1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
6 tablespoons butter, melted
1 egg
1 cup whole milk
½ cup frozen chopped spinach - thawed, drained and squeezed dry
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 cup muffin cups.
  • Mix the flour, baking powder, baking soda, and salt together in a mixing bowl.
  • Stir the melted butter, egg, milk, spinach, and Cheddar cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. Spoon about 2 tablespoons into each muffin cup.
  • Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 35 minutes.

1 (10 ounce) package frozen chopped spinach, thawed and drained
¼ cup all-purpose flour
2 eggs, beaten
½ teaspoon paprika
½ teaspoon onion powder
½ teaspoon garlic powder
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 6-cup muffin tin.
  • Mix spinach, flour, eggs, paprika, onion powder, garlic powder, salt, and black pepper in a bowl; divide evenly between prepared muffin cups.
  • Bake in the preheated oven until golden and the tops spring back when lightly pressed, about 20 minutes.

Nonstick cooking spray, for the muffin pan
1 cup fresh spinach, packed
1/2 cup unsweetened applesauce
1/3 cup sugar
2 tablespoons vegetable or canola oil
2 teaspoons vanilla extract
1 large egg
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 350 degrees F. Grease a mini muffin pan with cooking spray.
  • Place the spinach, applesauce, sugar, oil, vanilla extract and egg in a food processor and puree. Combine the flour, baking powder, baking soda and salt in a separate bowl. Pour the spinach puree in a large mixing bowl. Slowly mix the dry ingredients into the wet ingredients until combined.
  • Scoop the batter into the greased mini muffin pan, filling each cup two-thirds of the way. Bake for 12 minutes. Let cool completely, then serve or freeze.
  • To freeze for later, place cooled muffins on a parchment-lined baking sheet. Freeze until solid, about 1 hour. Transfer to a freezer bag and store for up to 3 months.

Steps:

  • Preheat oven to 350 degrees.
  • Spray muffin tin with cooking spray.
  • Combine muffin mix with eggs and milk.
  • Add spinach, cottage cheese and onion. Stir until just mixed - do not overbeat.
  • Fill muffin tins 3/4 full.
  • Bake for 15-20 minutes or until lightly browned.
  • Let muffins sit in pan for 10-15 minutes before removing.

1 ½ cups whole wheat all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda

⅛ teaspoon ground black pepper
⅛ teaspoon paprika
1 cup milk
1 cup shredded Cheddar cheese
6 tablespoons butter, melted
½ cup chopped fresh spinach
1 egg
¼ cup chopped onion
5 basil leaves, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 muffin cups.
  • Heat a skillet over medium heat; cook and stir luncheon meat until browned on all sides, about 5 minutes.
  • Whisk flour, baking powder, baking soda, salt, garlic powder, pepper, and paprika together in a bowl. Mix luncheon meat, milk, Cheddar cheese, butter, spinach, egg, onion, and basil together in a separate bowl; slowly stir into flour mixture just until batter is mixed. 200g fresh spinach
100g cheddar, grated
1 tbsp dried thyme
2 eggs
5 tbsp Greek yoghurt
150g plain white flour
150g wholemeal flour
3 tsp baking powder
butter to grease

Steps:

  • Set the oven to 180. Place the spinach in a food processor and blitz until shredded (not pureed). Add to a bowl along with the grated cheese and dried thyme.
  • Crack the 2 eggs into a bowl and mix along with the yoghurt.
  • Sieve the flour and baking powder over the bowl then mix well to combine
  • Spoon into a muffin tray and bake for 20-25 minutes before allowing to cool.

1 (4.5 ounce) can chopped mushrooms, drained
1 cup shredded mozzarella cheese
10 large eggs
⅓ cup sour cream
salt and ground black pepper to taste
1 tablespoon Italian seasoning
1 teaspoon garlic salt

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • Spray a 12-cup silicone muffin pan with cooking spray. Divide spinach and mushrooms evenly among the muffin cups, filling each about 2/3 full. Sprinkle 1 teaspoon mozzarella cheese on top.
  • Beat eggs and sour cream together until well combined. Season with salt and pepper. Mix in Italian seasoning and garlic salt. Pour into muffin cups until almost full.
