 2/3 full with batter. Bake for 15-20 minutes or until done. 6. Meanwhile, in a shallow bowl, place the melted butter. In another shallow bowl, combine the remaining 1/2 cup sugar and cinnamon. 7. When the puffs are done, remove from cups and, while still hot, roll the tops in melted butter and then in the cinnamon sugar. 8. Serve immediately, either plain or with butter and jelly, if desired.

This hearty casserole has bacon, eggs, hash browns, and three different cheeses all baked into a comforting breakfast dish, perfect for feeding a crowd.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Heat a large skillet over medium-high heat; cook and stir bacon and onion until bacon is evenly browned, about 10 minutes. Drain. Transfer bacon and onion to a large bowl. Stir in potatoes, eggs, Cheddar cheese, cottage cheese, and Swiss cheese. Pour mixture into prepared baking dish.
- Bake in preheated oven until eggs are set and cheese is melted, 45 to 50 minutes. Let stand 10 minutes before cutting and serving.
