CHOCOLATE CHIP CINNAMON COOKIES

1/2 cup unsalted butter (softened)
1/2 cup butter flavored shortening
3/4 cup superfine sugar (run granulated sugar through a blender)
3/4 cup light brown sugar
1 teaspoon vanilla extract
2 eggs
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/8 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 3.4 ounce package instant vanilla pudding mix
or 1/2 cup Amanda's homemade pudding mix which is what I used
1 package (2 cups semisweet chocolate chips (I used Ghirardelli))

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium bowl, beat together the butter, shortening, brown sugar, and superfine sugar until smooth and creamy; then add eggs and vanilla and beat well. In a large bowl, mix together flour, baking soda, salt, cinnamon, and pudding mix. Turn mixer to low and gradually mix the dry into the creamy mixture until well blended. Use a spoon or sturdy rubber spatula to stir in chocolate chips.
  • Drop by teaspoonfuls 2 inches apart onto parchment lined baking sheets. Bake in a preheated oven for 10-11 minutes, until light golden brown. Remove from oven; allow cookies to cool momentarily on baking sheets before removing them to wire racks to cool completely.

1 cup butter
½ cup white sugar
1 cup packed brown sugar
1 teaspoon vanilla extract
2 eggs
2 ½ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).
  • In a large bowl, cream together the butter and sugar until smooth. Beat in the vanilla and eggs one at a time. Combine the flour, baking soda and salt; stir into the sugar mixture. Finally, mix in the chocolate chips. Drop by tablespoonfuls onto ungreased cookie sheets.
  • Bake for 8 to 10 minutes in the preheated oven, or until edges are golden. Remove from baking sheet to cool on wire racks.

2/3 cup shortening

1 cup brown sugar
2 large eggs
2 teaspoons vanilla
3 1/2 cups flour
1 teaspoon salt
1 teaspoon baking soda
6 ounces chocolate chips

Steps:

  • Pre-heat oven to 350 degrees.
  • Combine butter, shortening, sugars, eggs and vanilla in a large bowl, and mix with electric beater, or by hand.
  • Mix flour, baking soda and salt in small bowl.
  • Slowly add flour mixture to the butter mixture.
  • Fold in chocolate chips.
  • Drop cookies onto ungreased cookie sheet. Each cookie should be approximately 1 tablespoon.
  • Bake approximately 8-11 minutes or until golden brown.

1 cup butter, softened
3/4 cup packed brown sugar
2/3 cup sugar
2 eggs
2 to 3 teaspoons almond extract
1 teaspoon vanilla extract
2-1/4 cups all-purpose flour
1/2 cup baking cocoa
1 teaspoon baking soda

Steps:

  • In a large bowl, cream the butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, cocoa and baking soda; gradually add to creamed mixture and mix well. , Drop by rounded teaspoonfuls 2 in. apart onto an ungreased baking sheets. Bake at 375° for 7-9 minutes or until edges are firm. Remove to wire racks to cool.
