CLASSIC CHEDDAR CHEESEBALL
The classic Cheddar Cheese Ball is the snack everyone wants on their table for get-togethers and game nights.

Steps:
- Place the cream cheese in a large mixing bowl and beat with an electric mixer until smooth, about 1 minute. Scrape the sides of the bowl and sprinkle garlic powder over the cream cheese. Add the Worcestershire sauce. Mix again until well combined, about 1 minute.
- Add the cheese and mix again. Spread plastic wrap on the counter and scoop the cheese mixture onto it. Form into a ball with the spatula.
- Place the chopped nuts on a small plate. Gently roll the cheeseball in the nuts to coat it completely. Wrap the finished cheese ball in plastic wrap until ready to serve.
- Remove from the refrigerator at least 30 minutes before serving. Serve with crackers and fresh vegetables.

- In a small bowl, mix the cream cheese until it is smooth. Add the garlic, sour cream, cheeses and Italian seasoning. Mix until well combined. Refrigerate for 1-2 hours.
- Place the chopped pecans on a plate. Form the cheese mixture into a ball, then roll the ball in the chopped pecans until the outside of the cheese ball is completely covered.
- Cover with plastic wrap and refrigerate until serving.
- Serve with crackers.

Steps:
- In a large bowl using a hand held mixer or stand mixer, add the cream cheese and mix until smooth. Add the goat cheese and mix together with cream cheese until well blended.
- Add the herbs, dill, basil, rosemary, and chives and mix together. Lay plastic wrap on top of the inside of a smaller bowl completely covering the inside of the bowl leaving the excess plastic wrap hanging off the bowl. Use a rubber spatula and scoop the cheese mixture into the bowl.
- Once all the cheese has been added, take the ends of plastic wrap and cover the exposed cheese wrapping the entire mixture. Turn the wrapped cheese to the countertop and use your hands to form into a perfectly sized ball. Place inside the refrigerator for, at least, 2 hours.
- Turn the ball onto a serving platter and remove the plastic wrap. Garnish the ball by sprinkling with dill and parsley leaves, if desired. Serve with crackers.

CHEESE-STUFFED GARLIC DOUGH BALLS WITH A TOMATO SAUCE DIP

- Heat 175ml water in a saucepan until steaming, then add the butter. Remove from the heat and leave to cool until the mixture is just warm (it should not be hot). Combine the flour, yeast, sugar and 1 tsp salt in a large bowl or stand mixer. Add the cooled butter mixture, and mix to a soft dough using a wooden spoon or the mixer. Knead for 10 mins by hand (or 5 mins using a mixer) until the dough feels bouncy and smooth. Transfer to an oiled bowl and cover with a clean tea towel. Leave somewhere warm to rise for 1½-2 hrs, or until doubled in size. Alternatively, leave to prove in the fridge overnight.
- Oil and line a baking sheet with baking parchment. Knock the air out of the dough, then knead again for several minutes. Flatten a small piece of dough (about 20g) into a disc, and put a cube of the mozzarella and a pinch of the gruyère into the middle of the disc. Enclose the cheeses with the dough, then roll into a ball. Transfer to the prepared baking sheet. Repeat with the remaining cheese and dough, placing the dough balls ½cm apart on the baking sheet - they should be just touching after proving. Cover with a clean tea towel and leave somewhere warm to rise for 30 mins.
- Meanwhile, make the garlic butter. Melt the butter in a small pan over a low heat, then stir in the garlic and rosemary. Remove from the heat and set aside until needed. Heat the oven to 180C/160C fan/gas 4. Brush the risen dough balls with the garlic butter, then bake for 25-30 mins until the dough balls are cooked through and the middles are oozing.
- While the dough balls are baking, make the tomato sauce dip. Heat the oil in a saucepan and fry the garlic for 30 seconds. Tip in the passata, vinegar, sugar and chilli flakes, and simmer for 10 mins until thickened. Season to taste and stir in the basil. Brush the warm dough balls with any remaining garlic butter, then serve with the tomato sauce dip on the side for dunking.

AWARD WINNING CHEESE BALL

- Mix the cream cheese, Old English Spread, Bacon Spread, and vinegar in a bowl with a blender. Using a spoon will also work, but using your blender will cut the time in half, and the mixture will be nice and creamy. When everything is mixed, start to add the garlic and onion salt to taste. Start off small, and work your way up towards a flavor that you enjoy.
- When you are finished, put the cheese mixture in a decorative smaller bowl, and coat the top with the parsley flakes.
- Put in the refrigerator for at least a half hour to chill before serving. I almost always make this cheese ball the night before you will eat it. This allows all of the flavors in the cheese ball to mix, and bring out all of the flavor. Enjoy! This tastes great!
