AMBROSIA DESSERT
This easy-to-make dessert from Jeanette Bretthauer of Aurora, Illinois has a yummy flavor and a melt-in-your-mout texture. "I have also made it with chocolate crumbs and crushed candy canes for the holidays," Jeanette notes.

- In a small bowl, combine the marshmallows, pineapple and nuts; fold in whipped topping. Combine graham cracker crumbs and butter; spoon a third of the mixture into a foil-lined 5-3/4x3x2-in. loaf pan. Top with half of the marshmallow mixture; repeat layers. Top with remaining crumb mixture. Cover and refrigerate for 2-3 hours or until set. , Remove dessert from pan; peel off and discard foil. Cut into four pieces; serve immediately.

- Place marshmallows and 1/4 cup cream in the top of a double boiler; heat over boiling water until the marshmallows are melted and mixture is smooth. Cool completely. , Meanwhile, whip the remaining cream until thickened. Add sugar. Fold into marshmallow mixture. Fold in extracts, pineapple and coconut. , Place half of pound cake cubes in a 2-1/2 to 3-qt. clear glass bowl. Top with half of the orange sections and half of the cream mixture. Repeat layers. Sprinkle with almonds. Chill until serving.

EXTREME AMBROSIA FRUIT DESSERT
This is so delicious, and makes a ton of ambrosia, but recipe may be cut in half if desired to serve about 4-6 people, I like to use coloured mini marshmallows --- plan ahead this needs to chill for minimum 2 hours, prep time includes chilling time.

- In a large bowl, combine the Cool Whip topping, coconut (if using) chopped walnuts, fruit cocktail, pineapple, oranges, marshmallows, cherries, nutmeg and cinnamon; mix all together very well (adjusting the cinnamon and nutmeg to suit taste).
- Chill in refrigerator for 2 or more hours before serving.

- Place the cream and sugar into the bowl of a stand mixer with the whisk attachment and whip until stiff peaks are formed. Add the sour cream and whisk to combine. Steps:
- Melt marshmallows with 1/4 cup heavy cream in the top of a double boiler over simmering water, stirring frequently until smooth, about 5 to 7 minutes. Set aside to cool completely.
- Beat remaining 1 3/4 cups heavy cream in a glass or metal bowl until foamy. Gradually add confectioners' sugar, continuing to beat until soft peaks form. Lift your beater or whisk straight up: the cream will form soft mounds. Gently fold pineapple, coconut, vanilla extract, and cooled marshmallow into whipped cream.
- Layer about half the pound cake cubes in a trifle bowl. Spread about half the whipped cream over the pound cake and scatter about half the quartered mango chunks over the cream. Sprinkle about half the macadamia nuts over the mangoes. Repeat layers. Chill for 2 to 3 hours before serving.
