ALOHA PARADISE BARS
Layers of tropical pineapple, coconut and macadamia nuts are used to create these delightfully easy Aloha Paradise Bars that says "Summer IS here!"

Steps:
- Heat oven to 350°F. Spray bottom only of 13×9-inch pan with cooking spray. In large bowl, stir cookie mix, butter and egg until soft dough forms. Press dough in bottom of pan.
- Bake 15 minutes. Sprinkle with baking chips, pineapple, coconut and nuts. Drizzle evenly with sweetened condensed milk.
- Bake 30 to 35 minutes longer or until light golden brown. Cool completely. For bars, cut into 9 rows by 4 rows. Store covered in refrigerator.

- In a large bowl, stir the butter, brown sugar, eggs, rum and vanilla until well blended. Combine the flour, baking powder, baking soda and salt; gradually add to butter mixture. Stir in 2 cups chocolate chips, white chips, coconut and nuts., Pour into a greased 13x9-in. baking pan. Bake at 350° for 35-40 minutes or until golden brown. Cool on a wire rack., In a microwave, melt shortening with remaining chocolate chips; drizzle over bars. Drizzle candy coating over bars. Store in an airtight container.

ALOHA COOKIES
I made these about ten years ago...then lost the recipe. I finally found it trapped in one of my old recipe books!

- Preheat oven to 375°F Lightly grease/spray cookie sheets.
- Place brown sugar, shortening, egg, orange juice, vanilla extract and lemon extract in large bowl. Beat at medium speed of electric mixer until well blended.
- Combine oats, flour, baking soda, salt, nutmeg and cinnamon in a separate bowl. Add to shortening mixture; beat at low speed just until blended.
- Stir in pineapple, coconut and chopped nuts.
- Drop dough by rounded tablespoonsful 2-inches apart onto lightly greased cookie sheets.
- Bake for 10 to 12 minutes or until cookies are just lightly browned.
- Do not overbake.
- Cool 2 minutes before removing to cooling racks to cool completely.

ALOHA COOKIE BARS
Steps:
- Melt butter in the bottom of a 9x13 pan. Sprinkle graham cracker crumbs over butter. Stir with a fork until combined. Spread evenly over bottom of pan and pat down slightly with the back of the fork to form crust.
- Sprinkle white chocolate chips evenly over crust. Layer chopped macadamia nuts evenly over white chocolate chips. Spread Baker's Coconut in a layer over the macadamia nuts. Pour sweetened condensed milk over the layers.
- Bake at 350°F for 30 to 45 minutes, until coconut is lightly browned. Remove from oven and cool to room temperature before cutting. Cut into bars. Enjoy!!!
