Sugar Cookie Bars image

Thick, soft and chewy Sugar Cookie Bars are everyones favorite, and so easy to make, without having to chill, roll or cut the dough.

Number Of Ingredients 12

1 cup unsalted butter (*room temperature)
2 cups granulated sugar
4 large eggs
1 teaspoon vanilla extract
1 teaspoon almond extract
4 3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1/2 cup unsalted butter (, room temperature)
8 ounces cream cheese (, room temperatire)
4-5 cups powdered sugar ((more or less depending on how thick you want your frosting))
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 375 degrees F. Lightly grease a 13x18'' half sheet pan with non-stick cooking spray. (Or, cut the recipe in half if using a 9x13'' pan).
  • Add the butter and sugar to a mixing bowl and mix well until light and creamy. Add eggs, beating after each addition. Add vanilla and almond extract and mix well.
  • In a separate bowl combine the dry ingredients: flour, baking soda and salt. Add the dry ingredients into the batter and mix until combined. Spread and press the mixture into the prepared pan.
  • Bake at 375 degrees F for about 12-16 minutes or until the center is set, and the edges are just starting to be golden. Remove from oven and allow to cool. Once cooled completely, frost and cut into squares.

Frosted sugar cookies bars that are buttery, chewy and delicious!

2 1/2 cups all-purpose flour (12 ounces)
1/2 teaspoon baking powder
1/2 teaspoon salt
10 tablespoons unsalted butter (softened to room temperature)
1 cup granulated sugar
1 egg
1 egg white
1 1/2 tablespoons sour cream
1 teaspoon pure vanilla extract
1/2 teaspoon almond extract (optional)
4 tablespoons butter (softened to room temperature)
1 1/2 ounces cream cheese (softened to room temperature)
1/2 teaspoon pure vanilla extract
2 cups powdered sugar
2 tablespoons heavy cream or milk
Food coloring and sprinkles (optional)

Steps:

  • Preheat oven to 375°F/190°C. Line a 9x13 baking dish with foil and lightly spray foil with nonstick cooking spray.
  • In a medium bowl, whisk together the flour, baking powder, and salt.
  • In a large bowl, beat the butter and sugar until pale and fluffy, about 3 or 4 minutes. Stir in the egg and egg white. Add sour cream, vanilla, and almond extract (if using) and mix until blended. Slowly add flour mixture and stir until combined. With buttered hands, gently press and pat the batter into the prepared pan.
  • Bake for 15 to 17 minutes, until a toothpick inserted in the center comes out clean and the bars are set. The bars will still be pale, but the edges may start to turn golden brown. Cool completely, then remove from pan, frost, and cut into squares.
  • Frosting: In a medium bowl, beat the butter and cream cheese together until light and creamy, about 2 minutes. Mix in the vanilla. Add the powdered sugar gradually and mix on low speed after each addition, until well blended and creamy. Add the heavy cream and whip until frosting is light and fluffy.

pink food coloring
sprinkles (for topping)

Steps:

  • Preheat oven to 375 degrees F.
  • In a large bowl, cream together butter and sugar until fluffy.
  • Add eggs, one at a time, mixing after each egg.
  • Mix in vanilla.
  • Beat in flour, salt and baking soda until well combined.
  • Spread and press dough onto a half sheet pan (18"x13"x1") sprayed with nonstick cooking spray.
  • Bake for 10-12 minutes, or until just golden brown; let cool completely.
  • In a large bowl using a hand mixer or a stand mixer, combine all frosting ingredients and beat until light and fluffy.
  • Spread frosting in an even layer on cooled cookie bars and top with sprinkles, if desired.

  • Preheat oven to 350 degrees. If butter hasn't been softened you can place in microwave for 10 seconds to *slightly* soften it.
  • In a large bowl, cream together butter and sugar on medium speed for 20-30 seconds. While mixer is still on medium speed, add in egg, vanilla and almond extract.
  • Once mixed, add in baking powder, salt, and *flour. (Add flour 1/2 cup at a time on low speed). Be sure to measure your flour properly using the spoon & level method, as adding too much can result in dry bars. Mix until all flour disappears, typically 20-30 seconds. You do not need to beat/mix this any longer than it takes to mix in the flour. When pinched between your fingers, dough should be similar to a playdoh consistency and not be very sticky. Refer to photo above in post for how dough should look.
  • Spray a metal 9×13 pan with cooking spray, then line pan with parchment paper (having the grease underneath the paper will help the paper stay down).
